A rating of 0 means that the tea has none of that characteristic and a rating of 5 indicates that it is a primary characteristic. Briskness refers to the tea s ability to make your mouth pucker, also known as astringency. Body refers to whether or not a tea feels thick in the mouth, such as Assam, or light such as a white tea. This year we spent time putting the stories together in our podcast, As the Tea Steeps, and we all learned new chapters in the process. Such as when our founder, father and grandfather, John Harney, met James Norwood Pratt, a world renowned author and tea aficionado. Norwood was an early attendee of John Harney s Tea Summits. His life and contribution to the podcasts is typically witty and slightly wicked. He and Jane Pettigrew, another veteran of Tea Summitry, appear in this catalog to increase our knowledge and appreciation of tea. Tea is indeed a global language. Friends have bonded over it, wars have been started because of it, treaties have been sealed drinking it, and social order is to some degree regulated by it. For every tea drinking country, the name for it may change but the history, mystery and delight that a cup of tea offers is universal. 3 Journey with us from tea garden to tea cup DRYING & PROCESSING All teas start the same, but processing after harvest such as withering, rolling or oxidizing affects the eventual color, aroma and flavor of tea. White tea is simply dried, Green tea is withered and quickly heated to fix the green color. Oolong teas are withered, rolled and lightly oxidized to give them their color. Black tea is rolled and oxidized.. PACKAGING SHIPPING We import tea from overseas and we send tea to destinations around the globe. We still sell many such tins, but as we grew we became more adventurous in our packaging. GROWING The tea plant (Camellia sinensis) is an evergreen, tropical plant with green, shiny, pointed leaves. Tea likes it steamy, growing fastest from sea level to 6,500 feet in hot temperatures with 80 to 150 inches of annual rain, high humidity and fog. It grows more slowly at higher elevations or in shade. PICKING Most tea is grown as a bush 4 feet high, for ease of plucking. The very best teas are picked only by hand with only the bud and top few leaves being harvested. When tea is harvested is dictated by the region it is grown, the season, and the weather. The window when a tea is at its peak is frequently short so it is essential that tea estates pick at the optimal moment. BLENDING & FLAVORING For connoisseurs, the joys of pure teas are unequaled. But for many more people, the pleasure comes from the blending and flavoring of tea. The blending tradition goes back thousands of years and is something for which Harney & Sons is well known. 4 Know Your Tea EXPLORE YOUR TEA TYPE THE RULES Brew the perfect cup of tea Tea gives ample opportunity for expanding your horizons. Finding one tea that you love does not prevent you from courting other kinds of tea. While you may not taste up to 80 teas a day, as Michael Harney does, enjoying one or two different teas a day is not too much at all. We invite you to reach beyond the familiar and experiment freely. ROOIBOS HOT TODDY This stirring brew will raise the spirits and calm the fevered brow. k 1 cup apple cider k 1 cup of water k 2 TBS lemon juice k 1/2 lemon zested k 1 cinnamon k 1 thumb size piece of ginger, grated k 2 bags of Harney Rooibos Tea Instructions 1. Place apple cider, water, lemon juice, lemon peel, cinnamon, and ginger in a small saucepan. Bring to a boil over medium-high heat. Add Harney Rooibos Tea bags. 2. Let steep for 10 minutes. 3. Like fine wines, styles of tea also vary by each tea estate and garden, depending on geography, climate and farming practices. A good pot of tea cannot be made from inferior tea. You need great tea! Fresh, pure water If need be, water should be filtered. Hard water, sulphurous water or chlorinated water will affect the taste of your tea. Condition and freshness Tea should be stored in sealed containers away from light in a cool place. Because tea picks up flavors and odors from foods around it, keep coffee and spices away from your tea. It s important to properly rotate your teas on your shelf or in your drawer. Put the oldest at the front (marking it with the date in ) and use it first. When you buy the best tea, you should enjoy it at its best. Brewing the perfect cup Heat your pot by filling it with boiling water to raise the temperature of the pot. Recycle the water. Use one teaspoon, teabag or tea sachet for each cup of tea desired. Follow the steeping instructions for each tea, as each has their own required time and temperature. Once the steeping time is reached, remove tea, teabag or sachet to achieve the perfect strength. A timer will help you make it spot on. Enjoy. 