Every month we land new products or more often produce new ingredients, so this issue includes many of the new products of Prices are sharper too, but remember retailers can have extra costs so the printed prices here are around this. The company has always supported retailers with stores as brewing is a special thing that needs comments and advice, best done personally rather than from a computer screen so online resellers are not our preferred method. Sure it s handy to buy online and many of the stores offer this service but back it with plenty of stock, good variety and experienced advice. The best of both worlds. 2 Stillmaster Competition 2016 It s that time again so set aside your finest spirit, flavoured and aged with care and send us your best. Please name, address, class on every bottle. A 50ml sample is adequate. ONLY ONE ENTRY / CLASS The classes this year are: Stillmaster 2016 Malt Whisky, Bourbon Whiskey, Dark Rum, Vodka, Gin, Fruit Vodka, Spiced Rum, Liqueur (non cream). All Best in Class winners will receive a product pack ($200). The Stillmaster 2016 will be presented with a engraved silver cup and voucher ($500). All awards and judging sheets will be returned to entrants. Results will be published in the December issue of Tall Spirits. Entries close 30th September. Our judges are drawn from professional distillers and brewers, plus a general tasting panel who assists with rejudging all Best in Class to select the overall Stillmaster. For safeties sake, any entry with an off aroma will not be forwarded to the judges. The entries are judged against a sample of known brand leader commercial product and rated as a silver grade. The flavour wheel below is used by the judges to descrbe any faults found in the competition samples. TS&bn 2

6 What s New for Distillers New Yeasts Turbo special varietal yeasts developed specifically for Rum and Whisky production. H 256 Turbo Rum Yeast Contains Turbo Yeast plus amylase enzymes for complete conversion of a molasses / sugar base. For best results process through a pot still (or a reflux with an empty column). Finish your spirit on Plantation Rum Chips before balancing with a collection H 257 Turbo Whisky Yeast Contains Turbo yeast plus amylase enzymes for complete conversion of a malt / sugar base. We recommend using a pot still to maximise flavours. Age on Southerner Whisky Chips before adding one of the special collection flavours. Spirits Unlimited customers have been asking for a production kit, so we ve made two. Both feature the new generation Turbo Alcotec 200. This has been tested in our lab under New Zealand conditions and it runs down to 995 on 6kg sugar in under four days and to 990 on 7kg sugar in under six days. It clears rapidly and produces fine spirit. 7 What s New for Brewers In the 1990 s SUPERBREW was the original distillers yeast and retained a loyal following. We have updated the blend with a modern yeast which gives the same reliable fermentation for 6kg sugar. It accepts temperature variations down to 12*C (it just slows down). You lift a window and place a drop of fluid inside, wait 30 seconds to allow the refractometer to become thermally stable (also letting the sample spread across the plate uniformly) then read the result in Brix (% sugar). Brix can be approximately converted to specific gravity (SG) by a simple equation: SG = 1 +(0.004 x Brix) Most people just remember the multiply by four rule. Take the Brix reading, multiply by 4 and this will give you specific gravity in gravity points.
