The property has an existing building that dates back to 1913, with numerous additions over the years. This building has several large rooms which will be converted into a tasting room, reception/lounge with a fireplace, a VIP members room and a spacious office for our staff. A large back room will become a second-year barrel room Pinot Noir, Bien Nacido Vineyard June: current location in the Lompoc Wine Ghetto. After working last year with an Adjacent to this building we will construct our winery, a new metal-clad 2013 Albariño building for wine production totaling around 4,600 sq. ft. The property will be 2012 Syrah, Clover Creek Vineyard landscaped using native and drought-tolerant plants. We hope to be able to move from the Wine Ghetto to our new home sometime 2012 Blues Cuvée in July, just in time for harvest. We will continue to be open at our tasting room 2012 Pinot Noir, Fe Ciega Vineyard in downtown Los Olivos. 2 L O N G O R I A N E W S L E T T E R These are the new releases for February. The wines included in your shipment vary according to your Wine Club selection. The cost for each shipment includes the price of the wine, less your Wine Club discount, plus packaging, shipping and appropriate sales tax, when applicable. THE T2012 HARVEST was once Tagain a relatively cool vintage. The grapes from Zotovich, Fe Ciega and Rancho Santa Rosa were all harvested on either September 21st or 22nd at low to moderate sugar levels and were then pressed individually and fermented in French oak barrels. I chose to reduce the new oak component to just 15% to further emphasize the fruit aromas and flavors. After fermentation the barrels were topped off and the lees were stirred every two weeks for the first three months of barrel aging. After 13 months the lots were blended, fined and filtered just prior to bottling. The wine has a brilliant, light straw-gold color with complex aromas of pears, pineapple and spiced apples. On the palate the wine is medium bodied, with rich flavors of pear and apple with a subtle aftertaste of brown sugar and custard. Because the grapes were picked at relatively low sugar levels, the natural acidity is quite high in this wine, giving it a lean flinty quality and a long satisfying finish. Flavorful wine with lower alcohol is the hallmark of fine white European wines. We are pleased that our 2012 Chardonnay, Sta. Rita Hills is an excellent example of how superior grapes can produce wines in this difficult-to-achieve style. Pair with oysters, shellfish, seared scallops or baked salmon with hollandaise sauce. It will also be excellent with turkey or chicken prepared with rich sauces. COMPOSITION: 100% Chardonnay VINEYARD SOURCES: 53% Zotovich, 20% Fe Ciega, 20% Rita s Crown, 7% Rancho Santa Rosa PRODUCTION: 84 cases ALCOHOL BY VOLUME: 12.7% PH: 3.35 TITRATABLE ACIDITY: 0.64 g/100ml CELLARING POTENTIAL: 3 to 5 years BOTTLE PRICE: $30.00 Winemaker's Notes T THE T2012 HARVEST at our vineyard, Fe Ciega, was very Testate similar to the 2011 in terms of weather pattern and yield. Blessed with moderate weather, I was able to carefully pinpoint the harvest dates for each of our blocks and clones. Harvest began on September 7th and ended on the 14th with the majority of the grapes picked early at an average sugar content of 23.0 Brix. Made primarily from the Pommard clone, the grapes were 100% destemmed before half was crushed into small open top fermenters and the remainder into our Ganimedes fermenter. After an average fermentation period of 10 days, the wines were pressed off, settled and then racked to French oak barrels for 15 months. Only 20% of the barrels were new to preserve the delicate fruit aromatics. The blend was gently fined and filtered two weeks before bottling. The wine has a dark ruby color with hints of youthful purple in the edges. The aroma is a beguiling mix of sour cherries, herbs and sage. On the palate the wine is rich and extracted with powerful flavors of wild berries, spices and sweet tobacco. This vintage has more weight and density than the 2011 but still exhibits the same great balance of alcohol, acidity and tannins. Enjoy with mushroom polenta, duck with peppercorn sauce or roast pork. 4 F E B R U A R Y Featured Recipe PUMPKIN CRÈME BRÛLÉE To pair with 2012 PINOT NOIR, LOVELY RITA by Katie Skidmore, Tasting Room Manager Serves 8 people Ingredients 2 CUPS HEAVY CREAM ¼ CUP LIGHT BROWN SUGAR ¼ CUP GRANULATED SUGAR 8 LARGE EGG YOLKS ¼ TSP CINNAMON 1/8 TSP NUTMEG 1 CUP PUMPKIN PUREE TURBINADO SUGAR (SUGAR IN THE RAW) ½ TSP VANILLA EXTRACT

5 Method Crème Brûlée takes time, but the results are very rewarding, so pour yourself a glass of 2012 Lovely Rita Pinot Noir. Preheat the oven to 325 degrees. Place 8 ramekins on a metal baking pan with reasonably tall sides. I like to add a dish towel to the bottom of the pan to prevent my ramekins from sliding around. Over low heat, combine the cream, brown sugar and granulated sugar in a medium saucepan until it simmers. Stir constantly to prevent any burning. Remove from the heat. Heat a teapot or saucepan full of water. Meanwhile, whisk the egg yolks until lemon-colored and frothy. Slowly whisk in ¾ cup of the cream mixture. It s important to add this mixture slowly, while whisking quickly to avoid the egg yolks from scrambling. Whisk the egg and cream mixture into the remaining hot cream mixture. Whisk in the vanilla, cinnamon and nutmeg until smooth. Strain the mixture through a fine mesh strainer into either a large bowl or a large pitcher. Divide the mixture equally between the 8 ramekins. Add the hot water to the towel-lined pan so that it covers the bottom half of the ramekin. You can either do this step before placing the pan in the oven or once the pan is in the oven. Bake the custards for minutes, or until the custard is set in the very center, but not stiff throughout. Immediately refrigerate the custards upon removing them from the oven. Refrigerate for at least 3 hours or until very well chilled. Finish the remainder of the bottle of 2012 Lovely Rita Pinot Noir. Before serving open a new bottle of 2012 Lovely Rita, then sprinkle the custards with an even layer of the turbinado sugar. Caramelize the sugar either with a kitchen torch or in your broiler. The caramelized topping should be solid when you tap on it. If it is not, just add another layer and repeat the process. Serve immediately with a glass of Lovely Rita and enjoy!