7 CHINA BLACK TEAS CHINA GREEN TEAS China Invented the Language of Tea = chá = tea Nobody knows the exact date of the first person putting the leaves of the tea plant into hot water and consuming it but the words cha or tea in Chinese are first documented in the second century (AD 220) and have, since then, spread throughout the entire world. INFUSED WITH HISTORY By the fifth century, tea was being traded and by the sixth century it was very valuable, a secret enjoyed by a privileged few. Today, we honor these traditions and are happy to share some of China's finest teas without reservation. Anji Black Anji is an ancient tea from Zhejiang Province. 8 Meet the Women...of TEA BEVERLY WAINWRIGHT We first met Beverly about 10 years ago. She was hired by the Amba Estate in Sri Lanka to make very nice tea and make the lives of female tea pluckers better. She succeeded. Alex and Caitrin Harney went to the mountainous home of Amba and filmed a great interview: Beverly left the tropics a few years ago and now assists other tea estates in joining the world of tea in surprising places like Scotland and Mississippi. Her legacy continues at Amba, we continue to buy Amba Tea, Thieves Tea and Lemongrass herbal. JANE PETTIGREW ELVIRA CARDENAS Twenty years ago, a young Colombian woman started working at Harney & Sons. She spoke little English and knew nothing about tea. Elvira has been working with Mike Harney to buy great teas for many years. She has developed a great palate and is known around the tea growing countries. She has made many trips to Asia to see tea growers and their results. Mike calls her his tasting buddy and they are the one-two punch that ensures you are happy drinking our teas. Elvira told us about life as a tea purchaser: It s my job to search the world for the best ingredients with the highest quality level and distinctive flavors. Elvira grew up in a small town in Colombia. Moving to the United States in 1996 at the age of 20, she initially joined Harney & Sons as a tea packer. It was here that she discovered what she calls, this wonderful profession. It s a job that daily sharpens her skills as a tea taster and buyer in a highly competitive field. As a woman in the male dominated world of tea, she has faced challenges. You are constantly having to prove yourself, but I find it actually pushes me to work harder. You learn that if you believe in your ideas, soon enough someone else will too. Elvira describes the skills you need to do her job: a good palate, knowledge about nature, tea cultivation and processing, ability to communicate, and a willingness to travel. Once a year she visits a tea region, tasting the new season s teas. She is grateful for every trip but feels that my first trip to Taiwan remains my favorite. Visiting the tea gardens on the top of the mountains, smelling the fresh tea leaves and seeing the passion behind the artistry that is tea. I was opened to a world of tea that few people are able to see. PEARL DEXTER Tea is a small world, 30 years ago it was even smaller. So when John Harney started Harney & Sons Fine Teas, he happened upon Pearl. It helped that she was based in Scotland, Connecticut, running the Olde English Tea Room. It also helped that her husband Jim, had connections near John s base in Salisbury, Connecticut. What sealed the relationship was that she was lots of fun, and John liked to laugh. Pearl broadened her relationship with tea when she started the first periodical. She called it: Tea A Magazine. Pearl would do all sorts of events with John and his boys. Mike spoke with Pearl recently and she is reinventing her relationship with tea. We can t wait to find out what that means. Jane Pettigrew and Mike Harney both started in the world of tea about 30 years ago when Jane opened her Tea Room in London and Mike joined John Harney. Jane came over for several of the Tea Summits that John and Mike organized and she was always a hit and full of vim and vigor. Jane has continued to do many tasks in tea. She runs an annual contest for the Best Afternoon Tea in London. She has written many books, most recently the magnificent World of Tea. And a few years ago, she started the UK Tea Academy, which may be the best place in the