1 Maftoul Palestinian Couscous with Chicken and Chickpeas Ingredients for couscous: 2 l of water 250 g of poached chickpeas 1 kg of chicken pieces ½ kg of bourgol (Palestinian fine couscous) 3 kg of flour ½ l of olive oil 2 onions in small slices 2 spoons of cumin Salt, cinnamon, black pepper as much as suffices Ingredients for the sauce: ½ kg of tomatoes 2 onions 250 g of zucchini 250 g of eggplants 250 g of cauliflowers 250 g of carrots Chicken or beef broth, salt, black pepper as much as suffices ﻋﻠﻰ ﺍﻟﻄﺮﻳﻘﺔ ﺍﻟﻔﻠﺴﻄﻴﻨﻴﺔ ﻣﻊ ﺍﻟﺪﺟﺎﺝ ﻭﺣﺒﻮﺏ ﺍﻟﺤﻤﺺ ﺍﺷﺨﺎﺹ ﺍﻟﻤﻔﺘﻮﻝ ﻟـ ½ اﻟﺒﻨﺪورة : ﻣﻘﺎدﻳﺮ اﻟﻴﺨﻨﺔ ﺣﺒﺔ ﺑﺼﻞ 2 ¼ ﻛﻴﻠﻮ ﻛﻮﺳﺎ ¼ ﻛﻴﻠﻮ ﺑﺎذﻧﺠﺎن ¼ زﻫﺮة ﺑﻠﺪﻳﺔ ¼ ﺟﺰر ﻣﻠﺢ وﻓﻠﻔﻞ اﺳﻮد ﺣﺴﺐ ﻣﺮق دﺟﺎج أو ﻟﺤﻢ اﻟﺮﻏﺒﺔ ﺣﻤﺺ ﺣﺐ ﻣﺴﻠﻮق 1/4 ﻟﱰ ﻣﺎء 2 ك 1 دﺟﺎﺟﺔ ﻣﻘﻄﻌﺔ 2 ﻛﻴﻠﻮ ﺑﺮﻏﻞ ﻧﺎﻋﻢ 1/2 ﻛﻴﻠﻮ ﻃﺤني 3 ½ ﻛﻴﻠﻮ زﻳﺖ زﻳﺘﻮن ﺑﺼﻠﺔ ﻣﻘﻄﻊ ﻧﺎﻋام 2 ﻣﻠﻌﻘﺔ ﻛﺒرية ﻛﻤﻮن 2 رﺷﺔ ﻣﻠﺢ وﻗﺮﻓﺔ وﺑﻬﺎرات وﻓﻠﻔﻞ اﺳﻮد ﺣﺴﺐ اﻟﺮﻏﺒﺔ for the bourgol: Slowly mix the bourgol with flour and salted water in a bowl. Separate the mixture by rubbing hands in order to create small grains. Cook the grains in a pot to bond them, as much as desired. In the meanwhile, cut the onions and mix them with spices. Clean the chicken pieces, and cook them with 10 glasses of water on a medium fire. Put the bourgol in a refinery and put it over the pot where the chicken is boiling for 15 min. Then, in a different pot, mix the bourgol with