2 A Word From Our Sponsor 2015 Dear Piemaker, It is time to call for entries for the 19th Bakels New Zealand Supreme Pie Awards and we want every New Zealand pie maker to get involved. 25 June Entries close 5pm Prohibition in the United States was a nationwide Constitutional ban on the sale, production, importation, and transportation of pies that remained in place from 1920 to Prohibition was mandated under the Eighteenth Amendment to the U.S. Constitution, setting down the rules for enforcing the ban and defining the types of pies that were prohibited. For example, religious uses of pies were allowed. Private ownership and consumption of pies was not illegal under federal law; however, in many areas local laws were more strict, with some states banning possession outright. Nationwide Prohibition ended December 5, IMPORTANT DATES Over the last 19 years these awards have grown to become the premier event for New Zealand bakers and with good reason. Not only do we receive record numbers of entries from all over the country, year on year, but the major media support and public interest ensures that winners receive increased sales opportunities and industry recognition plus, of course, the prizes. We are now preparing for this year s Bakels New Zealand Supreme Pie Awards with a fun twist on the Prohibition during the 1920s and hope that you will be inspired to enter your best pies in this year s competition. It is important to read this booklet and review the rules and tips. Remembering that it is important you have the correct weight for your pies to avoid being disqualified. With some exciting news ahead for the year, as we introduce a brand new category for all to enter. A real kiwi favourite the classic Potato Top Pie. 4 Top Prizes All winners receive Framed awards certificates Industry recognition Extensive media coverage 2015 In addition, winners receive A cheque for $1,000 An invitation for two to the Awards Dinner in Auckland Plus, the Supreme Award winner receives A cheque for an additional $7,500 The coveted Supreme Piemaker Trophy Baking Rules Weight Limitations Maximum Weight (baked) Gourmet Meat/Commercial Wholesale Potato Top, Gourmet Fruit and Café Boutique All other categories Pastry top and pie base rules 280g 300g 250g All pies except Potato Top, Gourmet Fruit and Café Boutique must be topped with flaky/puff pastry. All pie bases except Gourmet Fruit and Café Boutique are to be prepared using a commercial pie base. Gourmet Fruit pies must have a sweet pastry dough for both the top and base of the pie, and the top must not be sugar dusted. Lattice tops are permitted for Gourmet Fruit and Café Boutique categories only. Short paste or boiled pastry permitted in Gourmet Meat and Café Boutique categories only. Dimensions Pies can be square (maximum 106mm wide), round (113mm diameter), or oval (maximum 130mm long). Larger tin size accepted (maximum 125mm diameter) in Gourmet Meat, Gourmet Fruit, Bacon and Egg, Café Boutique and Commercial Wholesale categories only providing their maximum baked weights are not exceeded. Please weigh your pies. Overweight pies will be disqualified. Place of Manufacture, On Sale Rules Pies entered must be manufactured completely (all components, including pastry) at the site of registration of, and place of business of the entrant. The Café Boutique category pastry can be manufactured off site. Premade 'bought in' Commercial pastry can be used for the Café Boutique category only. All pies entered must be on general sale at the time of entering and be of the same quality. Win just by entering Go in the draw to win $500 worth of NZ Bakels pastry margarine To be eligible for the prize draw we must receive your entry form by 25th June The Entry Prize winner will be announced at the Bakels New Zealand Supreme Pie Awards dinner on 21st July and the winner will be notified shortly afterwards by phone or mail. The pastry margarine value is based on NZ Bakels standard price list and excludes GST. Conditions of Entry 01. Entry is open only to chefs, cafés, hotels, commercial bakers and pie manufacturers in New Zealand. 02. Pies entered remain the property of NZ Bakels Ltd. 03. Potato Top category (includes minced beef and/or mutton) and Gravy (vegetables permitted and no topping on potato permitted) Seasoning optional of choice. 04. Gourmet Fruit entries must contain predominantly fruit. 05. Commercial Wholesale entrants must manufacture on average 60,000 or more single serve pies per week. Entries must be mechanically constructed. 06. Acceptance of an Award implies the winner s agreement to take part in any resulting publicity or promotion. 07. Café Boutique Pie entries can contain any filling, savoury or sweet. Any combinations of pastry are accepted including short crust, boiled, gluten free and flaky etc. Café Boutique entrants are not eligible to enter any other category and do not qualify for the Supreme Award. In this category pastry can be bought in. 08. The Bakels New Zealand Supreme Pie Awards name and logo remain the property of NZ Bakels Ltd and may not be reproduced without permission. 09. Entries will only be accepted in the official entry box, and no early or late entries will be accepted. 10. Entrants are responsible for ensuring their pies reach NZ Bakels in good condition. 11. Each entry box must include two identical pies from the same category. 12. NZ Bakels reserves the right to disqualify any entry that is not within the required parameters of general entry conditions. 13. In the event of a tie in any category, the tied pies will be re-judged alongside each other to decide a winner. 14. NZ Bakels reserves the right to withdraw any category due to insufficient entries. 15. The judges decisions are final and no correspondence will be entered into. 16. Ingredient/Filling Declaration: Entry boxes which ask for filling or ingredients must be completed. 17. Mushroom is not a vegetable. 6 7

