6 Val s Story Valerie James grew up in the restaurant industry, helping her parents in their pizzeria restaurants. Honing her skills working in her family s restaurants, Valerie developed a natural instinct and love of the restaurant business. Val s first restaurant in Holden was the Pizza Palace, a take-out pizzeria opened in 1990 in the Big Y Plaza. Six years later, with hundreds of loyal fans, Val seized the opportunity to expand to a full-dining restaurant. Leaving the pizzeria, she opened Val s, offering a more creative and expansive menu. Val s has established itself as the family restaurant of choice for more than 25 years in Central Massachusetts. The menu reflects bold, bright flavors just like the boisterous personality of owner and chef Valerie James, known by customers and friends alike as Val. I wanted to offer a menu that appealed to different tastes and backgrounds with a lot of selection, as I see some of the same faces three or four times a week. It s about keeping it interesting and fun, says Val. That diverse offering ranges from the exclusive Black Diamond Marinated Sirloin to the succulent Salmon Ginger, to longtime family recipes, such as the legendary meatloaf dinner and famous spinach pie reflecting Val s Greek heritage. Over the years, the menu has evolved offering more contemporary cuisine steeped in local, rustic flavors. Especially with Val s son, Christos James becoming the Chef de Cuisine, he has influenced the menu with his experience in prestigious kitchens specializing in Northern Italian cuisine.
