DINNER MENU by Michael White Michael White was born in south west, country Victoria, Australia. This is where his passion and drive for fresh food all began. Growing up in the country he would always be out and about with his family and friends, either hunting or fishing. After which he would return home and jump straight into the kitchen helping to prepare the fresh catch. For myself, growing up in the country was a blessing, where fresh produce was always at my doorstep. This is where I learnt to respect and love food. At the age of 16, he had already established that he wanted to become a chef. He took on an apprenticeship under local chef John Hedley where he absorbed and took on as much information about the culinary world as he could. This passion and commitment led him to accept the award for Apprentice of the Year in 2004. After qualifying he left his hometown and moved to Melbourne to pursue his career in the chef industry. He quickly secured a job at one of the best restaurants in town with Guy Grossi. There he learnt a whole new love for Italian cuisine. This has carried over into Michael s style of cooking and is incorporated into the new menu at The Kitchen @ Westin.