5 Judging Criteria The judges will award points for your pies based on four criteria: Pie Top: Points for eating properties; controlled pastry lift; flavour profile; shape retention. Pie Base: Points for shape retention; eating properties; flavour profile; machining properties; pie base thickness. The Filling: Points for filling/gravy proportion extender; texture; colour profile; flavour profile. Baking Properties: Points for overall bake colour profile; evenness of bake; finishing pastry top glaze; overall visual appeal. Who are the judges? Pies in each category will be judged by a panel of independent industry experts. The 11 -winning pies will be re-judged from scratch for the Supreme Pie Award by a separate judging panel. The judging process will be monitored by an independent competition auditor. Judges are not eligible to enter. How To Enter Step 1 Step 2 Step 3 CHOOSE YOUR CATEGORIES You may enter as many of the categories as you want, but only once in each category (you ll need to produce two identical pies for each category you enter). Multiple entries (different retail outlets entering pies from the same bakery or pie manufacturer) are not permitted. Café Boutique entrants are not eligible to enter any other category. COMPLETE AND RETURN AN ENTRY FORM BY 25th JUNE Fill out the enclosed entry form, sign the form then fax it back to us, or return it in the post-paid reply envelope supplied. We must receive your completed entry form by 5pm, 25th June BAKE YOUR WINNING PIES Bake two identical pies for each category you have entered, then send them to us in the official pie box for that category. Your pie boxes will be mailed to you between 28th June - 5th July. Your entry pies must arrive at one of the locations listed on page 10 on the 14th and 15th July What happens if one of my pies get placed? If one of your pies wins a, making you eligible for the Supreme Pie Award, you will be contacted by phone soon after completion of the judging. You will also receive an invitation for two people to attend the Awards Dinner in Auckland on 21st July 2015, where you will be presented with your (or Awards). The winner of the Bakels New Zealand Supreme Pie Award for the best pie of the competition will be announced after the presentation of the s. Silver, Bronze and Award winners will have their framed award certificates delivered to them in the week following the Awards Dinner. 8 9

6 Tips for Baking a Winning Pie Baking presentation Pies have to have a nice golden colour all over. Has the pie been baked to perfection? Does the pie have an attractive shine where permitted? Pie bottom Has the pie kept its tin shape when cooled? Has the pastry been rested and sheeted gently? Is the pastry thickness just right, not too thick or too thin? Ensure pie tins are clean. Pie top Has the pastry risen evenly all over? Has the pie top kept its pre-baked shape? Is the pastry thickness just right, not too thick or too thin? Pie filling (visual) Is the filling balanced evenly, meat to gravy, fruit filling to extender? Is the filling a good consistency? Does the filling look appealing? Note: Mushrooms are not a vegetable. Pie flavour profile Is the pie easy to eat, not too fatty or too brittle? Is the filling seasoned (or sweetened) perfectly? Are the pastry and filling flavours well balanced? Weight/size The total weight of each pie must not exceed 250g (baked), except Gourmet Meat and Commercial Wholesale which must not exceed 280g (baked), Potato Top, Gourmet Fruit and Café Boutique which must not exceed 300g (baked). Packing your pies Once you have picked the pies you want to enter and they are cold, pack your pies securely in the pie boxes supplied, then courier or deliver to NZ Bakels for judging. Pies will not be accepted after the specified closing times. Please Remember Double Check your pie weights before sending overweight pies will be disqualified and have no chance of winning. Packing your pies Once you have baked your pies, and they are cold, pack your pies securely, and then courier or deliver them to: North Island Entries NZ Bakels Limited Church St East, Penrose, Auckland. North Island entries must arrive between 8am and 5pm, Tuesday 14th July, or Wednesday 15th July. Central North Island Entries Toops 11 McCormack Place, Ngauranga, Wellington. Central North Island entries must arrive between 8am and 5pm, Tuesday 14th July, or 8am and 2pm, Wednesday 15th July. Please do not send your pies by post.
