Stage Sensations Santa Fe s performing arts often reflect the city s ethnic diversity, and this season s events are no exception. The traditional Spanish folk play Las Posadas December 15, reenacts Mary and Joseph s search for a room on Christmas Eve. The play starts at the Palace of the Governors and winds around the Plaza with spectators following along (afterwards, don t miss cookies and cider in the Palace courtyard). Christmas at the Palace Held at the 400-year-old Palace of the Governors on December 13, 2013 Christmas at the Palace is a beloved annual event. 12 RECIPES WITH ROOTS Sponsored by Santa Fe School of Cooking 3 TBS vegetable oil 1 ½ lbs. beef sirloin or pork butt, cut in 1-inch cubes 1 ½ cups diced onion 1 TBS minced garlic 6 cups chicken or beef broth 1 lb. red or white potatoes, cut in ½ to ¾-inch cubes 2 3 tsp. salt, to taste 3 cups roasted, peeled, chopped green chile or to taste 3 TBS diced red bell pepper 2 TBS chopped cilantro, to taste Heat the oil in a 6-qt pot over high heat and brown the meat in batches. Set aside. In the same oil, saute the onions until golden. GREEN CHILE STEW Add the garlic and saute 1 minute. Return the meat to the pan along with any juices that may have accumulated. Add the broth, potatoes, salt and bring to a boil. Reduce the heat and simmer for one hour, until the potatoes are tender. Add the green chile and the red bell pepper, and cook minutes more.
