10 RECIPES Chilled dry or semi-dry white of your choice pairs perfectly with this light summer meal. GRILLED SALMON WITH MUSTARD-WINE SAUCE 1 teaspoon minced garlic 1/2 teaspoon salt 1 teaspoon freshly ground black pepper, divided 2 tablespoons olive oil 2 tablespoons fresh lemon juice 6 salmon fillets (6 oz. each) 2 tablespoons butter 1 tablespoon flour 1/2 teaspoon paprika 3/4 cup milk 2 tablespoons Dijon mustard 1/4 cup dry white wine (Chardonel or Vignole) 1 teaspoon chopped fresh basil leaves 1 teaspoon chopped fresh rosemary leaves Prepare grill for high heat (450 to 550 ; you can hold your hand 5 in. above cooking grate only 2 to 4 seconds). In a small bowl, combine garlic, salt, 1/2 tsp. pepper, the oil, and lemon juice. Brush mixture over salmon, then cook, turning once, until done the way you like, about 6 minutes total for medium. In a small saucepan, melt butter over medium heat. Stir in flour and cook until starting to brown. Whisk in remaining 1/2 tsp. pepper, the paprika, milk, mustard, wine, and 3 tbsp. water. Cook until simmering, then spoon over salmon and sprinkle with herbs. A dry or sweet red complements this simple, tasty autumnal dish. ONE-POT RED WINE PASTA 16 oz. pasta 1 small white onion 2 cloves garlic 2 sprigs fresh basil 1 bay leaf 2 T olive oil 2 1/2 cups vegetable stock 2 cups red wine (any kind you prefer to drink) 3/4 cup water salt + pepper 1/2 cup Parmesan cheese to serve Finely cut onion and mince garlic. Add all ingredients (except cheese) to a large pot. Bring to boil. Reduce heat to a low boil and cook for 7-8 min, stirring occasionally. Remove bay leaf and basil before serving. Top with a little more pepper and the cheese. Top with any extra basil, serve and enjoy!

The Trail is a natural tie-in to the largest American Viticultural Area in the US, the Upper Mississippi River Valley AVA.
