6 Decanting of Champagne Although very rarely seen, we will decant certain Champagnes. Not only do certain Champagnes benefit in terms of flavour and aromas, but it is a truly a magical part of the service. Decanting really allows for all the true characteristics of the Champagne to shine through and to bloom. The decanters we use are from Riedel and are especially designed with the decanting of Champagne in mind. D Denotes we recommend this Champagne is decanted. André Jacquart André Jacquart is a small family owned house based in Vertus on the Côte des Blancs where the average age of the vines is 40 years. Use of oak barrels from Puligny, non malolactic, low dosage and the use of predominately chardonnay all contribute to make these crisp, minerally wines an absolute delight. A figurative artist in the seventies and eighties, he became firmly committed to abstract art from the nineties onwards. Having worked primarily on trees and shapes, he is now exploring furrows and written lines, Sillons et Ecritures, the basis of the triptych displayed in the bar. Furrows and written lines are both expressions of man, either on the earth or on paper. The works are built on concepts of regular work, hard graft, implying a play between order and disorder. Colour was abandoned in favour of structure. But there is also a richness to the blacks, greys and whites due to the incorporation of paper and the superimposition of layers

13 Rare Vintages Billecart-Salmon Clos Saint-Hilaire This unique Blanc de Noirs cuvée bears the name of the patron saint of Mareuil-sur-Aÿ. This famous 99% rated village just down the road from Äy and home to the great House of Billecart Salmon and a one hectare vineyard which is the flagship of the Estate. Its vines, planted and pampered since 1964, have developed all the qualities of the best crus. This exceptionally pure wine stands out for the complexity of its aromas combined with a surprising freshness for such a great wine. Bollinger Vieilles Vignes Françaises Blanc de Noirs 2000 This pure pinot noir wine is an absolute rarity, a testament to viticultural traditions of the XIX century. An excellent vintage cuvée with a meaty-biscuity, richness of that variety presented in an intense, evocative, very linear and defined fashion. Bruno Paillard Blanc de Blancs This is a small, prestigious estate which is gaining admiration from around the world, notably for their exceptional cuvées. This exceptional wine from the 1995 vintage has only been recently disgorged. Made from a selection of grapes that come from four highly-rated vineyards in the Côte des Blancs; Cramant, Chouilly, Le Mesnil sur Oger and Vertus. The wine is vivacious and lively, with bloom and white peach aromas, a soft round generous palate that highlights the buttery notes and discrete lemon hints. Truly magnificent freshness. Dom Pérignon Œnothèque This 1996 has been disgorged in 1999 and with a further 13 years in bottle, its colour has slowly evolved from the usual pale straw to a deep golden yellow with a fine and persistent bead disclosing its ongoing youthfulness and longevity. A rarity, a great find. Krug Clos du Mesnil Krug Clos du Mesnil is the one exception to the Krug rule of blending, since it is the product, not merely of a single grape variety and a single year, but of a single historic vineyard. In this enchanting Champagne, the purity of Chardonnay and the mineral aromas of the terroir are balanced by a discreet yet distinctive taste of honey, which is a particular characteristic of Krug Clos du Mesnil. Lanson Vintage Champagne A blend of 49% Chardonnay, 51% Pinot Noir. Powerful, fruity and well structured this old vintage from Lanson highlights the stunning 88 vintage perfectly, showing great acidity from the non-malolactic in a year that was famed for its high malolatic cuvées. This wine is evolving by the day and the complexity is really beginning to shine. This Lanson vintage really charms the senses with honey and white peach on the nose and cooked white stone fruit flavours, mellow with a good firm finish. Stunning! Moët et Chandon Vintage Magnum The first notes have the roasted flavour of grilled pine nuts, cashews and vanilla followed by notes of honey and dried fruits.the taste is in perfect harmony with the aroma. Full-bodied strength dominates but the savours remain very balanced and well-integrated. The overall impression is of a polished creaminess. The finish remains remarkably fresh for a wine of this age and contains a distinguished hint of astringency.

Blanc de Blancs White of whites The term used to describe Champagnes made exclusively from Chardonnay grapes. Blanc de Blanc Champagnes are usually light and delicate. Blanc de Noirs The term white of blacks is used to describe Champagnes made exclusively from black grapes. Pinot Noir, Pinot Meunier or a blend of the two are the only red grapes permitted in Champagne. Rosé Rosé Champagne can be produced by either maceration of black grapes during pressing, so that the colour leeches out from the skins or by adding a small amount of red wine to give the wine a rosé tint. Brut natural A very dry style of Champagne in which the sugar content is less than 3 grams per litre. This is a very rare style of Champagne that is not widely available. Brut The majority of Champagne falls into this category. Brut is a term to describe dry Champagne. Contains less than 12 grams of sugar per litre. Extra Dry A slightly confusing French term to signify that the Champagne is slightly sweeter in style, more middle-of-the-road style, not as Dry as brut. Sec A term to signify that the Champagne is medium sweet. Demi-Sec Demi-Sec A term to signify that the Champagne is a sweeter style with grams of residual sugar.
