We have for some time adopted a returnable drum policy, either by arranging for them to be picked up when we next deliver on our own transport, or by calling our sales office to request collection. We would ask that you help to keep costs as low as possible by stacking the empty drums on a pallet in a 4 x 4 layout and no more than 2 drums high, a total of 32. We will issue to all customers, upon request, a roll of shrink wrap material which should be wound around the drums to prevent them falling from the pallet during transit. 7 Charles Faram & Co Charles Faram and Company has been established as merchants of hops and hop products for over 100 years. The company, which was originally based in Worcester, now resides in the small hamlet of Newland, situated at the foot of the picturesque Malvern Hills. Charles Faram supplies the largest range of hops in the UK. With over 100 different varieties of hops to choose from, it provides an artist s palette of flavours to create every type and style of beer. We supply the brewer with the hops to design his or her own unique beer and we are able to provide the full range of hop products, from whole hops through to processed hop products, such as pellets, extracts and oils. 8 Fermentis Yeast Fawcetts Malt Fermentis supply a range of true brewer s yeast in a dry, ready to pitch form. The yeast are produced in dedicated state of the art propagation facilities and then carefully dried to preserve their characteristics. True lager yeasts are available from recognised European sources enabling batch production of high quality lagers. 14 Carrageenan Carrageenan is derived from certain types of seaweed and is a sulphated polysaccharide which complexes with undesirable protein fractions. 15 Adjuncts Antifoam Murphy and Son offer a wide range of sugars and malt extracts which to help extend your brew length. These are ideal for priming and replacing fermentable sugar from malt. Antifoam FD20PK is a silicone based food grade emulsion which has been developed for brewing and food processing and other applications where a quick knockdown of foam is required. It is classed as a processing aid because of its novel feature of being completely removed from the beer by normal processing. 17 Zetolite This product is a blend of naturally occurring volcanic mineral, copper salts and zinc salts, formulated to reduce sulphidic off flavours in fermented beverages. We have developed a range of Zetolite products which enhance flavour characteristic. Zetolite 63 - is matrixed with mineral copper. Zetolite 65 - is matrixed with mineral zinc. 19 Isinglass Finings Isinglass is a naturally occurring collagen. This collagen carries a positive charge, the negative charge in yeast means that by adding Isinglass you can fine out the yeast. By careful application of isinglass, considerable benefits can be realised both in terms of beer quality: improved colloidal stability, head retention, post filtration beer haze and in processing advantages: shorter conditioning times, longer and faster filter runs. It is for these reasons that brewers all over the world have retained and developed the use of isinglass processing aids. 20 Preservatives Foam Head Stabilisers The maximum permitted levels of sulphur dioxide in the UK for cask conditioned and other beers are 50ppm and 20ppm respectively, but such levels are not recommended from a flavour point of view. Also, levels above 10ppm in small pack must be labelled under allergen labelling regulations. Foam head stabilisers concentrate at the surface of the bubble with the hydrophobic end interacting with gas molecules inside and outside the bubble and the hydrophilic part in contact with water molecules in the liquid, forming the bubble wall. There is less attraction between the hydrophobic groups than there is between the water molecules in which the foam head stabilisers are dissolved, so the surface tension at the bubble surface is reduced, stabilising the foam structure. One of the most important aspects of good beer management is to keep all the equipment that comes into contact with the beer in prime condition by regular cleaning, ideally at least once every seven days. All aspects of beer quality can be adversely affected by contaminants such as, bacterial growth or different flavour products that have previously been pulled through a line. For example, some draught fruit flavour beers have led to specific tainting problems when more conventionally flavoured beers were subsequently dispensed. The beer lines are often a source of many problems. Yeast of other deposits in the line such as beer stone can be a focus for bacterial contamination and may also cause a breakout of dissolved gas which, in turn, leads to foaming problems. Rough interior line surfaces caused by overcleaning will have a similar effect. Draught beer, in particular cask beer, is an ideal medium for microbiological spoilage which can lead to the development of a variety of off-flavours and hazes. Bacterial growth can also have a detrimental effect on the formation of foam. For cleaning purposes, only approved detergents should be used.
