The taste of Taiwanese MSG-free wontons in a bowl of fine sparerib soup, sprinkled with shredded scallions and diced celerys, is truly unforgettable. Fonglin Township in Hualien is incredibly well known for its peeled green peppers, as low precipitation and generous sunshine give the green peppers vibrant shades of lush green and a rich taste. Only the ripest and straightest green peppers are used to make this delicacy; the peppers are first fried and their outer skins peeled off to improve the flavor, seeds are removed by hand, and the peppers are marinated in vegetable oyster sauce and finally sterilized. The peeled green peppers mildly spicy flavor and crunchy texture are the reasons why this delight is so popular among chili-enthusiasts. 扁食 T aiwanese Wontons 22 Where to Buy Yexiang Wonton 液香扁食 No. 42, Xinyi St., Hualien City 花蓮市信義街 42 號 (03) am-1.30pm4pm-9.30pm Title: & Night-market Snacks Publisher: Janice Seh-jen Lai Editor: Hong Shuo Cultural Enterprises, Co., Ltd. An ideal way to take a break is to travel, for traveling injects vitality and energy into the stress-filled daily routine. When you visit a foreign place, it s only natural that you want to feast on authentic local cuisine, have fun shopping, and enjoy the different culture and its arts. Taiwan, the beautiful island called Formosa, is a land that exceeds all of your expectations. Mild and balmy weather all year-around, spectacular natural surroundings, trendy cityscapes, wholesome yet unspoiled countryside, majestic landscapes, and rich cultural assets... all are exciting tourist attractions not to be missed. Another excellent reason--besides fashion, youthfulness, and vitality--why visitors keep coming back to Taiwan is the delicious snacks tucked away in night markets throughout the island, offering the best places to start learning about the tasty yet very affordable foods the locals enjoy. For this handbook, 21 of Taiwan s hottest night markets have been chosen to introduce the most popular, most representative of the traditional local food items in each, with preparation and taste slightly different in different regions, such as oyster omelet, tempura, potside sticker soup, sautéed calamari, thick port broth, Taiwanese meatballs, rice dumplings, salty rice cakes, papaya milk, and shaved ice, all very much worth trying. We recommend that you include these night markets in your sightseeing itinerary, for they are guaranteed to impress and will add a great many good memories of your visit to Taiwan. On behalf of the Tourism Bureau of the Ministry of Transportation and Communications of the Republic of China, I sincerely wish you a pleasant and safe journey in Taiwan! Director General Tourism Bureau, Taiwan

11 North Central South East The nostalgic flavor of an old Quanzhou snack The proprietor has gotten tired of being asked what rice beans are, and has placed a container of them at his booth so that customers can see for themselves. The rice bean looks like a small soybean and is high in nutrition. Rice-bean noodle soup was originally a snack from Quanzhou in Fujian Province; here, such seafood ingredients as small shrimp, cuttlefish, and oysters are used to give it additional flavor. Sometimes, the cook will switch to pig intestines to add a bit of freshness to this traditional delicacy. If you want to try making it at home, you can buy the noodles (in old-fashioned packaging) which are sold at the booth. There is no guarantee, though, that your soup will taste as good as what is cooked up here! VCrab 老兵奶油螃蟹 An aromatic and flavorful signature snack Butter with crab? This turns the traditional way of cooking crab upsidedown, but it has created a famous snack at the Miaokou market; lots of vendors sell it, and lots of people consider it the most representative delicacy here. Butter, onions, garlic, and other ingredients are added to the crab, which is wrapped in tinfoil and grilled over charcoal so that the flavors of the rich butter and the sweet crab mix thoroughly. 35 North Central South East Other Flavors at the Chenghuang Night Market Traditional flavors of Fuzhou Chengs Fish Balls 鄭家魚丸燕圓 The current proprietor says that his greatgrandfather first set up shop at Keelung Harbor, selling fish balls from baskets slung from a bamboo shoulder pole. After his grandfather was born, the family moved to Hsinchu, settled in the vicinity of the east gate, and began doing business in the City God Temple market. To this day, Cheng s fish balls retain their traditional style. They have the authentic flavor of Fuzhou, and are extremely chewy because, the cook says, he doesn t use too much starch but employs fishball sauce instead, with no chemical additives. Another kind of fish balls, called yan yuan, are made of deep-sea fish paste along with water chestnuts and fermented rice sauce. These plump red yan yuan are best enjoyed together with the ordinary fish balls.
