In just over two months, we have tasted the best South Africa has to offer. From the cool slopes of Elgin to the frozen mountains of Cederberg. From the warm and ever inviting vines of Stellenbosch to the elegant valleys of Franschhoek. We have paired each wine on this list to an assortment of our culinary delights and we want you to enjoy every glass of wine while exploring the complexity of our ThaiAsian cuisine. The wines we have selected have their own wonderful story made by extraordinary winemakers. It is humbling to be able to deliver to you, the very best of South Africa. All wines are stored at an optimal temperature in a humidity controlled environment to aid with the aging process and to preserve the quality you deserve. We take pride in what we have created and trust that you will enjoy exploring it as much as we have enjoyed compiling it. It might be a wine from a boutique winery or wine that you have kept in your cellar for a special occasion. Prices are subject to change without notice. 2 WHITE WINE History It has taken nearly 20 years for the South African wine trade to become the exciting place it is today. The once widespread production of inexpensive, inferior wines has made way for smaller volumes and higherquality wines. South Africa s white wines have made a name for themselves in the international wine market due to their crisp and fruity nature with the most popular varieties: Sauvignon Blanc, Chardonnay, and Chenin Blanc. South Africa is wellknown for its varieties of white wine and each of the winemaking regions is dedicated to produce excellent quality white wines. Especially the Western Cape is blessed with plenty of sunshine and a warm Mediterranean climate, tempered by oceanic, onshore breezes. The climate plays a great role in determining the style and quality of the wine and each region has a unique microclimate with subtle differences. White wines are further influenced by its unique terroir with different soils ranging from Table Mountain Sandstone to Shale and Granite soils contributing to the wines mineral content and its acidity. Even more exciting for the South African vinous scene today are the young winemakers who have travelled the world to gain inspiration, and have since come home to establish their own unique projects. Wine Pairing Mild Dishes Fruity Dishes Spicy Dishes The complexity of Thai food makes it difficult to use normal food pairing guides. The old rule of white wine for fish and red wine for meat is irrelevant when pairing wine with Thai flavours. Our food is prepared with variety of spices that are commonly seen in Thai cuisine. Ingredients like lemongrass, chilli, turmeric, tamarind, lime leaves, ginger, and coconut milk are staples that are combined with powerful flavours like garlic, shallots, and fish sauce to give you an authentic Thai flair from our dishes. Our selection of Chardonnay and Sauvignon Blanc are perfect as an aperitif on its own or paired with our choice of Dim Sum and appetizers. The subtle richness of Chardonnay works best with all seafood options and especially our unoaked Chardonnay can handle it in combination with chilli. Sauvignon Blanc is unique in that it has more green, herbaceous flavours than other white wines. This makes Sauvignon Blanc an excellent choice for our aromatic fish dishes and our basil infused stirfry s and green curries. The spices and powerful flavours of Thai cooking are often offset by fresh fruit flavours including orange and pineapple. Our choice of dry Chenin Blanc pairs exceptionally well with our fruity dishes like the range of Sweet & Sour variations. Our Red Duck Curry brings together the sweetness from grapes and pineapple and is best matched with a wooded Chardonnay or Sémillon. We added an excellent but small choice of Rose, Riesling, Gewürztraminer, and Viognier to match your preference for spicy food. The sweetness in these offdry whites helps to balance the chilli and bring out the subtle aromas of Thai cooking. Champagne and sparkling wines are also very versatile when it comes to pairing with Thai cuisine and the bubbles in the wine work well to counterbalance the effect of chilli. Chilli can have the physical effect of numbing your tastebuds and the burning sensation can be increased by the bitterness of tannins in oaked wine and higher alcohol content. If you prefer your dish hot or Thai hot you can choose from our variety of craft beers to complement the flavours without having to sacrifice the taste and flavour of your dish.

