2 THE HISTORY OF TENUTA LA NOVELLA In the 13th century, founded the monastery of San Bartolomeo Musignana, to welcome the sisters "Agostiniane di Santa Croce". On the square was already a watchtower that was used previously to monitor access to Florence by the Ema Valley. It was the basis for construction. Around her were erected various buildings of the community residence of the mother superior, dining hall, dormitory, meditation place (monastery) and prayer (chapel). Over the centuries expansions allowed the development of the community. Napoleon and the French Government decided in 1808 the seizure of all property belonging to the clergy. For 10 years, San Bartolomeo of the religious have a derogation and continue to use the premises, however they had to leave in On 24 April 1820 the monastery becomes the property of the wealthy family Zini, old nobility of Modena and Ferrara. After acquiring the surrounding land from the Marquis Francesco Riccardi della Vernaccia and several years of work to transform the monastery, it became a great agricultural area consisting of 17 farms. In 1827 it changed its name and is now called the "Novella" that is to say, the "New", the "Transformed". Wine is produced here, olive oil, chestnut flour, grain, fruit, vegetables. It raises sheep and made cheese. Little change until the 20th century. Other owners succeed to the Zini family. In October 1953 Sbraci Siro, industrial Prato, buy it. He died in the 70 without direct heirs. The area is then abandoned for decades. In 1996, data on which the Company became the owner of the Estates, the Novella has become a real ruin. It will take more than 10 years of work to restore it to life.

3 OUR PHILOSOPHY BETWEEN EARTH & SKY A place blessed by nature Tenuta la Novella, perched at 500 meters in altitude, is located in the heart of Tuscany, between Florence and Sienne, in the Chianti Classico appellation. OUR PRODUCTION For Tenuta la Novella, being natural is a top priority. To attain the very highest quality, Tenuta la Novella produces its olive oils, Chianti Classico and Vin Santo according to organic agriculture s strict norms. No pesticides, no chemical fertilizers. Nature alone allows us to harvest exceptional products, combining fine flavours with well-being for the body and soul.

4 ORGANIC AGRICULTURE The only inevitable choice When Francois Schneider laid his eyes on this unspoilt part of Tuscany, that from about twenty years was going through a neglected state, choosing the organic farming seemed inevitable; the only way forward to restore new life to these places. Farmlands are insulated by thick wooded areas and are therefore shielded from any external contamination. Certification for the entire production was obtained in RESEARCH FOR NATURAL BALANCE The altitude allow us to effectively manage the deseases that may attack the crops without to use chemical pesticides or synthetic products. Good management of grassing and working the land allow us to have fertile and vital soils without the use of any chemical fertilizer. The result is a more fertile ground, an healthier environment to live and work, and more genuine products for the final consumer. Since 2009, Bertrand Quesne has introduced some practices taken from the biodynamic philosophy, as further investigation of the biological method. GUARDIANS OF BIODIVERSITY The ground we work is completely under our care and it's our responsability to hand it on to future generation as it has been handed down to us.

5 EXTRAVIRGIN OLIVE OIL The 36 hectares of olives spread across Tenuta la Novella are notable for the predominance of Moraiolo olive (70 %), a capricious variety which yields an oil of rare complexity, plus Frantoio (20 %), Leccino (5 %) and Pendolino (5 %). The organic exploitation, begun in 1996, is helped by Tenuta la Novella's exceptional geographic situation, where altitude protects trees from the indo minable 'olive fly', which is particularly damaging to the quality of oils from the plain. You can buy extra virgin olive oil online buy visiting our olive oil store IN THE MILLS The olives are picked by hand then transfered to the mill as quickly as possible for processing. The speed with which the olives are processed is an essential aspect of quality for us. We do everything to make the interval between picking and milling as short as possible. The mill is equipped with a unique system that contributes enormously to the quality of our oils. The system actually protects the oils from oxidation during milling. This process is the subject of a worldwide patent: the Tenuta la Novella patent. The resulting oil is of better quality and has a superior conservation capacity.

6 WINE BIOLOGICAL VINEYARDS Conducted in organic farming since 1996, the vineyard of 12 hectares planted around the estate, on the best soils of the property. Consists of a mosaic of vineyard parcels with different expressions can reveal the richness of the place. VINES On schist soils, Sangiovese is king (80%) in harmony with several grape varieties (Teroldego, Merlot, Cabernet Sauvignon, Ancellota), all planted with high densities of plantations (6,000 to 7,000 feet / ha). VINTAGE HARVEST Harvesting is done entirely by hand, in several sorts to only harvest the grapes at optimum ripeness. Upon their arrival in the cellar, they spend a second screening test. Stemmed but not crushed, to preserve the integrity of the berries, they are then transferred by carpet in fermentation tanks.

7 VINSANTO THE VINSANTO Vin Santo is an ancient wine. Its name derives from vin santo (the "holy wine") and was the sacramental wine. Regarding the winemaking process, we keep the grapes up until November. They are then harvested and placed in the Vinsantaia where they are hung to dry until April. This will keep a good concentration of aromas. IN THE CELLAR Pressing takes place in Spring. The juice is then placed in small barrels with wood of diverse aromatic properties (oak, wild cherry and mulberry), where it undergoes multiple natural and unpredictable fermentations for over 5 years. Over time, this nectar reaches 16 and develops a beautiful amber colour with complex aromas of dry fruits, pastries and honey. A rare wine. No more than 400 litres are produced per year.

Is an elegant and well balanced wine. IGT TOSCANA Piano del Sarti - Syrah Made from a majority Syrah, coming from the two highest parcels of the winery. With an exceptional orientation and soil, this wine has a great finesse. OLIO EXTRAVERGINE D'OLIVA All the qualities of a great Tuscan olive oil are present here: intensity, freshness, aromatic richness and great finesse 70% moraiolo, 20% frantoio, 5% leccino, 5% pendolino Handpicking Pressing within a day at Tenuta la Novella s mill.
