Our Syrah Vin de Pays de l Ardèche represents the know-how of Cave Saint Desirat, as we produce great and authentic 100% Syrah wines. Most part of the soils is composed of granite with some clay and ancient alluvia atop the hills. Winegrowing : Sustainable with minimum chemical treatments applied, ploughing, short pruning (in gobelet), de-budding. Yields around 50 hectoliters per hectare. 100% hand-picked in crates, around mid-september. In the cellar : Part of the grapes is macerated in whole bunch so as to highlight fruits. The vines are planted on very steep slopes, on a multitude of terraces supported by drystone walls called 'chalets'. The east-facing slopes bring a great balance of acidity due to delicate warmth of the morning sun. Soil is mainly composed of rocky and crumbly granite where the roots go through to 18 meters deep, very shallow surface, almost impossible to work with machines. Winegrowing : Sustainable with minimum chemical treatments, no herbicide, ploughing, short pruning (in gobelet), de-budding, green harvests. Yields between 35 to 40 hectoliters per hectare depending on vintage. 100% handpicked in crates, end of September. In the cellar : 100% de-stemmed. Long maceration of 20 days in whole berries before alcoholic fermentation in stainless steel temperature controlled tanks. Aged 10 months in French oak barriques from François Frères (1/3 new). The vineyard of 8 ha (eq 20 a) is located on the top of the Brunieux hill on very steep slopes. The south/south-east exposure brings the best maturity and balance to the grapes. The soil is very poor and rocky, composed of hard granite, very shallow surface, impossible to work with machines. It offers excellent drainage. Winegrowing : Sustainable with minimum chemical treatments, no herbicide, short pruning (in gobelet), de-budding, green harvests. Yield is less than 35 hectoliters per hectare. 100% hand-picked in crates, end of September. In the cellar : 100% de-stemmed. Long maceration of 24 days in whole berries before alcoholic fermentation in stainless steel temperature controlled tanks. Traditional crushing and pumping over. 100% aged in new French oak barrels from François Frères (Allier and Nièvre forests mid-toast) during 10 months. No fining and no filtration before bottling. From the vineyard to the bottling, Jacques Lurton devised with the team a progressive working method to better know and to get the best from vineyards, from parcel selection to wine making. Vineyard : Inside our 19 ha Domaine Rochevine vineyard, our top cuvée Coeur de Rochevine is a selection of 6 different plots (2,6 ha), located between 150 and 300 meters high (500 to feet). The south-east exposure on spectacular granitic slopes brings the best maturity and balance to the grapes. Perfect drainage of rainfall. Soils are poor and rocky composed of hard and crumbly granite, very shallow surface, impossible to work with machines. Winegrowing : Cultural follow-up is individualized to each vine-plant. All stages are 100% Hand-Made. Sustainable winegrowing, short pruning (in gobelet), debudding, green harvests. Small yield (30 to 35 HL / Hectare), around 1 kg / vine-plant. 100 % hand-picked with optimal maturity for each parcel, in 10 kg crates, at the end of September (until 3 weeks time difference between the earliest and the latest parcels). According to density, total or partial punching of the cap and pumping-over, several times a day, with maximum temperature for alcoholic fermentation of 26 c to 28 c. Maceration period: 4 to 5 weeks. Malolactic fermentation in French new oak barrels (origin : Allier, center of France and Vosges) with regular stirring of the lees. Ageing during 12 months in oak barrels. 16 ABADIA DEL ROBLE...produced from a select harvest of the Tempranillo (Cencibel) and Garnacha grapes. Dark cherry red in colour, with some violet rim and tones. Warm and elegant wild red fruit aroma, very well engaged with the primary notes characteristic of the soil and the varieties. In the mouth it is well structured, full - bodied and tasty while easy-drinking. With a palate of soft tannins, that leaves pleasant aftertaste. Good with white and red meat dishes as well as younger cheeses but also with tapas, pasta... Should be served at a temperature of 18ºC (65ºF). 16

23 With the 1965 harvest, the Estola brand was launched, the flagship of the winery and the first Reserve wine in La Mancha, which very soon would attract the attention of the specialist critics and personalities. The barrels of that time bear testimony to the visit to the winery, in 1973, of the Papal Nuncio and the brand was mentioned in the novel "La Rosa de Alejandría" ("Alexandria s Rose") by Vázquez Montalbán. Since then, a continuous process of technical improvements and perfecting of the facilities has given rise to a company which, without ever abandoning the seal and style of a family tradition, enjoys a solid reputation and occupies positions of leadership in the national and international markets. 23

27 Grangeneuve 2011 Red wine, 50% Grenache grapes between 35 and 80 years of age, around 30% Syrah grapes older than 20 years, around 10% 40 years old Carignan grapes, and 10% Viognier grapes, AOC Beumes de Venise. Grangeneuve is the product of 9.8 acres of marly limestone terraces, facing south, at an altitude of between 1150 and 1640 feet. Vinification and ageing takes place in 15-year-old temperature-controlled oak barrels. Grangeneuve keeps for 10 years. It is drunk at 15 C / 59 F having opened the bottle two to three hours earlier to accompany red meat, game, and soft cheeses. 27

28 Clapas 2011 Red wine, 50% Grenache grapes, 50% Syrah grapes, AOC Côtes-du-Rhône. Les Clapas stems from 5 acres of infertile soil at an altitude of between 1,640 and 2,000 feet, grown facing the south-west. For 12 months, the grapes are fermented in temperatureregulated vats made of oak (1/3) and stainless steel (2/3). Les Clapas lasts 8 years and is ideally drunk at 15 C / 59 F with a saucisson as an apéritif, or with a main course of grilled meats, a lamb roast, beef carpaccio, a quail roast, beet gratin Gilbert & Gaillard Guide 2014 : Deep, brilliant crimson. 29 Located in the heart of the Dentelles de Montmirail, at an altitude of 1640 feet, in the Beaumes de Venise AOC, Domaine Saint Amant enjoys a unique terroir : 32 acres of small plots of steep slopes, facing South-East and swept by the mistral, with a soil of Triassic marl and limestone dry, infertile, and so unconducive to disease or pests. 30 MEDITERRANEAN SEA Grape cultivation follows traditional methods, and the work ethic is strict: the grapes are harvested by hand, the vinification and ageing occur in stainless steel or French oak temperature-controlled vats. The cellar, built in 1995, is underground and air-conditioned. The Jacques Wallut family, owner and winemaker, produces nearly 50,000 bottles a year. 30