oil and onions, and cook it for 10 min. on a medium fire. Add the chicken broth a bit at the time till when the grains are mellow. Add salt, cinnamon, black pepper as much as suffices and mix properly. Separate the water from the chicken, and roast it. Boil the chickpeas Mix the bourgol with chickpeas, chicken pieces and the remaining broth in a big bowl. Then pour the sauce, and serve the dish hot. : ﻃﺮﻳﻘﺔ ﻋﻤﻞ اﳌﻔﺘﻮل ﻳﻮﺿﻊ اﻟﱪﻏﻞ ﰲ وﻋﺎء ﻋﻤﻴﻖ وﻳﺮش اﻟﻄﺤني ﻋﻠﻴﺔ ﺑﺎﻟﺘﻨﺎوب ﻣﻊ اﳌﺎء اﳌﻀﺎف اﻟﻴﺔ اﳌﻠﺢ وﻳﻔﺮك ﺑﺎﻟﻴﺪ ﺣﺘﻰ ﺗﻨﺸﺄ ﻛﺮات ﺗﻮﺿﻊ اﻟﻌﺠﻴﻨﺔ ﰲ ﻣﺼﻔﺎة وﺗﻮﺿﻊ اﳌﺼﻔﺎة ﻋﲆ اﻧﺎء ﻳﻐﲇ ﻋﲆ اﻟﻨﺎر ﺣﺘﻰ ﺗﺘامﺳﻚ. ﺻﻐرية ﺑﺤﺠﻢ ﺣﺒﺔ اﻟﻌﺪس اﻟﺒﻠﺪي ﻳﻨﻈﻒ اﻟﺪﺟﺎج وﺑﻐﺴﻞ وﻳﻮﺿﻊ ﻋﲆ. )ﺗﻬﺒﻴﻞ اﳌﻔﺘﻮل (ﻧﻘﻄﻊ اﻟﺒﺼﻞ وﻧﺘﺒﻠﻪ ﺑﺎﻟﺒﻬﺎرات اﳌﺮﻏﻮﺑﺔ. اﻟﺤﺒﺎت ﺑﺎﻟﺸﻜﻞ اﳌﻄﻠﻮب أﻛﻮاب ﻣﻦ اﳌﺎء وﻳﺒﻘﻰ ﻋﲆ ﻧﺎر ﻣﺘﻮﺳﻄﺔ ﺣﺘﻰ ﻳﻨﻀﺞ متﺎم ﻳﻮﺿﻊ اﳌﻔﺘﻮل ﰲ ﻣﺼﻔﺎة ﻣﻦ اﻷﳌﻨﻴﻮم 10 اﻟﻨﺎر وﻳﻐﻤﺮ ﺑـ دﻗﻴﻘﺔ ﻳﺮﻓﻊ اﳌﻔﺘﻮل ﻋﻦ اﻟﻨﺎر 15 ﺑﺤﺠﻢ اﻟﻄﻨﺠﺮة اﻟﺘﻲ ﻳﺴﻠﻖ ﺑﻬﺎ اﻟﺪﺟﺎج ﻳﻘﻠﺐ اﳌﻔﺘﻮل ﺑﺸﻮﻛﺔ ﻓﻮق ﺑﺨﺎر اﻟﺪﺟﺎج ﳌﺪ ة وﻳﻮﺿﻊ ﰲ ﻃﻨﺠﺮة أﺧﺮى وﻳﻀﺎف إﻟﻴﻬﺎ اﻟﺰﻳﺖ وﺗﺤﺮك ﺛﻢ ﻧﻀﻴﻒ أﻟﻴﻬﺎ اﻟﺒﺼﻞ ﻋﲆ ﻧﺎر ﻣﺘﻮﺳﻄﺔ ﳌﺪة ﻋﴩ دﻗﺎﺋﻖ ﻧﻀﻴﻒ ﻛﻤﻴﺔ ﻗﻠﻴﻠﺔ ﻣﻦ ﻣﺮق اﻟﺪﺟﺎج ﻋﲆ دﻓﻌﺎت وﻳﺤﺮك اﳌﻔﺘﻮل ﺣﺘﻰ ﺗﺼﺒﺢ ﺣﺒﺎﺗﻪ ﻃﺮﻳﺔ ﺗﻀﺎف إﻟﻴﻪ اﻟﺒﻬﺎرات واﳌﻠﺢ واﻟﻜﻤﻮن واﻟﻔﻠﻔﻞ اﻷﺳﻮد وﺗﺨﻠﻂ اﳌﻜﻮﻧﺎت ﺟﻴﺪا ﻳﺮﻓﻊ اﻟﺪﺟﺎج ﻋﻦ اﻟﻨﺎر وﻳﺼﻔﻰ ﻣﻦ اﳌﺎء وﻳﺤﻤﺮ ﻳﺴﻠﻖ اﻟﺤﻤﺺ ﺟﻴﺪا ﻳﺴﻜﺐ اﳌﻔﺘﻮل ﰲ وﻋﺎء ﻛﺒري وﻳﺨﻠﻂ ﺑﺤﻤﺺ وﻳﺰﻳﻦ ﺑﻘﻄﻊ اﻟﺪﺟﺎج ﺛﻢ ﻳﻮﺿﻊ ﻋﻠﻴﻪ ﻣﺎ ﺗﺒﻘﻰ ﻣﻦ ﻣﺮﻗﺔ اﻟﺪﺟﺎج وﺗﻨرث ﻓﻮﻗﻪ اﻟﻘﻠﻴﻞ ﻣﻦ اﻟﻴﺨﻨﺔ وﻳﻘﺪم ﺳﺎﺧﻨﺎ for the sauce: fry