The Harneys visit the tea regions of China, Taiwan, Japan, India, Indonesia, Thailand and Africa regularly to taste and source teas of the finest quality. Close to a million tastings Mike Harney tastes at least 80 teas per day, which adds up to more than 25,000 per year and he s been doing so for 30 years. Alone, he accounts for over half a million tastings. Then there are other family and staff tasting teas and blends day in and day out for decades. A rating of 0 means that the tea has none of that characteristic and a rating of 5 indicates that it is a primary characteristic. Briskness refers to the tea s ability to make your mouth pucker, also known as astringency. Body refers to whether or not a tea feels thick in the mouth, such as Assam, or light such as a white tea. 4 The art of making a perfect cup of tea Tea is an infusion made from the dried leaves of a flowering evergreen plant, camellia sinensis, native to Eastern and Southern Asia and now also grown successfully in Africa and South America. The art of making it a perfect delicious cup or pot of tea comes from four essential elements. Types of Tea (Image above, left to right) White - Barely processed, silver or white tea buds, air-dried for a light, sweet brew. Green - Tea leaves fixed green that highlight the vegetal essence of tea. Oolong - Fragrant teas, light in body, reminiscent of peaches or tropical flavors. Black - From mellow Chinese teas to full-bodied Assams from India, often served with milk and sugar. Herbal - Infusions from flowers, seeds, and spices, prized for soothing or stimulating qualities. Flavored (not shown) - Exclusive blends using different teas with added flavors, dried fruits and flowers. You need great tea! Fresh, pure water If need be, water should be filtered. Hard water, sulphurous water or chlorinated water will affect the taste of your tea. Condition and freshness Harney Tea should be stored in sealed containers away from light in a cool place. Because tea picks up flavors and odors from foods around it, keep coffee and spices away from your tea. Even though it s dry, tea can become stale. The best tea is enjoyed fresh! Brewing the perfect cup Heat your pot by filling it with boiling water to raise the temperature of the pot. Recycle the water. Use one teaspoon, teabag or tea sachet for each cup of tea desired. Follow the steeping instructions for each tea, as each has their own required time and temperatures. Once the steeping time is reached, remove tea, teabag or sachet to achieve perfect strength. Anji Black Newly rediscovered, this ancient tea is now one of China s most sought after teas. This is a black tea version that has a perfect balance of body and aroma. Golden Monkey Golden Monkey plants have bigger buds which are prized for use in white tea. Grown in the northern part of the Fujian Province, Golden Monkey tea and tips oxidize slowly. 7 Black Teas Black Teas Darjeeling Teas Darjeeling s high altitude, cool air and hardscrabble soil promotes slow growing tea that takes on variegated flavors. It is called the Queen of Teas, and we agree. High in the Himalayas and bordering Sikkim, the teas grown here are distinctive and the light and brisk first flush teas focus your attention with a floral aroma. The darker teas of later seasons are mellow and have fruity flavors of cooked fruit and muscatel. All are delectable. Assam Teas from India In the 1830s, British botanist Charles Bruce ventured into the jungle and discovered a native Assam large leafed tea. All modern Assam teas descend from this wild original, a tea suited for its climate, and to making a superb cup of tea that is full of body and can handle milk and sugar. Assam Golden Tips We order this tea from the best garden in Assam: Dikom. It s difficult and expensive to make a tea that has golden buds, but it s worth the effort. 10 Oolong Teas Oolongs are semi-oxidized teas, so neither green nor black, but somewhere in between. They likely first appeared 300 years ago in China s Fujian Province. Later they were transplanted to the island off China called Taiwan. Ali San Ali San is among the creamiest of oolongs.
