4 development chef & fine foods specialist from the kitchen What a exciting month. A brand new year full of root, juice and leafiness to look forward to! Lets start with the forced rhubarb. These little beauties are kept at around 13 degrees until they are exposed to warmth. At that point they reach for the sky, growing so fast you can hear them cracking as they spout upwards. Blood oranges. One of my favourite citrus fruits. Turn an ordinary orange desert into something more memorable with that fantastic colour and remember almost twice as much vitamin C than some normal oranges and so juicy! At this time of the year you've also still got bags of parsley roots, crosnes and cabbages available to mix up any worthy game dish. An array of coloured carrots still abounds. Why use carrots of just orange colour when there is a plethora of heritage varieties, white, yellow, purple. THE FUTURE IS NOT JUST ORANGE! Mussels Mouclade A superb dish which makes a nice alternative to marinière and becoming popular on menus once again. The slight curry flavour adds a nice heat and a twist to a french favourite. Ingredients: A good pinch of saffron kg mussels, cleaned ml Wandering Bear Chardonnay g butter 1 onion, chopped clove of garlic, finely chopped 9433 ½ tsp mild curry powder tbsp cognac 2 tsp plain flour ml crème fraîche tbsp chopped parsley 9028 salt black pepper olive oil 1 tbsp warm water Method: 1 Put the saffron in a small bowl with water. Prep ¼ hr Cook ½ hr Serves 4 2 Put the mussels and wine in a large pan, cover and cook over high heat for 3-4 minutes, shaking the pan occasionally until the mussels have opened. Tip mussels into a colander set over a large bowl to catch the juices. Discard any mussels that have not opened. Transfer mussels to a serving bowl and keep warm. 3 Melt butter in a pan, add the onion, garlic and curry powder and cook gently for 2-3 minutes. Add the cognac and cook until almost all the liquid has evaporated. 4 Stir in the flour and cook for 1 minute. Stir in the saffron liquid and almost all the mussel liquor (the last bit may contain grit). Simmer for a further 3 minutes. Season. Stir in parsley and pour the sauce over the mussels. Serve with great chunks of crusty bread, and a glass of chilled Wandering Bear Chardonnay Then let s not forget our sweeter little bounties! Apples and pears are still in good shape with Comice and Patte de Loup holding court. These are similar to a Russet only better flavour! Fantastic quality air freight tropical fruits supplement our need for sugariness during the dark months. We can get the super sweet mangoes in from Peru and top grade Sugarloaf pineapples from West Africa. All you need are your sunglasses! That's shallot for steven.williams@harlech.co.uk

5 Spice it up with this superb new range of Chilli jams Introducing this new range of fruity chilli jams, made in small batches, with tender loving care. The original, award winning Red Chilli & Lime jam, created in 2013 was soon joined by Jalapeno & Apple Jam and by early 2015, three new flavours were added to the family: Habanero & Mango, Birds Eye Chilli & Cherry and Ghost Chilli & Blueberry. By adding such a sweet & freshening fruit such as mango, the heat mellows out a bit and the natural taste of the habanero flows. Superb in savoury or sweet dishes. Code The Bird s Eye chilli gives out a very short, but sharp heat that is then neutralised by the sweet & sour flavour of the Morello cherry that takes over for an amazing sweet & hot combination. This works fantastically well with goat s cheese. Code They re dangerously good! The hot one! Made with the famous Bhut Jolokia chilli (1-1.5 million on the Scoville scale!), without combining the sweet taste of blueberries, it would literally blow your socks off! Boil chopped kale in a wok until tender, 4-5 minutes. Drain & when cool enough, squeeze out the excess water from the kale and set aside. 3 Over a medium heat, add the butter, sweet potato cubes, sugar & a dash of Black pepper & salt for seasoning Prep ¼ hr Cook 25mins Serves 4 as a side dish salt to the wok. Stir fry until tender & caramelised, 8-10 mins. 4 Mix all the ingredients of the vinaigrette together in a jar with a tight fitting lid and shake. Season to taste. 5 Add the kale, cooked rice and vinaigrette to sweet potatoes in the wok and toss to combine. When sizzling, serve topped with a sprinkling of pumpkin seeds. 6 harlech.co.uk

8 Enjoy a ~ Burn s Night Celebration ~ Succulent Braised Venison (or Beef) Ingredients: 1kg Diced Venison 6582, or Diced Beef Chuck Steak carrots celery sticks 7775, roughly chopped 5 tbsp plain flour 4300 seasoned with salt & pepper 2 tbsp redcurrant jelly ml Castillo Viento Rioja ml beef stock thyme sprigs bay leaf garlic clove, crushed Olive oil Butter Salt Black pepper Method: Prep ¼ hr Cook 1¼hr Serves 8 1 Heat oven to 180 C, Gas mark 4. Fry the vegetables in a little oil and butter in a heavy based casserole for 4-5 mins until golden. Tip in the garlic and fry for a further minute, then set aside. 2 Put the venison into a plastic bag with seasoned flour and shake to coat. Add a little more oil and butter to the pan, then fry the venison over a high heat, stirring now and then until well browned. Don t crowd the pan - cook in batches if necessary. Set aside with the vegetables. 3 Add the redcurrant jelly and wine to the pan and bring to the boil, scraping up all the bits that have stuck to the bottom. Pour in the stock, then add the thyme, bay leaf, meat and vegetables. Season if you like and bring to the boil. Cover and transfer to the oven for about 1½ hours or until tender. Remove from the oven and check the seasoning. 4 Serve with the traditional neeps and tatties, or try it with this creamy pumpkin risotto.