3 CHAMPAGNE Our champagne and MCC s have been selected as both an aperitif and as a drink that pairs well with our appetizers. The bubbles cut through the infused oils in our dishes to produce a refreshing finish on the palate. Both Champagne and Cap Classique have the versatility to pair exceptionally well with all dishes. 4 ROSÉ We kept our Rosé selection simple in numbers, yet exuberant in choice. With our dry, off dry and complex rosé wines on offer, we have allowed them to pair well with a variety of dishes. These wines have a natural affinity with spicy dishes, especially those that contain peppers. Those who enjoy the warmer climate wines which produce a soft nose but an abundance of tropical fruit and those who enjoy cooler climate Sauvignon Blanc s, which produce a noticeable amount of acidity with a nose of green flavours. 5 CHENIN BLANC South Africa is the largest producer of Chenin Blanc in the world. Therefore the ranges of flavour profiles are endless. Chenin Blanc boasts fruit flavours of melon, pear and peach with alluring floral aromas and a lovely crispness. 6 WOODED CHARDONNAY Wooded Chardonnays are rich, medium to full bodied, and usually present additional aromas and flavours of vanilla, butter and even caramel from the oaking process. Some other characteristics of wooded Chardonnays are golden colour and a velvety feel in the mouth. Viognier has a highly aromatic and fruit driven nature with a full velvety mouth feel, this allows the wine to pair well with spicy foods and it can be unbelievably tasty with coconut milk. Recommended with Duck Salad, Lamb Curries & Red Thai Curries 2015 Creation Walker Bay 14.1 % Abundantly fruity and forthcoming, yet refined on the nose with fragrant white peach aromas. 7 RIESLING Riesling is characterized by sweet fruity flavours, mineral aromas and floral notes, with good acidity. The combination of sweet and acidic makes Riesling an ideal wine to pair up with spicy and richer dishes. Blended white wines have a wide variety of flavours and aromas, it can range from crisp and acidic to oaked and full bodied with a wide spectrum of fruits and flowery notes on the nose. 8 RED WINE History As a wine producer, South Africa is considered to be part of the New World, along with the Americas, Australia, and New Zealand. The country has a long history with wine grapes, and its soils are among Earth s oldest. It is fitting that the best of its wines display the ripe fruit character that we typically enjoy from the New World, framed by minerality and earthiness often reminiscent of Old World European wines. There is strong momentum in South Africa for fine wine. Many small producers are thoughtfully crafting wines from still young vineyards on carefully chosen sites. They are re educating themselves about how to get the best from older vineyards and warmer locations. New growing areas are being established along the western and southern coastline, well beyond the central area that includes Stellenbosch, Franschhoek and Paarl. Pairing Thai food offers several challenges for the discerning gastronome. It s all about the food, about complementing and contrasting flavours, spices and aromas. Thai curries are made with fragrant seasonings fresh lemon grass, chillies, lime leaves, coriander, galangal, and Thai basil, often with sweet, rich, coconut milk. Salty shrimp paste is a regular feature, providing a sense of earthiness and pungency. Red wine has its limitations with Thai food, the tannins disagreeably accentuated by the sour ingredients and flavours, but there are some beneficial liaisons such as red curries and meats. Mild Dishes StirFry Dishes Curry Dishes If you prefer red over white wine, we recommend a light Pinot Noir to pair with our Dim Sum and Appetizers. Pinot Noir, especially when slightly chilled, pairs well with the simplicity of flavours in Dim Sum without overpowering it. The light tannin structure and lower alcohol percentage make Pinot Noir also a great choice to pair with our aromatic selection of soups and salads without having to sacrifice the slight burn from the chilli. For more robust dishes of pork, lamb or beef, a lighter style of Cabernet Sauvignon or Shiraz work well with their sweet & sour berryfruits and Shiraz with its spicy pepperiness. The firm tannin structures balances out the salt from soy sauce and the sweetness from oyster sauce, creating a rich complexity to Stirfry dishes. Our famous Massaman curry and our Duck dishes that feature less complexity are best enjoyed with a fullbodied Bordeaux Blend, Shiraz, or Pinotage. Thai curries are a treat for all senses and are best enjoyed medium spicy. The strong flavours are a real challenge for red wine and the wrong choice can lead to disappointment. We recommend light to medium bodied varieties of red wine with low tannin levels to pair with curries and spicy dishes. Our selection of Merlot and Pinot Noir are well suited for the challenge as long as the chilli is not too overwhelming. 9 CABERNET SAUVIGNON The flavours of Cabernet Sauvignon wines include tobacco, leather, lead pencil shavings and sometimes vanilla and blackcurrants. They usually produce wines with strong tannins which enhance the aging potential of this varietal. Recommended with Duck Spring Rolls, Crispy Duck, Cashew Nut StirFry 2014 Warwick First Lady Stellenbosch 13.5 % Red berries, sweet blackcurrants and a pleasant herbal character, complimented by sweet vanilla. (winemaker Toit Wessels) 2014 Post House Bulls Eye Stellenbosch 15 % Raspberry, cigar box, chocolate and gamey meat on the nose. Firm and oaky palate with rounded tannins. (winemaker Nick Gebers) 2013 Stark Condé Stellenbosch 14.5 % Deep blackcurrant and fern leaf aromas. Polished and plush rounded tannins with a hauntingly long finish. (winemaker Jose Condé) 2012 La Bri Limited Release Franschhoek 14.3 % Classic Cabernet with blackberries and elderflower. Graphite shavings and carefully applied oak. (winemaker Irene Waller) 2013 Waterford Estate Stellenbosch 14.3 % Elegant aromatics with strong red berries and a typical dry and tight structure. The aroma is characterized by cherries, plum, chocolate and smoky notes. Pinotage retains a perception of sweetness, even when the wines are technically dry. 10 MERLOT Merlot grapes produce a wine with flavours and aromas of black cherries, berries, plum, chocolate and herbs. Merlot has softer characteristics and fruity flavours that make it a wine well suited to lighter foods. 11 PINOT NOIR Pinot Noir is widely received as a preferred varietal to pair with Thai food. This gentle yet temperamental grape can show notes of strawberry and cherry as well as stewed fruits and leather. Recommended with Tom Yum, Spring Rolls & Phad Thai 2015 Iona Mr P Elgin 13.5 % Succulent black cherry aroma, bright but delicate and hints of forest floor, with underlying floral and spicy notes.