world to learn about tea. 16 What's in Elyse Harney's tea cabinet? MEMORIES FROM THE MATRIARCH HERSELF When Alex and Emeric Harney sat down with their grandmother, Elyse Harney, the conversation, and the tea, flowed freely. Alex: Did you expect to work with your husband, Papa John? Elyse: I was attending Columbia for a Masters Degree and working at the Hotel Roosevelt In New York City when John and I decided to get married instead. That was my switch from academia to the hospitality field The advice I received to never work with my husband was promptly ignored. We did everything together. Have I regretted it - no! I have gained a whole world of friends both through our years at the White Hart Inn and through the tea company. John loved to keep in touch with everyone and responding to s from our tea drinkers was his pleasure. Michael has kept this up and funnels those I might have a connection with to me. Emeric: How did the tea company start? Elyse: It was through our years at the White Hart that we met Stanley Mason and started the tea company. Stanley trained our staff at the White Hart to serve good tea properly and forever after John went around with a thermometer in his jacket pocket to be sure the temperature of the water was correct. John learned the art of blending from Stanley and my, son, Michael, is blessed with the olfactory skills to carry this to the summit. As Michael says, "Good tea makes you smile. The ultimate experience is to watch Michael and Elvira Cardenas (see page 14) tasting teas every day - sometimes twice. Emeric: What are your personal favorites? Elyse: A good green or Oolong tea in a porcelain cup is a thing of beauty for special occasions. A good mug with breakfast tea gets the day started. John always started with Sencha. I have been drinking Angiogenesis Foundation tea which has a touch of Jasmine. Loose tea in the afternoon takes a different presentation. Depending on the season, guests, etc., I can decide which of my favorite tea pots to use. The Dragon Pearl is such a beautiful tea - should be served in a glass tea pot. I have a selection of strainers - some I keep right by the commercial hot water heater, which is the most important thing in my kitchen. Alex: But what is your favorite tea? Elyse: That is a hard one to answer. Somehow, when I go to the Oakhurst Diner, which is my son Paul s extracurricular activity, I always have the Genmaicha. That is the only time I drink it. But when I go to the Harney Tea Shop in Millerton for lunch I always have an Oolong. I think your tea is like a good friend - you associate one with different occasions. I like my tea straight, but lemon and milk and sugar are always available, honey would be the ultimate for wintery days and sagging spirits. A little rum also helps the sagging spirits. At the tea shop, Brigitte has beautiful black containers for the tea - customers come to refill their own containers. My home is also the home of Elyse Harney Real Estate and so all our staff greets waiting guests with "Wouldn't you like some tea" - depending on the season, a cup of hot tea or in summer freshly brewed iced tea. Almost everyone in both Darjeeling and Assam, though, understands chaay or chai as tea and it is India s national drink and the state drink of Assam. 19 HOW A CHANCE MEETING Changed the Language of Tea James Norwood Pratt In 1981 I telephoned John Harney to introduce myself as an author researching a book on tea. The American tea trade was not just sleepy, it was comatose, and he had just acquired the smallest of the five or six American tea brands, none of them very profitable. We hit it off at once and hung up fast friends. Next time we spoke he reported selling 6000 pounds of tea his first year and we both felt that was a good start. Mrs. Harney felt it was time to apply for a realtor s license. In our third conversation he said he was changing the company name to Harney & Sons Fine Teas and I said But John, you have no sons in the business. Just wait, he told me, they will be! His six teas were still being packed in tins in a tiny room just off the kitchen at the time but John was a man of faith. Before long he had landed the Waldorf-Astoria as his first big hotel account and the rest, as they say, is history. I witnessed that history as it happened, for our phone conversations continued as long as he lived. He s known to the Harney family as Norwood and to the rest of the world as the Tea Sage. As a result of that first phone call, he was present at the very first Harney Tea Summit. 