DRAFT spring/summer menu for early years settings in England Public Health England has asked the Children s Food Trust to develop a new set of three-week menus for early years settings in England, to reflect government s latest dietary advice for young children. These menus will be there to help any early years setting make sure children from six months up to five years old can enjoy healthy, balanced and nutritious meals and snacks. A group of experts on early years, child nutrition and health are helping us design these menus, but we want your views too. This document includes a DRAFT spring/summer seasonal menu for early years settings (two further draft menus are also being produced). You can tell us what you think of the draft menus by completing an online feedback form by 5pm Thursday 8 th September 2016. If you have questions, email EYRecipes@childrensfoodtrust.org.uk Overview of the DRAFT example menus: The Trust has been commissioned by Public Health England to produce three 3-week example menus for early years settings. Three draft menus have been produced (autumn/winter menu, spring/summer menu and ethnically diverse menu). Each menu includes three weeks of example breakfasts, lunches, teas and snacks for children aged one to five years. Each menu has also been adapted to show how the menu can be used for old. Each menu has been nutritionally analysed to ensure the energy and nutrient content meets the needs of young children. The draft menu included in this document lists a typical portion size for each menu item. These are shown for information (as full recipes are not included in this document), but will be removed from the final menu. Each recipe also lists allergen information to support settings to cater for children with food allergies. The final menu will include a recipe for each menu item (one example is included within this document), plus supporting information to enable settings to use the menu and recipes. Once feedback on the draft menus has been reviewed, and the menus finalised, the menu documents will be available to download from the Public Health England website. 1

Grate the zest from the lime and squeeze out the juice. 2. Finely chop the coriander and slice the chicken breasts into small pieces about 1cm thick. 3. Heat the oil in a large pan. Add the paste and cook for 1-2 minutes then add the chicken. Stir until the chicken is cooked through. 4. Add the mangetout and stir for 2 minutes. 5. Add the lime zest and coconut milk. Simmer for 10-15 minutes until the sauce starts to thicken. 6. Stir the coriander and lime juice into the sauce before serving.
