1 Department of Food Science and Technology University of California, Davis AGGIE BREW The Newsletter of the campus brewing program at UC Davis Issue 42 June 2017 From the Brewer A number of people have been very generous to us recently and have kept me busy installing all the wonderful new toys with more on the way. One area in which our program suffered was an absence of temperature-controlled fermentations on a smaller scale. We had six 1.5-bbl conical fermenters but this wasn t enough to support the brewing courses. With the generous financial support of Carlos Alvarez (Gambrinus) we were able to purchase 16 custom-built ½-bbl glycol jacketed fermenters. Unwrapped blank slate! Delivery day - always exciting! At least we didn t have to stand up a taller tank. First skid inside starting to get a feel for the overall size. Each skid is 14 feet long. We originally planned on just simple on-off temperature controllers for simplicity and cost reasons but then Wine Technology Marlborough stepped in and contributed their fantastic Vinwizard system ( to the project. The system allows the students and the brewers to monitor AND control the temperatures from anywhere there is an Internet connection.
2 their outstanding craftsmanship, and Bob Richards and the Vinwizard team for their feature-rich control system. The desktop app has a nice interactive 3d model of the tanks. You can hover over a tank and get additional details or change set points. You can also click on an individual tank for more details. There were also a number of people who helped install everything including students, notably Laura Metrulas, Isabella Perez, Jesse Cohen, Nate Maddox and Obin Sturm. One person who made sure I didn t give up, had the right attitude, and was instrumental to getting the skids online was Brennan Flemming. Brennan took time from setting up Dunloe Brewing ( to come work long hours to get these done. While this was the first project funded by the generous donation of Mr. Alvarez, it s far from being the last. We have also taken delivery of some Franke Beverage Sanke kegs and a Premier Stainless 2-station keg washer, with much more on the way. I will keep you posted in the newsletter. And here is what the whole set up looks like: Our brewery is available for trial work. We are delighted that it is already being used to a significant extent. 4 Brew Club The Food Science Brewing Club (FSBC) has continued to be busy this spring with brewing, tours, and guests from industry. Earlier in the quarter we hosted an educational table for Picnic Day. We then worked with Sudwerk Brewery s Bryan Lairmore to develop and brew an FSBC beer on their pilot system. The finished beer was sold at the Sudwerk Dockstore as a fundraiser and sold out in one day. Later in the quarter, we toured two breweries, Bear Republic Brewing in Cloverdale and Anchor Brewing in San Francisco. 4
5 Beer and health Check out the folder containing regular updates on this essential topic: alth.html More recently, alum Bryan Donaldson from Lagunitas stopped by and joined us for a roundtable tasting and discussion about his company and careers in brewing. Out and about Brennan Flemming, UC Davis alum and founder of Davis's newest brewery, Dunloe, hosted a tasting and discussed the process of starting a new company. A few years ago, as his illustrious baseball career was winding down, Kevin Youkilis paid a visit to UC Davis to pick our brains. It was therefore great to pay him a visit at his Loma Brewing Company in Los Gatos and enjoy his Greek God of Hops. It was also good to make presentations about the program and about beer in general to UC Davis alumni in Colorado. On successive evenings there were big turnouts at New Belgium in Fort Collins and (see photo) at Wynkoop in Denver. Laura Metrulas 5
6 fst003v Charlie Bamforth was also delighted to speak to a meeting of the Diablo Order of Zymiracle Enthusiasts. Strange backdrop: The on-line version of Introduction to Beer and Brewing has run in the Spring Quarter. The photo shows Charlie delivering the opening session, with Laura Metrulas on hand. 7 So where did the old brewery go? Extension Classes In issue 40 we told you that the old brewery would have a new home. We are absolutely delighted that it is in the good hands of Sierra Nevada, currently in Chico but my understanding is that it will be on display in the Torpedo Room in Berkeley in due course. Thanks especially to Terence Sullivan for making this happen.
