2 Research the vast ingredients Peru has to offer - it will help inspire your dishes, and also develop your knowledge of the cuisine. Our 2017 winner, Farah Smith, reflects on her experience in the competition, her trip to Peru and has some valuable advice for this year s entrants... What made you decide to take part in the competition? The thought of expanding my knowledge of Peruvian cuisine and culture, initially drew me to the competition. I also found the idea of visiting Peru and the challenge of the competition, really exciting. Where did you get your inspiration from when creating your competition menu? After doing an extensive amount of research into the many foods Peru produces, exports and typically uses, I came across ingredients I had never heard of, let alone cooked with. Peruvian food really appeals to me, which led to the inspiration behind my menu. I always work towards achieving great tasting food and I wanted that to be apparent in my competition dishes. How did being announced winner make you feel? The elation I felt when I was announced the winner is incomparable to any other. I was in a state of sheer relief as an extensive amount of work was put into the dishes - I felt reassured to know that it had all paid off. How would you describe your experience working with Virgilio Martinez at Central? My experience working at Central was unforgettable - I learnt an incredible amount about Peruvian ingredients. The huge variety of fruits, vegetables and grains available in Peru was astounding. Working with the Central team and Virgilio Martinez is incredibly inspiring and beneficial. I would describe Central as an incredible destination restaurant - it holds huge value in Peru and shows real homage to the native influences of the country. What memory will stick with you from the experience? Going to Peru is a trip all chefs should consider. I was overwhelmed with how gastronomy is growing and developing so rapidly - it s no wonder Peruvian food is a hit in London. Being announced the winner though, is the memory that will always stick with me. The food markets in Peru were also unforgettable the vibrant, colourful and fresh ingredients on sale were mesmerising. And the food stalls cooking with the freshest ingredients within the market, which tasted incredible. What advice would you give to 2017/18 entrants Research the vast ingredients Peru has to offer - it will help inspire your dishes, and also develop your knowledge of the cuisine. I would also eat out as much as possible to familiarise yourself with the culture and taste profile. Farah Smith with Virgilio Martinez Going to Peru is a trip all chefs should consider. 3 How to enter Our winner will fly out to Peru to join world-renowned chef, Virgilio Martinez, at his restaurant, Central. The runners up will also be offered the opportunity to take up placements with London restaurants, Lima and Señor Ceviche. To enter, you must be a UK-based student or chef already working in industry, up to the age of 25. The first stage requires you to create a three-course meal, using Peruvian super foods in each course, for two covers. You must provide us with details of ingredients, method and a colour photograph for each dish. This can be sent to post or . Each course must feature any of the super foods in the categories shown below. You must use a different super food in each course: Some of these ingredients can be difficult to source fresh, so you have the option to use in dried, liquid, frozen or powder form if desired. Peruvian cuisine is one of the most varied in the world. It s a reflection of Peru s three main geographical zones the coast, the Andean highlands and the jungle, and an incorporation of influences from different times and cultures. Each region and town in the country has its own cuisine and culinary treasures, depending on the geography and climate that provide different ingredients native to each area. We encourage all entrants to research Peruvian cooking to help inspire your creations and demonstrate an understanding of Peruvian flavours. THE ENTRY DEADLINE IS FRIDAY 2ND MARCH. A small panel of chefs and food writers will then judge all entries we receive in the first stage of the competition. The eight lucky finalists will be contacted in March, who will then be invited to take part in a cook-off in London in May. 8 Competition terms and conditions: 1. The competition is open to all UK residents aged 25 or under who are students or already working in the catering/hospitality industry other than employees of the Promoter, their immediate families, agencies or any person connected with this competition. 2. Only one entry per person. 3. First-round entries should be paper-based and must include details of how to design a threecourse meal for two covers. Each course must feature any of the Peruvian super foods from the categories shown on the first page. You must include details of ingredients, method, and a colour photograph of each dish. Entries must be received by No responsibility will be accepted for lost or damaged entries. Proof of postage will not beaccepted as proof of receipt. A confirmation will be sent to you confirming receipt of your entry. 5. First-round paper entries will be judged by a panel of chefs and food writers during w/c Short-listed finalists will be notified by telephone by and invited to a cook-off final to take place in May in London. There will be eight finalists chosen. If a short-listed finalist cannot attend the cook-off then a replacement finalist will be chosen to take their place. 6. The cook-off final will require the finalists to prepare their menu under the supervision of a small panel of judges. One winner will be chosen on the day. The prize will consist of 7 nights B&B accommodation in a 3-Star hotel for one person, return economy flights from the UK to Peru and transport costs in Peru. The winner will be notified of the specific restaurant, hotel, dates of travel, and departure and arrival airports once chosen but dates of travel will be between and The prize must be accepted as offered. There is no cash alternative. Work experience is strictly subject to availability and the winner must also agree to abide by the terms of temporary unpaid employment set out by the restaurant. Full details will be made known to the winner once chosen. The promoter reserves the right to substitute the prize with one of an equivalent or greater value. 8. Entrants agree to be bound by all entry instructions of which these terms and conditions from a part. The Promoter s decision is final and no correspondence will be entered into. 9.
