4 Craft Distilling Booms Just a few years ago the Shiners In USA where famous for their exploits and infamous for the rough quality of the booze they made. Today the industry is enjoying the same huge growth that craft breweries started. Much was needed to be done to get AFT on board and as every state requires separate registration, the industry and the many distilleries are restricted to their own State, as crossing state lines with booze still remains bootlegging. As a distiller, proper equipment selection shouldn t be the bane of your existence. My bane? Well, her name is Marie, Bain Marie to be exact. This is an often overlooked yet incredibly useful type of still that I am honestly surprised is not used more often, especially with smaller distillers such as myself. Let s start at the beginning, as all aspiring and current distillers do, with our products. My background for making the (crazy) decision to open a distillery rests largely on my love and passion for cooking. We are all trying to make an amazing finished product and while ingredients matter hugely, so do the tools we use to transform them. You say you like steak but don t own a cast iron skillet? Shame on you! Only joking, I ll let it slide if you are using the steak for tartare. Make pizza without a pizza stone, a béarnaise sauce without a double boiler? You see where I m going with this, specifically that last example. A Bain Marie still is just a huge double boiler. Double boilers are used for delicate sauces like béarnaise and hollandaise because there are elements in those mixtures that you really don t want to burn as it can drastically change the taste and consistency, something you can t undo once it s done. And back at home, in Timaru last week I met two old friends,malcolm Willmott co-founder of Spirits Unlimited and his 200 L low wines still produces that 60 litres of 25 to 30% spirit ready to be purified in a 60 L Euro Reflux. For the specialist, try H218 Gin mix. This contains fresh European juniper berries, coriander seed, citrus peel and cardamom. Soak the packet contents (50g) In 40% spirit for a week, then the spirit will become yellow/gold in colour. Crush the seeds and re-soak for another week. Add this concentrate to 5L of spirit (40 to 60%) and 5L of water and re-distil. Do not use a reflux still for this as the flavour will be reduced. Collect 5L of distillate. If the finished gin is too strong in flavour for you, cut it back with clean 40% spirit. Remember the that lower strength spirit (under 40%) does not hold the aromatics very well and a 40% gin will be much nicer than a 35% version. If you love beer and haven t tried these kits, you are really missing out. Recent s Subject : DOUBLE DISTILLING Hi, I am about to put on a wash using Black Beauty yeast. I am new to all this. I read in your March newsletter that Black Beauty and double distilling makes a fine spirit. After the first distilling what do I dilute the alcohol down to for second time round. Also you mentioned the use of turbo pure? Ian Hi lan After the first distillation cut the spirit with an equal quantity of water and re-distill. Be aware that this will come off faster and you may need extra cooling water to ensure that the spirit stays cool on exit. Also note that with the first distillation you can run the still until the spirit coming out is say 30%. Just don t run it until it stinks Cheers Peter Hi Peter Question on a different note. Spirits unlimited Turbo Ultra. Two different instructions have arisen. Your news letter says put it in at beginning of fermentation their instructions say after clearing 24hrs before distilling. I have just put a wash on but was reluctant to put Ultra in now I case it rooted the yeast. Appreciate your advice. Thanks. Ian Hi lan, Either method works as its job is to combine with sulphur compounds. Some are present in the ingredients and some are produced by the yeast. We say to add it at the end to clean up any free sulphur compounds there but some of our customers including commercial users put it in at the beginning so its over to you.
