2 The Winery La Querce has a total of 42 hectares. These are cultivated vineyards and olive groves from which we get the main products of our land: grapes and olives. The fields are cultivated according to both tradition and innovation, limiting chemical interventions, so as to achieve the best balance between soil and plants give superior products. The soil is of a structure tend to be clayey, this allows us to always have water reserves in the soil that plants, in the most difficult years, may be used. Most of the land is facing South in the wide Sorrettole Valley; this allows you to have a good exposure to the sun and gentle breezes during the harvesting period. The vineyards stretch for about eight hectares, in recent years have all been replanted with both traditional Sangiovese, Canaiolo and Colorino, both with Merlot. A vineyard of 2 hectares was replanted in 1999 with a planting density of 3,500 plants / ha, according to a vineyard of 3 hectares was replanted in 2003 with a planting density of 5,200 plants / ha, while another 3 hectares it was planted in 2010 with a density of 4800 plants / ha. All are grown in spurred cordon, yield of around 1.2 Kg. of grapes per plant. In winery cellars are two. The cellar with the fermentation vats and stainless steel tanks all with the possibility of having a temperature controlled by a control unit. Then this a place located for most underground, maintained at an appropriate temperature, used for storing bottles in aging. Below the villa it is instead present the a- ging cellar where the barrels are present, a historic wine cellar and a tasting room. Of our land, 12 hectares are planted with olive trees (about 2600) all cultivated traditionally bush shaped and producing on average 12 Kg of olives per plant. Most of the olives trees are aged well over 100 years, in 1990 was planted an olive grove facing south of about 500 plants. The varieties are: Frantoio, Moraiolo, Leccino, Pendolino, Madonna dell Impruneta, Americano and other in very small quantities. The room where the extra virgin olive oil is stored after being produced in a frantoio outside is the orciaia. Here in typical containers Impruneta terracotta "orci" the oil is stored before being bottled.

The grapes were macerated in stainless steel tanks for about 18 days, with a periodic pumping over for a better color and softer tannins extraction, during which the wine completed its alcoholic fermentation. The malolactic fermentation was completed into barriques. Maturation in new wooden French barriques for 18 months. After bottling the wine remain a year in cellar. PRODUCT QUANTITY: bottles of l. 0,750 TASTE: Intense ruby red colour with garnet reflexes; bouquet is wide and strong with a red fruits, spicy and vanilla note. HARVEST: in September, hand-harvest, the grape was crushed in a soft way. VINIFICATION: the grapes were macerated in stainless steel tanks for about 16 days, with a periodic remounting for a better extraction of colour and soft tannin, during which the wine completed its alcoholic fermentation. MATURATION: 24 months in new barriques of French wood, medium toasting REFINING: In bottles of at least 12 months PRODUCT QUANTITY: bottles of l. 0,750 TASTE: Intense ruby red colour; in the nose it is well marked with a forest fruit some raspberry, blackbarry. In the mouth, it is very full but elegant with soft tannins and of a long and persisting taste. REWARDS: Wine Spectator USA, Wine Magazine (only web site) Wow. This is an opulent and decadent red, boasting so much raspberry, blackberry and toasty oak character. Full-bodied, with big, velvety tannins and a long, long finish. Loads of character. Merlot. HARVEST: hand-harvest, the grape was crushed in a soft way, after one night with skin, the grape was soft pressed. VINIFICATION: the wine was fermented in stainless steel tanks for 28 days at controlled temperature. MATURATION. About 16 months in barriques of French wood, medium toasting. REFINING: In bottles of at least 6 months. PRODUCT QUANTITY: bottles da l. 0,500 PACKAGING: Heavy bottle of 0,500 l. of old green colour TASTE: Pink color, the nose reveals wide with a hint of icing sugar and notes of fruit. On the palate, the wine is well-balanced, elegant, with a sugary fruit pulp and with long finish. Then very sweet in the mouth but with lovely clarity and cut thanks to high but harmonious acidity, which extends the rich toffee and raisiny flavors at the back. The grapes were left hanging for a month more than usual and then air-dried. Originally this was a late-harvest wine, but in this vintage airdrying was tried.
