6 Protected Designation of Origin (PDO) identifies products that are produced, processed and prepared in a specific geographical area, using the recognized knowhow of local producers and ingredients from the region concerned. These are products whose characteristics are linked to their geographical origin. 6

7 Protected Designation of Origin (PDO) SK: 1 product: PL: 8 products Paprika Žitava/Žitavská paprika: a sweet paprika with a typical orange-red colour obtained from the grinding of dried Capsicum chilli pepper grown in the Danubian lowland Since

8 Protected Geographical Indication (PGI) identifies products whose quality or reputation is linked to the place or region where it is produced, processed or prepared, although the ingredients used need not necessarily come from that geographical area. 8

9 Protected Geographical Indication (PGI) SK: 10 products: PL: 20 products Malt: Levický slad (since 2015): is a light pilsnertype barley malt intended primarily for the production of beer. It is obtained from selectively bred, certified varieties of two-row malting barley grown in the defined geographical area. 9

10 Protected Geographical Indication (PGI) Cheese: Klenovecký syrec (since 2015): is a semi-hard, ripened cheese, smoked or unsmoked, in the form of a wheel; Slovenská bryndza (since 2007): a natural, white, mature, spreadable cheese with the percentage of lump sheep's cheese greater than 50 %); Slovenská parenica (since 2007): a steamed, lightly smoked cheese wound into two rolls; Slovenský oštiepok (since 2007): a half-fat semi-hard cheese with a large egg shape; 10

11 Protected Geographical Indication (PGI) Tekovský salámový syr (since 2010): a natural semi-hard, ripened full-fat cheese in the shape of a cylinder produced in the Tekov region; Zázrivský korbáčik (since 2010): a steamed cheese product, smoked or unsmoked, in the shape of a little whip produced in the municipality of Zázrivá; Zázrivské vojky (since 2014): a steamed cheese product in the form of strings produced in the municipality of Zázrivá; Oravský korbáčik (since 2010): a steamed cheese product, smoked or unsmoked, in the shape of a little whip produced in the Orava river basin). 11

12 Protected Geographical Indication (PGI) Fine bakery ware: Skalický trdelník (since 2007): a fine bakery product of hollow cylindrical shape produced in a specific area of the Slovak Republic - Soft dough is wound onto a roller trdlo - Coated with beaten egg whites - Sprinkled with chopped walnuts or almonds or appricot kernel or a mixture of these. - After baking sprinkled with vanilla sugar 12

13 Traditional Speciality Guaranteed (TSG) identifies products of a traditional character, either in the composition or means of production, without a specific link to a particular geographical area. 13

14 Traditional Speciality Guaranteed (TSG) SK: 7 products: Fine bakery product: PL: 9 products Bratislavský rožok/pressburger Kipfel/Pozsonyi kifli (since 2011): fine bakery or pastry ware with poppy-seed or walnut filling and a glossy and marbled surface; 14

15 Traditional Speciality Guaranteed (TSG) Cheese: Ovčí hrudkový syr salašnícky (since 2010): a cheese produced from fresh sheep s milk in shepherd s huts shaped by hand into a lump; Ovčí salašnícky údený syr (since 2010): a cheese produced from fresh sheep s milk, processed in shepherd s huts, smoked and often formed into specific shapes (hearts, cockerels or other animals, hemispheres); 15

16 Traditional Speciality Guaranteed (TSG) Meat products: Lovecký salám/lovecká saláma (since 2010): a long-keeping fermented meat product intended for direct consumption, usually as a cold cut; Liptovská saláma/liptovský salám (since 2010): a meat product with homogeneous appearance, delicate meaty taste and the specific aroma; 16

17 Traditional Speciality Guaranteed (TSG) Špekáčky/Špekačky (since 2010): a heatprocessed meat product made from a continuous strand several metres long stuffed into casing made of pork small intestine or beef rounds); Spišské párky (since 2010): a meat product contained in sheep-intestine casing separated by twisting, typically pinkish-red in colour, owing to the paprika seasoning, and have a slightly piquant taste). 17