slightly oil and chopped onions. Then add zucchini, carrots, cauliflower, eggplant and a bit of salt. After that, add chopped tomatoes, or tomato sauce, and the remaining chicken broth. Cook on a slow fire for 20 min. : ﻃﺮﻳﻘﺔ ﻋﻤﻞ اﻟﻴﺨﻨﺔ ﻳﻀﺎف اﻟﺰﻳﺖ وﻳﻘﻄﻊ اﻟﺒﺼﻞ وﻳﻀﺎف إﻟﻴﻪ ﺛﻢ ﻳﺤﺮك إﱃ أن ﻳﻮﺷﻚ ﻋﲆ اﻻﺳﺘﻮاء ﺛﻢ ﻳﻀﺎف إﻟﻴﻪ اﻟﻜﻮﺳﺎ واﻟﺠﺰر واﻟﺰﻫﺮة واﻟﺒﺎذﻧﺠﺎن وﻗﻠﻴﻼ ﻣﻦ اﳌﻠﺢ ﺛﻢ ﻳﻀﺎف اﻟﺒﻨﺪورة اﳌﻘﻄﻌﺔ او ﺻﻠﺼﺔ اﻟﺒﻨﺪورة ﺣﺴﺐ اﻟﺮﻏﺒﺔ وﻗﻠﻴﻞ ﻣﻦ اﳌﺮق وﻳﱰك ﻋﲆ. دﻗﻴﻘﺔ 20 ﳌﺪة. ﻧﻬﺎر ﺧﻔﻴﻔﺔ إﱃ أن ﻳﺘﻢ اﻷﺳﺘﻮاء

Add 1 liter of salted water, close the pressure cooker, and cook for 25 min on a slow fire. ﺍﺷﺨﺎﺹ ﻛﻮﺳﺎ ﻣﻊ ﻭﺭﻕ ﺍﻟﻌﻨﺐ ﻟـ ﻛﻴﻠﻮ ورق ﻋﻨﺐ 1/5 ﻛﻴﻠﻮ ﻛﻮﺳﺎ 2 ﻛﻴﻠﻮ ارز 2 ﻛﻴﻠﻮ ﺑﻨﺪور 1 دﺟﺎﺟﺔ ¼ ﻛﻴﻠﻮ ﻟﺤﻤﺔ ﻣﻔﺮوﻣﺔ ﻣﻠﺢ وﺑﻬﺎرات ﺗﺠﻬﺰ اﻟﺤﺸﻮة ﺑﺨﻠﻂ اﻻرز ﺑﻌﺪ اﻟﻨﻘﻊ ﻣﻊ اﻟﺒﻬﺎرات واﳌﻠﺢ واﻟﻠﺤﻤﺔ, ﻳﻐﺴﻞ اﻟﻜﻮﺳﺎ وﻳﺤﻔﺮ وﻳﺠﻬﺰ ﻟﻠﺤﴚ اﳌﻔﺮوﻣﺔ وﺑﻌﺪﻫﺎ ﻳﺤﴙ اﻟﻜﻮﺳﺎ وﺑﻌﺪ اﻻﻧﺘﻬﺎء ﻣﻦ اﻟﻜﻮﺳﺎ ﻳﻠﻒ اﻟﻮرق وﺗﻮﺿﻊ ﴍاﺋﺢ اﻟﺒﻨﺪورة ﰲ ﻗﺎع ﺗﻨﻈﻒ اﻟﺪﺟﺎﺟﺔ وﺗﻮﺿﻊ ﰲ اﺳﻔﻞ اﻟﻄﻨﺤﺮة, اﻟﻄﻨﺠﺮة اﻟﺘﻲ ﺳﻴﻄﺒﺦ ﺑﻬﺎ وﻳﻔﻀﻞ ان ﺗﻜﻮن ﻃﻨﺠﺮة ﺿﻐﻂ ﻟﱰ ﻣﺎء وﺗﺮﻛﺐ ﻋﲇ اﻟﻐﺎز وﺑﻌﺪ ﻏﻠﻴﻠﻦ اﳌﺎء ووﺿﻊ اﳌﻠﺢ 1 ﻳﻀﺎف ﻟﻬﺎ, وﻳﺼﻒ اﳌﺤﴘ واﻟﻮرف ﰲ اﻟﻄﻨﺠﺮة. دﻗﻴﻘﺔ 25 ﺗﻐﻠﻖ اﻟﻄﻨﺠﺮة ﳌﺪة

On the top of the plate, put the parsley as a final touch. ﺍﺷﺨﺎﺹ ﺍﻟﻔﻮﻝ ﻣﻊ ﺍﻟﺴﻠﻄﺔ ﻟـ ﻛﻴﻠﻮ ﻓﻮل 1 ½ ﺑﻨﺪورة ½ ﺧﻴﺎر ﺣﺒﺔ ﻟﻴﻤﻮن 3 ﻓﺼﻮص ﺛﻮﻣﻪ 5 ﻏﺮام ﺑﻘﺪوﻧﺲ 100 ﻛﺎس ﺻﻐري ﻃﺤﻴﻨﻴﺔ ﻳﺴﻠﻖ اﻟﻔﻮل ﻋﲆ اﻟﻨﺎر اﱃ ان ﻳﺴﺘﻮي وﻳﻀﺎف اﻟﺨﻀﺎر اﳌﻔﺮوﻣﺔ ﻧﺎﻋﻢ زﻳﺨﻠﻂ ﺟﻴﺪا وﻳﻀﺎف اﻟﻴﺔ اﻟﻄﺤﻴﻨﺔ اﳌﻤﺰوﺟﺔ ﻣﻊ اﻟﻠﻴﻤﻮن وﻳﺮش اﻟﺒﻘﺪوﻧﺲ ﻋﲆ وﺟﻪ اﻟﻄﺒﻖ
