2 California Wonder Pepper 2 Latin Name: Capsicum annum Mature Height: Spacing: (14-16 in Raised Beds) Water/Soil: Moderate and Well Drained Days to Harvest: Days Description: First introduced in 1928, the California Wonder Pepper is still the largest of the heirloom Bell Peppers and has a sweet, crisp taste. A thick-walled, tender, and flavorful variety of pepper, the California Wonder is perfect for stuffing! It is native to the equatorial regions of North and South America, and the fruits are glossy and deep red at full maturity. This easy to grow type of Bell Pepper is known for its high yield and is perfect for cooking or eating fresh. Chop one up fresh and add it to a salad, or put it on the grill for fajitas. This pepper is a culinary staple! Care: Set plants out two to three weeks after the last frost date. If using fertilizer, it should be rich in phosphorus and not nitrogen, as excess nitrogen can deter fruit growth. The fruits begin as a glossy green and mature to a bright red color. You can pick the California Wonder Bell Peppers once they reach full size about 3-4 long but they will be sweeter if allowed to turn red. Cut the fruits from the plant, rather than pulling them to avoid breaking the stems. Picking smaller peppers early in the season often provides a longer, more prolific harvest. Chives 3 Latin Name: Allium schoenoprasum Mature Height: 12 Spacing: 8-12 Days to Harvest: 90 Days Resistant To: Deer Description: Chives belong to the same family as onions, leeks and garlic (Allium). They are a hardy self-seeding perennial that will go dormant in winter and appear again in spring. Chives beautiful purple flowers are edible, but the stems of the plant are most frequently used for cooking and eating. Plants will grow well in both cool and hot temperatures as long as they have adequate water. Leaves are better used fresh rather than dried. Care: Plant in spring while soil temperatures are at least 60 degrees. Make sure to give extra watering after cutting back. Harvest often once established and keep production high by continually cutting sections of the plant back to 3 once the plant has reached 6-8. Divide seasonally, if necessary, to control clumps. Fun Fact: Romanian Gypsies have used chives in fortune telling. It was believed that bunches of dried chives hung around a house would ward off disease and evil. Italian Flat Leaf Parsley 4 Latin Name: Petroselinum crispum Italian Flat Leaf Mature Height: 12 Spacing: Exposure: Full to Partial Shade Days to Harvest: Days Description: Far more nutritious than its curly cousin, Flat Leaf Parsley is known for its flat, deep green leaves that are easy to chop, and it makes a wonderful garnish for any dish! Flat Leaf Parsley is known for its hardiness and is both frost and heat-tolerant, and will also do well in container gardens. Even though Parsley is technically a bi-annual, it should be grown as an annual except for ornamental purposes. Parsley is a great garnish for cooked dishes, soups, and salads! Care: Keep the soil moist after planting until after it develops a greater root system. Harvest Parsley at any time of the growing season by snipping individual leaves or by cutting the stem back to base of plant. Fun Fact: Parsley is often used as a natural breath freshener. Italian Large Leaf Basil 5 Latin Name: Ocimum basilicum Italian Large Leaf Mature Height: Spacing: 2-8 Water/Soil: Moderate and Rich Exposure: Sun to Filtered Shade Days to Harvest: Days Description: Adding Italian Large Leaf Basil to a garden will ensure you experience the best smells and tastes all around the home. This glossy, dark green plant is highly fragrant and can be used for a variety of culinary and aromatherapy purposes. When pinched to promote the branching, the Italian large leaf will take on a shrubby, bulbous form. Care: Basil does best in well-drained soil, and needs to be watered often. If the weather falls below 50 degrees, provide protection. Pruning the plant helps it develop into a bushy shape, and will also prevent flowering and the consequential wilting. Prune the top several sets of leaves in each stem, and leave at least three sets of leaves on the lower part of the stem. Make sure to prevent flowering, as the leaves will grow bitter to the taste afterward. You can harvest basil as soon as it reaches a height of 6-8. Wait until the later morning to harvest after the dew dries. Remove single leaves or part of the stem, taking care to leave at least 3 leaves on the stem below. Pinch the stem off directly above the next set of leaves. Basil keeps best either frozen, or by keeping it at room temperature with the stems in water. Fun Fact: This is considered the best basil for pesto recipes.

