2 Expanding The JCB Collection N 49 CHARDONNAY Jean-Charles crafted the No 49 in TRIBUTE to the year 1849, the year when California s first state constitution was crafted and signed in Monterey, and also a time of great ENTERPRISING due to the gold rush. Today we know that the true gold of California is this GOLDEN elixir Chardonnay! Inspired by the growth and change in California in 1849, Jean-Charles wanted to craft a Chardonnay as momentous as the discovery of the first nuggets of gold. At the same time, California was emerging anew, and with the writing of the first state constitution the state of California was born! The cool climate vineyards in the Santa Lucia Highlands produce grapes with high acidity and brightness that delight the palate. Notes of blanched almonds, preserved meyer lemon and lightly toasted coconut fully envelope the mouth, and hints of minerality lead to a clean finish. See page 5 for a savory summer recipe that will pair beautifully with the newest addition to the JCB Collection! RETAIL $65 WINE SOCIETY $ KNOCKOUT PROPRIETARY RED This 96 point Robert Parker rated limited-production wine is a blend of Petite Sirah from Rutherford and Cabernet Sauvignon from St. Helena. It is a bold and intense wine, with a full body and a rich, mouth-coating palate. With notes of violet, dark berries and baking spices, you will want to dive right into the glass. Dark purple in color, the palate continues to present notes of dark berries, graham cracker crust and hints of black pepper. This unfined and unfiltered wine will age well in your cellar for many years to come! An intense, rich and impactful bottle of wine, Knockout will steal the show. This delectable wine gets its power and strength from a core of Petite Sirah which is spicy and intense in the glass, while the Cabernet Sauvignon adds finesse and grace. The uncommon pairing of intense and rich Petite Sirah with the plushness of Cabernet Sauvignon is a winning combination! Only 50 cases produced. 3 bottle allocation. Garden UPDATE WITH JOE PAPENDICK, GARDEN MANAGER Now that spring is coming to an end, and summertime is quickly approaching, we witness the sun rising a little earlier each day, and the evenings getting longer. As the days grow warmer, the soil dries out from the winter s rains, and the rolling green hills turn golden brown. The California native flowers, shrubs and grasses exit the garden stage after an explosive spring display and prepare for the dormancy. With the help of irrigation and rich compost, the cultivated blooms celebrate the summer, and beautiful sunflowers, cosmos, zinnias, calendula, dahlias and bachelor buttons shine through the landscape. Summer also brings a bounty of various fruits. Beginning in May with cherries, the meandering line of fruit trees slowly unfold with numerous varieties. The peaches of the northern Napa Valley are unique, and from June to September they ripen in the summer sun and naturally tended, the peaches express a delicious sense of place. As the long, hot, dry days push the peaches to ripen, the cool night air helps to slow their development, adding complexity to their aromas and acidity to finish. Other fruits weave in and out of the peach harvest. Apricots, bearing alternate years, have laden this year s trees, where last year we received only a handful at harvest. The seven year pluot (cross of plum and apricot) yielded for the first time last year, is looking to produce plentyfully this season too. What comes next? The apples and pears start in July with the Gravenstein, and slowly march on until the final quince and pomegranate tuck at the end of the season, come November. 3 Vineyard UPDATE by brian maloney, winemaker The 2017 vineyard growing season throughout the North Coast of California (Mendocino, Lake, Napa, Sonoma and Marin counties) has experienced fantastic vigor after a historically, wet winter on record - a winter in which we received almost 200% of average rainfall! Warm weather in April, along with the flush of nutrients from the ample water in the soil, has given us very happy vines indeed. Bloom commenced in the warmer sites of Pinot Noir in late April. Bloom is a critical point in the growth cycle, as it is when the small grapes begin the process of fertilization and growth that will grow into actual grapes. Adverse weather during bloom, such as strong winds or rain, can cause an interruption in the flowering process, and results in a condition that we call shatter. A shattered cluster is when many of the flowers do not complete fertilization and cause a large proportion of the cluster not to develop, thus producing smaller crops which pertain to a small yield at harvest. As you can see, what happens at the start of the growing season can determine how the entire season will play out. As such, currently we are in the middle of one of the critical determining factors of the vintage. In the next 4 weeks we should have a better sense of the overall quantity of fruit as well as what the clusters will look like, but for now, we re all in suspense about what s going on at a microscopic level, waiting to see if those pollen tubes will form and fruit will be set. In the winery, we re finishing up the bottling of the last of the 2015 vintage wines was a dramatic vintage that was marked by extreme shatter during the flowering period. This led to light clusters of tiny, concentrated berries. The resulting wines, while tiny in quantity, have ended up being quite massive in terms of the extraction (juice) we received from those small berries. After the aging process, these dark intense wines are showing incredible flavors and density in the glass, and I believe they will go down as one of the more age-worthy vintages in the last dozen years! So, stay tuned as great 2015 vintage selections will begin heading your way, and anticipation for 2017 will only continue to build as we begin warming up now, that summer is here and the crush of harvest coming this Fall. FOOD & WINE Ingredients: 2 slices thick-cut bacon 2 ears corn, kernels cut from cob 1 lb shrimp, peeled & de-veined 1 bunch asparagus 1/2 small red onion, diced 3 Tbsp butter Directions: SHRIMP AND GRITS WITH BACON, CORN & ASPARAGUS Savor the flavors of summer with a fresh, seasonal dish that you and your friends and family are sure to love! The new golden JCB No 49 Chardonnay will be a beautiful pairing for this southern classic with a wine country twist! 2 cloves garlic, minced 2oz Manchego cheese, shredded 1 1/2 cups stone ground grits, cooked according to package directions 1 cup Chardonnay, divided Salt & pepper to taste 1. Begin by cooking the bacon over medium-low heat, allowing the fat to cook out and the bacon to crisp up slowly. 2. Remove the bacon from the pan, and pour the fat off into a heatproof container. Crumble the bacon and set aside. 3. Add a tablespoon of the bacon fat back to the pan, along with a tablespoon of butter. 4. Increase the heat to medium and add the diced onion. Sauté until translucent. 5. Add the corn and the minced garlic. Sauté until corn starts to brown slightly. 6. Pour 1/2 a cup of Chardonnay into the pan and add a tablespoon of butter, whisking to combine. Season with salt and pepper to taste. 7. Remove from heat and add the asparagus. Cover and set aside the asparagus will cook in the residual steam. 8. Cook the grits according the package instructions. At the end of the cooking time, remove from heat and add a tablespoon of butter and the Manchego cheese. 9. Heat an iron skillet over medium-high heat. Add a tablespoon of the reserved bacon grease. Season the cleaned shrimp with salt and pepper. Cook in batches, approximately 1 1/2 minutes per side. Deglaze the pan with the remaining Chardonnay and add the shrimp back in. 10. To serve, place about a cup of the cooked grits in the bottom of a bowl, then spoon the corn and asparagus mixture over the top, and place the shrimp on top of that. Garnish with crumbled bacon and additional Manchego cheese if desired.
