2 You are what you eat The most prominent representative of gastrosophy*, Jean Anthelme Brillat-Savarin, already new this and emphasized the connection between the physical and the psycological. Careful handling and enjoyment of authentic food forms the basis of a healthy body. In comparison food which has been processed in the labatory by means of legally permitted additives and flavourings to achieve a standardised uniform tasting mass market product, can result in a destabilisation of the natural balances. Intolerances, allergies and oversensitivities are frequent consequences. * Gastrosophy is the science or art of good eating. The term is constructed by the use of the Latin terms gastro (gastrointestinal) and sophia (wisdom).
3 Bread is not just bread IT S SIMPLE, REALLY! To bake good bread, one needs flour, water, salt and yeast. Real clean eating! Unfortunately the reality is often quite different. In fact: 18% of daily consumed bread products cover long distances as frozen dough before being transformed into freshly baked bread by the automatic breadmaking machines in supermarkets and bake-off shops. these frozen dough products contain many ingredients which have little to do real bread. 200 authorised additives and adjuvants are used in the baking industry. some additives can have a negative effect on the intestinal flora and can lead to stomach cramps and flatulence. the use of some additives such as enzymes do not need to be transparent as they no longer contain any technological efficacy in the finished product anymore. there are enzymes, e.g. amylase, that are suspected to cause allergies. traditional bread grains like wheat have fallen into disrepute although containing plenty valuable minerals and vitamins.