3 Lacinato Kale 6 Latin Name: Brassica oleracea Lacinato Mature Height: Spacing: Days to Harvest: 30 Days (Baby), 60 Days (Mature) Description: Also known as Dinosaur Kale or Cavolo Nero, this wrinkly leafed kale is a deep blue-green with smooth edges. A very old heirloom variety, Lacinato Kale is believed to have originated in Italy and is said to be one of the best tasting Kales. This variety is not bitter, and actually becomes sweeter after a frost, as the cold will concentrate its sugars. Kale is great for fresh use in salads, cooked into stews or baked as Kale chips! Care: Lacinto Kale is very easy to grow. Harvest leaves when the plant is quite young, when the leaves are 8 or less in length. Leave at least 50 percent of the leaves to ensure that you will be able to harvest more off of the same plant all year long. Aphids sometimes creep into the cracks and crevices but can easily be washed off. Leave Kale untouched in the fall to allow leaves to sweeten. Fun Fact: Often called The Miracle Plant amongst many other things, Kale possesses phytonutrients, which quell inflammation, improve the liver s detox ability, and can even protect brain cells from stress. Lemon Cucumber 7 Latin Name: Cucumis sativus Lemon Mature Height: 6-8 Spacing: 12 Days to Harvest: Days Description: These cucumbers are less bitter than other varieties. Don t let the shape and color of these cukes fool you! Lemon cucumbers have a very sweet and mellow taste and are certainly not sour or bitter. Produces 3 round fruits that have a bright yellow skin with tiny, un-harmful, spikey hairs. Lemon cucumbers are best eaten raw or tossed into salads. Care: Cucumbers are especially sensitive to cold, so make sure to plant well after the last frost date (May 15 in Colorado). Once fruit appears on the plant, increasing the amount of water will encourage the fruits production and size. Water slowly to make sure the plants do not sit in puddled water, and water the soil around the plant rather than the plant itself. Fun Fact: The Romans reportedly used cucumbers to treat scorpion bites, bad eyesight, and to scare away rodents. Magenta Lettuce 8 Latin Name: Lactuca sativa Magenta Mature Height: 8-10 Spacing: 8 Water/Soil: Well-Drained, Loose Soil to Partial Shade Days to Harvest: 48 Days Description: A favorite of many gardeners, this lettuce is known for its crisp texture and shiny tinted purple-red leaves. This variety is more resistant to heat bolting than other lettuces. This lettuce has an excellent shelf-life, and is perfect for a summer salad with nuts and berries. Care: This cool-weather crop grows best at temperatures ranging from degrees, but will also hold up well in early to mid-summer heat. Harvest leaves regularly to prevent bolting. May be harvested leaf by leaf, or cut in bunches close to the stem. Red Express Cabbage 9 Latin Name: Brassica oleracea Red Express Mature Height: 8-12 Spacing: 12 Days to Harvest: 63 Days Description: This deep red to purple beauty is sure to brighten up any salad or coleslaw! An early producer, this cabbage forms a compact and small to medium sized head and does very well in clay-based soil. Care: Fertilize with organic material such as compost or manure. Red Express requires cool temperatures in order to form a proper head; plant cabbage early on so that they can mature before the summer heat.

4 Royal Burgundy Beans 10 Latin Name: Phaseolus vulgaris Royal Burgundy Mature Height: Spacing: 4-6 Days to Harvest: Days Description: These gorgeous deep-purple bean pods are 5-7 long and are produced in abundance. This particular bean variety is incredibly hardy and easy to grow and will even do well in containers. Royal Bush are a type of Bush Bean, meaning that the plant grows wide and bushy. While this means that the plants may require some support, they are not a climbing variety, and don not need the full support of a trellis. Royal Burgundy is more resistant to cold than other varieties of beans. Care: Harvesting can begin generally 2 weeks after flowering. Make sure to pick the bean pods when they are nearly full-sized (5-7 ) and when the seeds inside are still small, ensuring a crispy flesh with low-fiber content. Harvest beans regularly to encourage a greater yield. Fun Fact: Beans are heliotrophic plants, meaning that during the day the leaves tilt towards the sun and fold or curl at night. Sedona Onion 11 Latin Name: Allium cepa Sedona Mature Height: Spacing: 3-4 Water/Soil: Low Water, Well- Drained Soil Days to Harvest: Days Description: This is a Spanish globe-variety of onion with a rosybrown skin that is loved for its heat-tolerance, high yield potential, and long storage time. Sedona is a sweet and yellow onion that is most frequently served cooked, but may be consumed raw or used for pickling. Care: Onions will grow best in nutrient-rich soil. Onions should be well-watered throughout the season, but excess water and fertilizer will delay maturity and may result in soft bulbs. Cease watering onions when the green tops begin to fall over to encourage the bulbs to harden below the ground. Harvest bulbs when the plant tops have fallen over and begun to yellow, but before the green stalks have completely dried out. Cure onions by leaving to dry with the stems on in a cool place until tops are completely dry about 5 to 14 days. Once tops have dried, cut them within an inch of the bulb and store bulbs in a cool and well-ventilated place. Fun Fact: The juice of onions can be rubbed on the skin to prevent insect bites. When applied to the scalp, it is said to promote growth of hair and on the face to reduce freckling. Striped Roma Tomato 12 Latin Name: Lycopersicon lycopersicum Mature Height: 4-6 Spacing: Days to Harvest: Days Description: This paste tomato is stunning and unique with its long, pointed red fruit decorated with wavy orange stripes. It is an indeterminate Tomato, meaning that it will grow tall and continually produce fruit through the summer. Striped Romas are great for eating fresh off the vine, but will also cook quickly into a sauce! Care: Striped Romas are incredibly productive and stay relatively small, but will certainly still require staking. Water carefully, allowing the soil to dry between waterings. Fertilize with fish emulsion every days. If your plants have become too leggy, plant deeper into the soil. This method is known as plant layering, and once planted the stems will actually sprout roots! Fun Fact: Cooking tomatoes into sauce or paste triples the amount of available lycopene (a nutrient that supports healthy eyesight, cardiovascular health, cancer-fighting capacity, and more) and beta-carotene compared with raw tomatoes! Swiss Chard Latin Name: Beta vulgaris var. cicla Bright Lights Mature Height: Spacing: 4-6 Water/Soil: Moist, Well-Drained to Light Shade Days to Harvest: 60 Days Description: Boasting golds, pinks, crimsons, oranges, purples, whites, and greens, the Bright Lights Swiss Chard is a rainbow of color. A native to coastal Europe, this leafy green can be picked from late spring through early winter. With a rich, crisp, peppery bite, Bright Lights can be eaten like spinach and beet greens and it is best harvested when young for salads. It is second only to spinach on the world s healthiest vegetable list! Care: Swiss Chard is a low-maintenance plant. It can be harvested two months after sowing. Harvest only the outer leaves until the plant becomes well established; later, the plant can be cut down to 2 above the crown. Swiss Chard will re-grow once cut down. Fun Fact: Swiss Chard is in the same family as beets, which is why beets leaves are so reminiscent of Chard.
