Place all fruit into a bowl, cover in water and soak overnight (Whiskey may be added to the fruit at this stage, if desired) 2. Mix together water, oil & black treacle into a bowl fitted with a beater. Mix on slow speed for 1 minute. 3. Add in the Clover Hill Farmhouse Fruit Cake Mix. 4. Mix on slow speed for 2 minutes. Scrape down and mix on medium speed for 3 minutes. 5. Add in fruit to the mix and mix on slow speed until evenly distributed. Do not mix for longer than 1 minute. 6. For a Round Christmas Cake, place greaseproof paper in a brack tin and deposit 700g batter into it. 7. For a Large Christmas Cake, place greaseproof paper into a soda slab tin and deposit 5350g batter into it. This will be cut into 4 equal pieces once cooled. 8. Round Christmas Cake 165 C for minutes. 9. Large Christmas Cake bake at 165 C for minutes. 10. Before cutting the Large Christmas Cake, allow to cool. Then cut into 4 equal 1325g pieces. Weigh out the required quantity of Clover Hill Extra Moist Madeira Mix into a bowl fitted with a beater. 2. Add 1.2Kg water and oil gradually over 1 minute on slow speed. Scrape down. 3. Mix for 4 minutes on medium speed. 4. Add 450g water gradually over 1 minute mixing on slow speed. Scrape down. 5. Mix for a further 2 minutes on slow speed. 6. Split the mix into two (Mix A = 3.5Kg) & (Mix B = 1.45Kg) 7. Add 30g Chocolate Flavour Compound to Mix A to make a chocolate batter. 8. Add 30g Orange Flavour Paste to Mix B to make an orange batter. 9. Scale 300g of the chocolate batter into a tin and then add 100g of the orange batter on top. 10. Bake at 185 C for 40-45minutes. Weigh out the required quantity of Clover Hill Crème Cake Mix into a bowl fitted with a beater. 2. Add egg and mix for 2 minutes on slow speed. Scrape down & mix for 3 minutes on medium speed. 3. Gradually add oil & water on slow speed for 1 minute. Scrape down & continue mixig for 3 minutes on slow speed. 4. Mix in the Red Velvet colour for 1 minute. 5. Scale 60g into cupcake cases. 6. Mix together the water, yeast & oil in a bowl fitted with a beater for 1 minute. 2. Add in the Berliner 100 Plus mix and mix on slow for 2 minutes. Scrape down. 3. Mix on fast speed for 8 minutes. 4. Add the cranberries, sultanas and mixed peel to the mix and mix on slow speed until evenly distributed. Do not mix for longer than 30 seconds 5. When dough is mixed, allow to rest on a floured surface for 5 minutes. 6. Divide the dough into 500g pieces. 7. Flatten dough and place a 100g roll of almond paste in the centre, roll up and stamp around the edges to seal. 8. Place on trays and proof for 50 minutes. 9. Bake at 200 C for minutes. 10. Weigh out the required quantity of Chocolate Genoese Mix into a mixing bowl fitted with a beater. 2. Gradually add the Stage 1 water & Oil to the Genoese Chocolate Mix over 1 minute on slow speed. Scrape down. Mix for 4 minutes on medium speed. 3. Add stage 2 water gradually over 1 minute mixing on slow speed. Scrape down, then mix for 2 minutes on slow speed. 4. Scale each sponge at 400g. 5. Bake at 180ºC for minutes. Remove from the tins and cool. 6. Place 1 Genoese sponge onto the cake board. Spread 200g Nooki Milk Truffle/Ganache Mix over the sponge (no heating required). 7. Place a second sponge on top of the ganache. To prepare the Dark Chocolate Ganache, heat/temper the Nooki Amargo (Dark) Ganache over a low/medium heat (i.e C & stir). Enrobe the whole cake with 300g. Mix all ingredients in a spiral mixer for 4-6 minutes at slow speed and then 7 10 minutes at high speed. Rest for 10 minutes. 2. Scale the doughnuts to 60g and allow to ferment for 1 hour outside of the room. 3. Allow to dry for minutes. 4. Fry in oil at 175 C C for approx 7 minutes. 5. Inject each doughnut with 40g of mincemeat. 6. Add 10g of Decorar Blanco (White) Chocolate Coating to the top of each doughnut and dust with cocoa powder for decoration.