26 HORS D OEUVRES DESSERT TEASY SPICED PECANS Makes 4 cups 1 tsp vegetable oil 1 egg white 1/4 c sugar 2 tbsp Hot Cinnamon Spice tea leaves, finely ground 1/2 tsp salt Pinch of ground white pepper 3/4 lb pecan halves 1. Preheat the oven to 350ºF. Oil a large, flat baking pan. 2. Beat the egg white in a deep bowl until frothy. In another bowl, combine the sugar, tea, salt, and pepper. Add the pecans to the egg white, turning to coat evenly. Transfer to the second bowl and toss to cover with the sugar mixture. 3. Distribute the nuts evenly on the pan and bake for 15 minutes. Remove, turning with a spatula until cool. Store in an airtight container. APPETIZER TEA S TOASTS Makes 12 1 c (4 oz) finely shredded Gruyère cheese 1 4 c (1 oz) grated Parmesan cheese 2 tbsp minced shallots 1 tbsp Earl Grey tea leaves, finely ground 3 tbsp mayonnaise 12 cocktail-size slices European-style whole grain dark pumpernickel bread 1. Turn on your oven to broil. Lay the bread on a pan or cookie sheet. 2. Combine both cheeses with the shallots, tea and mayonnaise in a bowl. 3. Spread on the pumpernickel bread, patting to smooth. Broil until the cheese is hot and bubbling, watching that the cheese doesn t burn. Remove and serve. MAIN COURSE SAUTÉED PORK CHOPS WITH APRICOT-WILD MUSHROOM GLAZE Serves 4 2 tsp Lapsang souchong tea leaves 1 2 oz mixed dried wild mushrooms 1 2 c apricot preserves 1 tsp unsalted butter or vegetable oil Four 1-in/2.5-cm thick rib pork chops, blotted dry Salt Freshly ground black pepper 1 4 c ml dry white wine Chopped flat-leaf parsley, for garnish 1. Bring 1/2 cup water just to a boil, pour over the tea leaves, and infuse for 5 minutes. Strain the tea over the wild mushrooms, pressing to extract as much liquid as possible. Allow the mushrooms to soften, about 15 minutes. Don t drain. Combine the softened mushrooms and any remaining liquid with the apricot preserves, stirring to blend well. 2. Heat the butter or oil over medium-high heat in a skillet just large enough to hold the pork chops. Cook until browned on one side, about 5 minutes. Generously season with salt and pepper, turn, and season the second side. Pour the preserve mixture over the meat, adjust the heat to medium-low, cover and cook until the pork is barely pink in the center, about 8 minutes. 3. Remove the chops to a heated platter, pour the wine into the skillet, bring the liquid to a boil and stir up any browned cooking bits. Pour the sauce over the chops, sprinkle on parsley and serve. SPICED PLUM GINGERBREAD CAKE Makes one 10-inch bundt cake 1 4 c Passion Plum herbal tea leaves 8 tbsp unsalted butter 1 2 c each corn syrup, dark molasses, and firmly packed dark brown sugar c all-purpose flour tsp each ground ginger, cinnamon, cloves, and nutmeg 1 4 tsp salt 2 large eggs Grated zest of 1 lemon 1 tbsp lemon juice 2 tsp baking soda 4 c confectioners sugar 1. Preheat the oven to 350ºF. Grease one 10 x 3 1/2-inch bundt pan. 2. Bring cups of water to a boil, remove from heat, add the tea, and steep for 5 minutes. Strain, pressing to extract as much liquid as possible. 3. Melt the butter; then stir it together with the brown sugar, molasses and corn syrup. Set aside to cool. 4. In the bowl of a food processor, combine the flour, ginger, cinnamon, cloves, nutmeg and salt and pulse to blend. Scrape in the butter-sugar mixture and blend. Add the eggs and lemon zest and process until smooth. 5. Stir the baking soda into 1 cup of the tea. Stir the mixture into the batter then scrape it into the prepared pan. Bake for 40 to 45 minutes until the top is springy and a knife inserted near the center comes out clean. Remove the pan and cool on a cake rack. 6. While the cake is cooling, combine the remaining tea with the lemon juice. Sift in the confectioners sugar, whisking until you have a thick but spreadable icing. Pour over the cooled cake, let it set, then serve. BEVERAGE RASPBERRY CHAMPAGNE CORDIAL Serves 6 1 1/2 tbsp Raspberry Herbal tea leaves or 6 tea bags 2 tbsp sugar 1 bottle Champagne or Prosecco, chilled 12 to 18 fresh raspberries 1. Bring 1 2 cup of water just to a boil. Stir in the tea leaves and sugar, and steep for 3 to 4 minutes. Strain the liquid into a small spouting measuring cup, pressing to extract as much liquid as possible, and refrigerate until cold. 2. Pour the champagne into 6 flutes. Slightly tipping each glass, carefully pour about 1 1/2 Tablespoons of the chilled tea mixture down the interior side of each flute. Add 2 to 3 raspberries to each and serve.
