Add dsh of white B wine vinegr. rck the eggs into two rmekins. Stir the wter gently so it is moving nd then C drop the eggs gently into the wter. Cook for 2½ minutes stirring the wter occsionlly so the eggs don t stick. Lift the eggs out of the wter using slotted spoon nd drin on kitchen pper. 6. 5 Sweet Potto Curry A vegetrin delight, this curry complements our Sweet Potto Diced with vegetbles nd rnge of spices. 25kg Aviko Sweet Potto Diced 1 tsp ground cloves 75g vegetble oil 1 tsp ground cinnmon 1kg onion, finely diced 2kg chopped tomtoes 100g grlic, finely sliced 2kg coconut milk 100g red chilli, diced 75g fresh ginger, peeled nd grted ½ tsp ground cumin Blck pepper 50g red bell pepper, deseeded nd 7 cut into strips Slt 50g bby spinch 1¼ tsp turmeric 2kg cooked rice 2½ tsp grm msl 350g Greek yogurt 1¼ tsp ground corinder 15g corinder, chopped Flked lmonds Het the oil over low het in lrge pn. dd the onion nd cook, stirring occsionlly until A trnslucent, then dd the grlic, chilli, spices nd pinch of slt nd pepper to cot the onions. ook out for few minutes to develop the flvour of C the spices. dd the sweet potto nd cot with the mixture nd A cook out for few minutes, then dd the tomtoes, coconut milk nd ginger. ring to the boil then turn down to simmer B for 10 minutes. 6. A dd the red pepper nd cook for 5 minutes, then dd the spinch nd wilt. Seson. 7. o serve, dd the curry to serving bowl nd serve the T rice on the side, grnished with the lime. 8. A dd the yogurt onto the curry, nd sprinkle over the corinder nd flked lmonds.
6 Chimichurri Stek with Sweet Potto Grtin As side, our Sweet Potto Grtin perfectly pir with juicy stek nd herby chimichurri suce. 20 Aviko Sweet Potto Grtins 125g butter 10 sirloin steks 500g sld 100g oil 150g vinigrette Slt nd pepper 500g chimichurri suce Mrinde the steks in little of the chimichurri overnight. Cook the Aviko Sweet Potto Grtin s per the on pck instructions. Pre-het cst iron pn over high het for 5 minutes. Cot the stek in the oil nd seson with the slt & pepper. Cook the stek to the customers liking, turning hlf wy through. 6. Add the butter to the pn nd spoon over the stek. 7. Set the stek side to rest for few minutes. 8.
