2 SFSP OVERVIEW GOAL: Providing nutritious meals to students throughout the summer days while providing outreach through the Faith Alliance. Just because students are out of school doesn t mean that their hunger stops. SITE: Some locations are an Open Site program, meaning all students (Lakota and non-lakota) are eligible for free meals without have to pull income applications uses area eligbility. Some are Closed Enrolled, meaning we need to account for each student. YEARS OF OPERATION: Three years administering the SFSP. Second year using the buses. LOCATIONS: 7 Liberty Jr. will be the central kitchen with 6 satellite sites via buses.

3 DAYS OF OPERATION AND CHILD NUTRITION PARTNERS May 30 th (Start Of Program) August 8 th (End Of Program) No Service July 4th

4 OFFER VS. SERVE Students must take at least 3 out of the 4 components Therefore, students must take an entrée as our entrees are combination foods that consist of the GRAIN and PROTEIN components They wouldn t be able to make a meal by taking a milk, fruit, and vegetable since the fruit/vegetable is ONE component Students do NOT have to take a fruit or a vegetable with their meal. This is only a requirement during the school year under the National School Lunch Program. Therefore, an entrée and milk is considered a meal unlike during the school year. Students can take 2 of each fruit and vegetable if desired, just like during the school year.

5 FOOD SAFETY TEMPERATURES - TRANSPORTATION Temperatures are to be taken just like during the school year: 1. When product comes out of oven (>160⁰ degrees to ensure the product will hold throughout the bus transit) 2. When product is placed into the cambro units before loading onto the bus (>135⁰ or <41⁰) 3. When product is removed out of the cambros for the serving period (>135⁰ or <41⁰) and is done at every site/stop Record these temperatures on the Food Temperature Logs See the clipboard for each bus (The cook and manager will have these logs started for you on the clipboard. The clipboard is to be taken on the bus as the log has to stay with the food product) ** Cafeteria Manager and cook will be recording the equipment temperatures in the AM when they arrive and also the PM before they leave **

6 MENU ITEMS - CONTAINERS Entrees if not pre-wrapped (ex. Chicken nuggets, Hamburgers/Cheeseburgers totally taco, etc.), place the items into a foil lined bag Fruit & Non-fresh Vegetables (salsa, marinara, baked beans) place ½ cup in the 4oz clear hinged container Fresh Vegetables place ½ cup volume in the clear hinged container with the dipping cup. Place 2 packets of ranch in the dipping section. Moo Meal place all items in Ziploc bag Other Menu Items: Bosco Sticks, Italian Subs, Turkey Hot Dog, Grilled Cheese

7 TRANSPORTING FOOD - TOP LOADING CAMBROS Will be used to keep the following items cold: Cupped Fruit Vegetables Milk (2) Cold Entrees (Moo Meal & PB&J)

8 TRANSPORTING FOOD FRONT LOADING CAMBROS Will be used to keep the entrée items hot: Rinse the inside of the cambro with boiling hot water Place entrée items in 4 full pans Close the lid and keep closed until service

9 WEEKLY PROGRAM GIVE-A-WAYS Couple days a week we will be giving away any of the following: Chips (use up what we have leftover from the school year first) Mini Rice Krispies Fortune Cookies This will hopefully help increase participation

10 DAILY PAPERWORK Production Records Will have to be done per EACH site For buses, every stop you will need to complete a new production record this is due to the fact that each site stands on their own in the states eyes and we cannot combine all 3 stops together as the meal counts won t reflect the number of meals at each site (this would be like 3 schools ringing the students up at their school, but using one production record) Food Temperature Log As discussed before, temperature of food needs to be taken and documented Equipment Temperature Log Cafeteria manager and/or cook will take the temperatures twice a day

11 BUS SET-UP Each bus will have folding tables that will be set up at each stop to place the entrée choice on Fruits, vegetables, and milk will be served out of the top loading cambros, which are sitting on dunnage racks Cashier/POS person (Manager) will be standing near the bus entrance, ensuring those that come by with food are completing a meal CNP will be serving items, assisting students, and stocking product If it rains, an additional bus will be sent for students to sit on and eat their meal This will be determined the morning of

17 FOOD SAFETY - SANITATION Each bus will have a handwashing station that will need to be filled up every day with HOT water and then loaded onto the bus Paper towels, soap, and an empty pan will need to be available on the bus every day Additional items to be available on the bus: Spray bottles with sanitizer Gloves Hand sanitizer Hairnets

18 T-SHIRT PROJECT If you see any individuals who are in need of a clean t-shirt, please let the Mgr. know and we can provide the student a shirt and give one to their friend also Keeping some shirts on each bus?

19 VOLUNTEERS Volunteers will be at each site to help the students open up items, oversee the students off the bus, play games, interact, etc. They will be responsible for walking around collecting trash We are encouraging the volunteers to take ownership on mandating that the students eat their food on the site premises
