1 Grains 2 nd 3 rd Grade Lessn Gal: Students will learn what fds are in the grain grup and recgnize the healthier chices in the grains grup. Objectives: 1. Students will state that energy is the majr nutrient prvided by the grain grup. 2. Students will differentiate between healthier whle grains and less healthy refined grain fd chices. 3. Students will name at least tw whle grain fds. 2 2 During ur first nutritin lessn, we talked abut MyPlate. Tday we re ging t talk abut ne f the fd grups fund MyPlate and let s see if yu guess which ne we are ging t talk abut. Optin 1: energy Ask students where the flashlight gt the energy t light up (batteries) Tell students t d 10 jumping jacks. Then ask where they gt the energy t d that. (fd) Ask if anyne remembers which fd grup gives us the best energy t fuel ur activities. Ppcrn Ppping Rhyme: Read pem and have students act ut pem as yu are reading it. Raise yur hand if yu can name a fd fund in the grains grup. What clr are the fds in the grains grup? They are brwn, white, tan, yellwish, etc And fds in the grains grup are made frm different grains. 3 3 different grains there are that we can eat. There are even mre grains than this that we can eat, but these are sme f the mst cmmn. What d these grains lk like? Seeds! All grains are seeds. We make different fd frm these grains, such as bread, cereal, and ndles. Sme f them we can als eat n their wn, like rice and ats. Many fds are made frm grains and, as yu saw in the pster, mst f the grains lk a lt alike. We are ging t talk mainly abut wheat tday, but remember that there are many different grains t chse frm! Wheat is ne kind f grain that we make a lt f fds frm, including bread, cereal, and pasta. Remember the wheat stalk that I shwed yu at the beginning f class? This is hw wheat grws. I m ging t walk arund with the wheat stalk and I need yu t be very quiet s that yu can hear it when I tap it. What d yu think is n the inside, making that nise? Seeds, wheat seeds! Each wheat stalk has seeds n the inside! What d we d with seeds? That s right, we plant them and then they grw. That tells us that there is a baby plant inside each seed. The baby plant is called the germ (nt like the germs that are n yur hands!). What are tw things that babies need t live? Fd and smething t prtect them these are the ther tw parts f the seed! Germ: The baby plant is called the germ. That sunds kind f funny desn t it?!? It s nt like the germs yu find n yur hands, it s a baby plant fund in a seed! Bran: The bran is what yu see n the utside and is the cat that prtects the babies. Endsperm: Inside the cat is the fd fr the baby plant, called the endsperm. The fd is white. The baby plant is very tiny and is inside the cast alng with the fd. Let s take a lk at sme real seeds. I have ne wheat seed fr each f yu t examine What yu see n the utside (the brwn part) is the cat that prtects the babies. It is called the bran. Yu might have heard this wrd if yu eat things like raisin bran cereal r bran muffins. Each f these fds had bran as ne f its ingredients. Yu can als see the baby plant beginning t sprut ut f the seed. This is called the germ. Break pen yur seed and see what yu find n the inside. The white part, als called the endsperm, is the fd fr the baby plant, which lks a bit like milk nw that it is wet just like the fd fr baby peple We use these little seeds t make all srts f fds frm the grain examples f real grains. G ver the pster and discuss the fds we get frm each ne f the seeds n the pster may als reinfrce with picture r fd mdels. Walk arund with the wheat stalk and tap it fr the students t hear. 4 4 grup. Let s learn hw t make bread frm these tiny seeds. Making Bread Des anyne knw hw we make bread frm wheat seeds? First we have a picture f the wheat stalks grwing in the field (picture 1). Ntice that they are green. After a while, they turn brwn r glden (picture 2). This means that they are ready t be harvested. Farmers use a big machine called a cmbine t cut dwn the wheat and take ut all the seeds (picture 3). The machine pulls ut the wheat seeds s that we can use them (picture 4). Then the wheat seeds are taken t a mill and grund up int little tiny pieces t make flur (picture 5). This is the flur that we use t make bread. Then, we mix the flur with ther ingredients such as eggs, il, and water t make dugh (picture 6). Then we put it in a pan, bake it in the ven, and we get a laf f bread (picture 7)! There are many different types f bread we can make. Here, we have a picture f white bread and whle wheat bread (picture 8). Can anybdy tell me the difference between white bread and whle wheat bread? (White bread is made frm nly the endsperm r fd fr the baby plant while whle wheat bread is made frm