1 Week 5 Weekendkrat Extra Dear Krat Chef, New and unfamiliar products; we love them. This is why grower Wiel van de Bool introduced us to the yacon, originally, just like quinoa, from the Andes and the surrounding area. This bulb looks like an earthy version of yam, but tastes completely different. The bulb is often called apple of the earth, or apple root. Without skin, the yacon is a transparent, light yellow and makes a wonderful "snap" noise when you break it. The slightly sweet flavour is because of the amount of inulin, that?s also in the Jerusalem artichoke, for example. It?s very healthy: this "sweetener" does not cause blood sugar swings. Yacon is delicious raw in yoghurt, or sliced in a salad. We found that if you add yacon to a stew, it absorbs flavours really well, such as curry. Have fun getting to know it! 2 Creamy oven dish with fish, pasta, tomato and cheese Carrot (g) Red chili pepper (piece(s)) Leek (piece(s)) Farmers cheese (g) Dill (tbsp) Pollock (g) Cream (ml) 50 50,5,5 50 Spelt pasta (g) Olive oil () Garlic (piece(s)) Canned tomato (can(s)) Salt and pepper () 50,5 5 min Note that you need onion, red pepper, cheese and cream several times this week. Attention! If you want to make this dish a little leaner: leave out part of (or all) the pasta and add a tin of chickpeas or white beans instead.. Preheat the oven to C. Boil the spelt pasts for 6 minutes until cooked, drain and drizzle with a little oil.. Peel the carrot and cut into small, half-centimetre cubes.. Chop up the onion, the garlic and the red pepper. (You can also leave out the red pepper!).. Fry the onion and carrot for a few minutes in some oil in a wok. Meanwhile, cut the leek into rings. Add the garlic, red pepper and the leek to the carrot. Stir-fry for a few minutes and then add the tomato pieces. Season with salt and pepper and leave to simmer while you grate the cheese. 5. Finely chop the dill. 6. Put the pasta into a greased oven dish. Mix the pasta with some olive oil and about /rd of the vegetables and spoon the rest of the vegetables over the top. Lay the pollack on the vegetables and push down a little, sprinkle with the dill, pepper and salt and pour the cream over the dish. Sprinkle over the grated cheese and put in the oven for 5 minutes until the cheese is brown and the fish cooked (use the grill to finish of necessary).
3 Aromatic sauerkraut with Nicola potatoes and hotdogs Rode alouette aardappelen (g) Cream (ml) Sauerkraut (pack(s)) Yacon (g) Smoked sausages (piece(s)) Sugar (tsp) Mustard (tbsp) Paprika powder (tsp) Curry powder (tsp) Salt and pepper (to taste) Butter (g) , ,5,5,5,5, min. Preheat the oven to C. Put a pan on the heat with water and a little salt.. Scrub the potatoes clean. Remove any damaged bits and then cut, with skin, into thin slices of cm. Or use a mandolin.. Boil the potatoes for - minutes, until just not-cooked.. Make a mixture of the creme fraiche, sugar, mustard, paprika powder, curry powder and salt and pepper. 5. Rinse the sauerkraut in a colander and press out any liquid. Grease an oven dish. In the bottom, arrange the pre-cooked potato slices like roof tiles. Spread / of the creme fraiche mixture over the potatoes. Mix the rest of the mixture through the sauerkraut. Spread the sauerkraut over the potatoes. 6. Cut the apple into quarters, remove the core and cut into thin slices. Arrange, like roof tiles, over the sauerkraut. Arrange the butter, in small knobs, over the apple. 7. Put in the oven for 5-0 minutes until the apples start to turn brown. If the apples are browning too quickly, cover the oven dish with foil towards the end. 8. Heat up the hotdogs in a grill pan with a little bit of oil. Serve with the aromatic sauerkraut dish.
4 Oven-baked sweet potatoes with a Mexican bean salad Onions (piece(s)) Sweet potato (g) Farmers cheese (g) Red chili pepper (piece(s)) Carrot (g) Spring onion (stalk(s)) Corn (g) Coriander (minced) (tbsp) Oil for frying () Cumin powder (tsp) Paprika powder (tsp) Lime zest (tsp) Lime juice (tbsp) Yogurt (tray(s)) Black beans (can(s)) Olive oil (extra virgin) (tbsp) 50,5, ,5,5,5,5 0 min You need onion, red pepper, cheese (and in the case of veggie, coriander and spring onion) several times this week.. Preheat the oven to C. Put on a pan with a layer of salted water for the sweet potato.. Chop the onion and fry in oil slowly until brown. As soon as the onion is shiny, add the cumin and the paprika powder and some salt, and stir well.. Meanwhile, peel the sweet potatoes and cut diagonally into /cm slices. Boil for approx. minutes from the moment the water boils, drain and leave to steam dry.. In the meantime, grate the cheese. Grease an oven dish and arrange the sweet potatoes, overlapping, in the dish. Make or layers. Sprinkle the first, and if necessary the second layer, with onion and cheese, and the last layer with just cheese. Put in the preheated oven for 5-0 minutes. 5. Grate the rind of the lime and set aside. Finely chop the red pepper. Peel and grate the carrot in a salad bowl. Add the red pepper and the lime juice with some salt and leave to marinate. 6. Cut the spring onion into rings and put on the table. Mix the yoghurt with the lime rind and some salt and pepper and put in a bowl on the table. 7. Put the beans and corn in a sieve, rinse and leave to drain. Add, just before serving, to the carrot and dressing together with the olive oil. Finely chop the coriander and add. Serve with the sweet potatoes. Garnish with the spring onion and the lime yoghurt.
5 Winter yellow curry with yacon, celeriac and green cabbage Green cabbage (g) Yellow curry paste (bag(s)) Yacon (g) Spring onion (piece(s)) Red chili pepper (piece(s)) Fresh coriander (to taste) Wholegrain rice (g) Coconut milk (ml) Cashew nuts (g) Oil (for frying) Salt () min Note that you need red pepper and onion several times this week.. Bring 50g of rice pp to the boil in ml of salted water pp.. Chop the onion. Gently fry the onion in some oil in a wok. Meanwhile, peel and cut the celeriac into cm cubes. Fry the curry pasta with the onions briefly, and then add the celeriac. Stir and gently fry further.. Cut the inner part of the green cabbage into strips (first of all, cut off 8 large outer leaves for the other recipe!). Add to the rest and fry while stirring now and again until the cabbage shrinks.. Meanwhile, peel the yacon and cut into small cubes. Taste a piece raw! It?s a bit like pear? any leftovers are delicious in a salad or in yoghurt with honey and walnuts. 5. Add the coconut milk and the blocks of yacon and bring to the boil. Leave to cook for 0 minutes with the lid on the pan. Add salt according to taste. 6. Roast the cashew nuts in a dry, hot frying pan. Cut the spring onions into rings. Cut the red pepper in half lengthways, remove the seeds and then cut into half-moons. Roughly chop the coriander. Before serving, sprinkle the curry with the nuts, spring onion, coriander and the red pepper to taste.
