Its gently sloping sides are rich in Goldridge sandy loam with two to three feet of topsoil followed by layers of clay. Delightful aromas of ripe Fuji apple and stone fruit mingle with hints of ginger spice in our 2015 Heintz Vineyard Chardonnay. Creamy flavors of Asian pear, nectarine and a touch of marzipan coat the palate. Rich and full-bodied with defined structure and balanced acidity, this layered Chardonnay offers a pleasingly long, lingering finish. Winemaker NOTES BY ESTATE VINEYARD MANGER SOPHIE DRUCKER, BOISSET COLLECTION Harvest is long over, but work is never ending in the cellar. Right now in the cellar the main tasks are racking and returning the wines. We will be drawing the wines off of the lees, mixing them in our oak tanks and then returning them to clean barrels. This allows a small amount of oxygen into the wine, helping to soften the tannins and develop the flavors in a pleasing fashion. The other main task in the cellar is bottling of our spring wines. The Pinot Gris, French Colombard, Trousseau Gris, Albarino as well as Rosé of Cinsault are right now getting prepped for going into the bottle. Our team has been working to get these wines ready for bottle since early winter and the 2018s are shaping up to be lively and exciting wines. In order to eliminate the possibility of corks tainting our wines with off aromas of cardboard or other funk, we re using a cork that has been cleaned using supercritical carbon dioxide. This process purges any aromatic compounds from the cork material, eliminating any chance of off flavors getting into the wine. Our goal is to make sure every bottle of Buena Vista tastes just as good out of the bottle as it does in our cellar, so implementing these corks are a critical part of making sure that happens. I would like to highlight our Petit Verdot, one of the five traditional Red varieties of Bordeaux (the others being Cabernet Sauvignon, Cabernet Franc, Merlot and Malbec). It does best in warmer years and warmer growing regions, as it has comparatively thinner skins and tends to ripen faster than Cabernet Sauvignon. In cool years it can have a bit of a green, tannic edge to the wine, but in nice warm vintages, the texture can be very velvety and smooth, with lots of intense dark fruit and spice elements. The wines made from Petit Verdot are often the darkest of the Bordeaux family, and as such a small percentage is often found to help give structure and color to the blend.

3 Cellar Update: FEBRUARY BY STEPHANIE PUTNAM, WINEMAKER, RAYMOND VINEYARDS With the holidays over and the new year off to a great start, we are pleased to share that the 2018 harvest is now officially wrapped up. This harvest was a gift that kept on giving with it being one of the largest in quite some time, which happens to be true for both our reds and whites. We look forward to how welcoming these wines are going to be. The 2018 vintage will have some softer tannis present, more like our 2014 wines which was an amazing year. This is an indication of another successful harvest! To celebrate, I headed to Indonesia where I found myself scuba diving, as usual. Of course this is a place known for its amazing beaches and surfing, and so diving was a must. As it was hard to say goodbye, but my passion for wine was again calling. While I had the opportunity to represent Raymond Vineyards in Japan I do plan to visit more of the East coast here in the states during the spring. I hope to catch some of you while I am sharing the love that is Raymond Vineyards. Did I mention how much I love my job? CHEF S CORNER: FOOD & WINE SEARED SCALLOPS WITH LEMON HERB RISOTTO Pairs well with the LVE 2016 Sparkling Brut or the DeLoach 2015 Heintz Vineyard Chardonnay Ingredients: 4½ C chicken stock ¼ C olive oil, divided 2 Tbls unsalted butter, divided 12 ounces leeks, white and light green parts only, diced (about 2½ C) 2 garlic cloves, minced 1½ C uncooked arborio rice 3 thyme sprigs Preparation: ¾ C dry white wine 2 tsp kosher salt, divided 3 ounces Parmigiano-Reggiano cheese, grated (about ¾ C) 1½ tsp lemon zest plus 1 tsp. fresh juice (from 1 lemon) 12 large sea scallops, patted dry, at room temperature (about 1 lb.) 2 tsp chopped fresh tarragon 4 tsp chopped fresh parsley Step 1: Heat chicken stock in a saucepan over medium-high until steaming but not boiling; reduce heat to low to keep warm. Step 2: Heat 2 Tbls of the oil and 1 Tbls of the butter in a medium saucepan over medium-high. Add leeks and garlic; cook, stirring often, until tender, 5 to 7 minutes. Stir in rice and thyme; cook, stirring until coated, 1 to 2 minutes. Add wine; cook, stirring constantly, until absorbed, about 1 minute. Add 2 C of the warm stock and 1 tsp of the salt to rice mixture. Cook, stirring often, with a wooden spoon or rubber spatula, until almost absorbed, about 10 minutes. Continue adding remaining warm stock, about 1 C at a time, stirring constantly until most of the liquid has absorbed between additions, about 25 minutes total. Rice should be tender and saucy. Remove and discard thyme. Step 3: Remove from heat, and stir in Parmigiano-Reggiano, lemon zest, lemon juice, and remaining 1 Tbls butter. Set aside. Step 4: Heat remaining 2 Tbls oil in a large cast-iron or stainless steel skillet over high. Sprinkle scallops with remaining 1 tsp salt, and place in hot oil, leaving space between each one. Using a spatula, press each scallop lightly to ensure good contact with skillet. Cook scallops until well browned, 1 to 2 minutes on each side. Transfer to a plate. Step 5: Stir fresh tarragon and parsley into risotto; spoon into 4 shallow bowls. Top with 3 scallops each, and serve immediately.
