1 WINE LIST The Delaire Graff Estate history begins in 1688 with the French Huguenots. These French settlers arrived with a sound knowledge of viticulture and the art of winemaking. In 1982 John Platter purchased the farm then known as Avontuur. Looking at the magnificent view John and his wife, Erica, decided to rename the farm Delaire meaning from the sky. Laurence Graff acquired the farm in 2003, vowing to make it an iconic wine and hospitality destination. Delaire s unique location on the crest of the panoramic Helshoogte mountain pass is noted for its highh altitude vineyards, excellent soils and cooling sea breezes

3 DELAIRE GRAFF ESTATE WHITE WINE 2011 delaire sauvignon blanc 190 per glass 45 This classic maritime Sauvignon Blanc, blended from 3 premium wine producing areas in South Africa - Olifantsrivier, Walker Bay and Stellenbosch - shows beautiful cut grass, asparagus and nettle aromas with hints of tropical fruit and crushed blackcurrant leaves. Discover a multi layered complex mouth feel, fresh and crisp vibrancy with lingering flavours of fruit and a mineralic finish. 4 stars Platter 2011 delaire coastal cuvee 220 per glass 50 Our Coastal Cuvée Sauvignon Blanc is fresh and rich in tropical fruit flavours, underpinned by layers of gooseberry, asparagus and a flinty minerality. 5% of the wine has been fermented in New French Oak Barrels for 3 weeks. The grapes are from three premium wine regions: 70% Stellenbosch, 25% Durbanville and 5% Franschhoek. This combination brings the unique flavours from each region in full harmony. 4 stars Platter 2011 delaire chardonnay 235 per glass 55 Bright green gold, it is rich in lemony citrus fruit flavours that are underpinned by layered nuances of honeycomb, peaches and butterscotch. A hint of minerality adds to a long and lingering aftertaste 4 stars Platter 2009 delaire sauvignon blanc was an exceptional and iconic white wine vintage.5 star platter wine 5 stars Platter 2011 delaire chenin blanc 210 per glass 50 Light golden wheat colour. Delicious expressions of citrus fruit with subtle layers of honey and almonds in the background. Balanced and superbly structured, the flavours are complimented by a delicate minerality, which ensures a long lingering finish 4 stars Platter 2010 delaire semillon / sauvignon blanc reserve 530 per glass was an exceptional and iconic white wine vintage. Zesty citrus, lime and almond with layers of pineapple, passion fruit and gooseberries. A crisp, spicy minerality adds to a long and lingering finish 4 stars Platter ROSE WINE 2012 delaire cabernet franc 150 per glass 40 Our rosé displays flavours of ripe strawberries, cassis and candy floss with dark berries and cream on the mid palate. Silky and smooth on the entry, the wine unsheathes a flinty minerality with subtle tannins and huge length and persistence 5 stars Platter RED WINE 2011 delaire shiraz 185 per glass 45 This juicy, ripe and approachable wine with its ruby colour and purple tints has a spicy white pepper undertone as well as lavendar and dark fruit aromas. It is characterised by its versatility, demonstrating a smooth and soft palate and a savoury finish. 3 ½ stars Platter 2009 delaire botmaskop 275 per glass 65 Powerful, yet elegant and polished. Beautiful Bordeaux style blend with classical aromas of dark berry fruit, spice and cassis. The softness of tannins and the balance in structure complete this on the palate. 66% Cabernet Sauvignon, 17% Merlot, 9% Shiraz, 5% Petit Verdot, 3% Cabernet Franc, 2% Malbec. 4 ½ stars Platter 2009 delaire merlot 295 per glass 70 Rich, deep colour with ripe spicy plum flavoursc on the nose and an elegant medium body. Wine spent 15 months in small oak barrels. A long lingering aftertaste, truly a delicious wine! 4 ½ stars Platter 2009 delaire cabernet sauvignon reserve 580 per glass 145 Velvet textured, complex, powerful. Cassis, dark fruit and spicy flavours dominate in a layered and lingering delivery was a wonderfully cool season, favouring elegance in both reds and whites, with ripeness generally achieved at lower alcohol 4 ½ stars Platter 5 stars - Christian Eedes Cab Report PORT 2009 delaire cape vintage 320 per glass 35 Classic style port with very strong varietal character, such as ÔAll SpiceÕ, liquorice and nutty after tones. 6 WHITE WINE White grape varieties are the most planted in South Africa and surprisingly the very first was Chenin Blanc. There are a multitude of white wines that range from bone dry to sweet, from crispy fruity to full spicy and complex. 10 ROSÉ WINE Interestingly, these techniques can be applied to make rosé: Saignée when a winemaker desires to impart more tannin and colour to a red wine, some of the pink juice from the must is removed at an early stage. The pink juice that is removed is fermented separately to produce rosé. Skin contact when red grapes are pressed for juice and left in contact with the skin for a minimum of time, the resulting wine is known as Blanc de Noir. Blending are the result of mixing white and red wine together. 11 RED WINE When it comes to red wine, South Africa s most widely planted grape is The King Cabernet Sauvignon. It is closely followed by Shiraz.