all 3 parts the endsperm, the germ, and the bran. Grains that have had the bran and germ remved are called refined grains; grains that have all three parts are called whle grains. White bread is a refined grain while whle wheat bread is a whle grain.) Nw, which ne d yu think is healthier: White bread r whle wheat bread? Whle grain fds are healthier fr us because they are made frm the whle seed, s we get all the gdness f all three parts f the seed. Remember hw we talked abut hw the bran and the germ are packed with nutrients like B vitamins and fiber and the endsperm has nutrients, but nt as many as when yu put it tgether with the bran and the germ? T help yu remember this, think abut this example: Suppse I cme and ffer yu smething yu really like (maybe ripe, juicy strawberries, fr example). In ne hand I have three strawberries, and in the ther hand I have ne. Which hand wuld yu chse? (The ne with three because it gives yu mre f the gd thing yu like. It s the same with grains: refined grains like white bread that give yu nly ne part f the seed are gd fr yu, but whle grains like whle wheat bread give yu the gdness f all three parts f the seed, definitely a better chice.) Use Making Bread pictures t illustrate hw bread is made frm wheat berries. OR Use the grinder t grind wheat berries int flur and sift. Put a handful f wheat berries in the grinder and grind. When finished shw the students what the flur lks like. Tell them that this is whle wheat flur because it used ALL three parts f the seed the WHOLE seed. Whle wheat flur results frm grinding the seed and using all f it. Whle wheat flur is used fr making whle wheat bread. Sift the flur int a bwl. The flur that cmes thrugh is white. This is white flur (r at least it is clser t white flur than what we started with; if we had a better sifter, we culd sift ut all f the bran and germ t make white flur). Shw t students and cmpare it t the clr f the flur left in the sifter. The flur in the bwl shuld be whiter than what is left in the sifter. The white flur is the small part that falls thrugh the sifter. This is the fd inside the seed (r the endsperm). This is what we use t make white bread. The white flur is made up f nly the endsperm and nne f the bran r the germ. Remind students that using the bran and the germ tgether with the endsperm will give mre nutrients. 5 5 White bread is kay fr ur bdies, but des nt have as many gd things s it desn t have as much nutritin as whle wheat bread. Fr advanced 2 nd r 3 rd grade classes: We knw that whle grains are healthier, but when yu are in the grcery stre shpping fr grain fds like bread r cereal, hw can yu tell if a fd is a whle grain r a refined grain? It s pretty easy. Lk at the ingredient list n the package. If the first ingredient has the wrd whle in it (whle wheat, whle grain crn, whle grain ats, etc), that gives yu a big clue that the fd has a lt f whle grain in it. If the label just says wheat r crn r ats, r enriched wheat, that is a clue that the fd is mstly refined grain. Imprtance f Eating Grains Let s take a lk are MyPlate again. Hw much f yur plate shuld be fds frm the grain grup? That s right! One quarter f yur plate shuld be grains. That s a lt! Why are the fds in the grains grup s imprtant fr us t eat? Energy! The fds in the grains grup help ur bdies stay healthy by giving ur bdies energy. That s because fds in the grain grup cntain ne f ur nutrient superheres. Meet Captain Carbhydrate. Captain Carbhydrate gives yur bdy get up and g energy t run, jump, and play. Yu re ging t learn mre abut Captain Carbhydrate in 4 th Grade. Fds in the grains grup are really gd surces f carbhydrates, which give ur bdies energy. What things d yu d that use energy? What are sme ways yu use energy when yu play? What are sme f the ways yu use energy in schl? What are sme f the ways yu use energy at hme? D yu think yu wuld be able t d any f these things if yu didn t have any energy? Fds in the grains grup are als really gd fr ur bdies because they are really gd surces f fiber. Fiber keeps ur bellies and hearts wrking well. That s why it is s imprtant fr us t eat fds frm the grains grup. N matter what grain yu chse, it will give yu energy that yur bdy needs t keep ging each day! Shw ingredient lists fr bth whle and refined grain prducts. Have students d a few activities: jump in place, run in place, d arm circles, r dance. Use a flashlight r battery pwered ty t demnstrate hw batteries give the flashlight energy (just like grains give ur bdies energy) and if the flashlight des nt have batteries it can t d what it is suppsed t. Wrap-Up Tday we learned all abut the grains grup and why grains are s imprtant fr ur bdies. What is the difference between whle grains and refined grains?
