2 BUY, BOTTLE AND LABEL A BARREL OF ULTRA-PREMIUM DEERFIELD RESERVE WINE It s not hard to get wine privately labeled. Some wineries specialize in printing up as few as a couple of cases. What is unusual and almost impossible to acquire is the finest wine, the cream of the crop, privately labeled. This is almost never done. Deerfield Ranch Winery is making available to our Inner-Circle, Partners, and Wine Club members, a few select barrels of wine for private labeling. Here is a rare opportunity for you and your friends or your company to have 24 cases of your privately labeled Deerfield wine. Robert Rex, the winemaker, will help you select your barrel, guiding you through barrel tasting of the various lots. We will help you design the label. We will arrange shipping. This is our second year of this unique program. It has been so successful we ve anticipated the demand by bottling shiners (wine without labels) of wines we bottled under our own label. These wines are included in the Buy a Barrel program for the first time, allowing you to acquire private labeled wine that has already been aged in the bottle and is ready to enjoy. All these wines are Vegan, Unfined, low histamines, low SO2, headache free, allergen free, Velcorin free, Organically made, and environment responsibly made. AVAILABLE WINES SHINERS: 2008 Merlot, Morrison Vineyard, Sonoma Valley, Organic 95% Merlot, 5% Cabernet Sauvignon We just released this wine in the tasting room, it s a hit, it s delicious and it s bigger, delivering more than you expect from a Merlot. A more idyllic setting could not be found than Ian Morrison s Merlot Vineyard. Cross the Sonoma Creek at the mouth of Adobe Canyon into this small hollow, nestled against the hills surrounded by the forest s edge. Merlot loves it here, kept happy by Ian s green organic thumb. It s always a bit cooler here than the valley floor. This Merlot responded in kind, expressing this place, this terroir, in its nose, its taste, its lush fruit flavor, and its balance. Whole berry fermentation, gentle handling and attention to the myriad details over its three-year journey from vine to bottle enhanced the magic originating in the vineyard. Barrel aged 40 months in 70%American and 30% French oak, 38% new. We haven t released it yet. It is the best Merlot we ve made since the famous 1997 Ladi Merlot. The 2007 vintage was exceptional in Sonoma, with moderate weather that allowed the fruit to ripen perfectly, producing wines with great depth and character. Quailbush Vineyard, tended by Bob and Mary Voss and their friends, lies on the slopes of the Mayacamus, east of the town of Sonoma in the Lovell Valley Road district. This is a rocky hillside oak Chaparral that faces the setting sun. This accounts for this field blend s richness and body, not so typical of valley floor Merlot. The wine was started on native yeast and was aged for 42 months in 60% French and 40% American oak barrels. The American oak pulls the focus of the flavor back from the front palate to the center, where French oak influences flavors. 3 2009 Pinot Noir, Windsor Oaks Vineyard, Russian River Valley 100% Pinot Noir Six clones: 37% # 777, 29% #115, 14% #459, 10% #114, 10% #828, 3% #24a We believe the best wines are blends. But the best Pinot Noir is 100% Pinot Noir. With Pinot we create the blend by using different clones from the same vineyard, each with it s own unique flavor and structure. Each clone is fermented separately; started on native and finished on different pure strain yeasts depending on the clone. Each has is own barrel program, using exclusively French oak barrels selected either for their aromatics or structure. The resultant blend has great complexity and interesting nuances. The 2009 Vintage was a very good vintage, producing better balanced and more elegant Pinots than either 2007 or The Russian River Valley, stretching from the Sonoma Coast to the Santa Rosa Plane, is a premier California appellation for Pinot Noir. The cool ocean influence moderates the warm summer days producing ideal conditions for this delicate grape. It has depth and character that is remarkable. This 2007 vintage is the best since the famous 1997 Ladi Syrah. The flavors are focused on your lower palate, beginning at the bottom and working their way up. We used native yeast in one batch and Rhone variety yeast in another to accentuate the dark berry, cedar, tobacco, and leather nuances so favored in Syrah. Ladi Danielik s Vineyard is in Ribli Road district in the foothills of the Mayacamus Mountains on the east side of the Santa Rosa plain in Sonoma County. Grapes have been grown in this district for over 150 years. Ladi, like earlier immigrants, recognized this terroir as special. It s a small mountain valley separated from the cool influence of the Russian River Valley and the Santa Rosa plain by a ridgeline, giving it slightly warmer days, which deepen the flavors in the Syrah. Alcohol 15%, R.S. 0.04% Retail Price $48.00 Cases available 97 Private label price $9, Equivalent bottle price $ Cabernet Sauvignon, Zukowski Vineyard, Knights Valley 95% Cabernet Sauvignon, 5% Merlot Knight s Valley is one of the least discovered appellations of Sonoma County. Stretching east of the Alexander Valley to the western slopes of Mt. Saint Helena, it is superb Cabernet country. Sonoma Cabernets are usually gentler and more elegant than their counterparts in Napa. This is because Sonoma, on average, is a bit cooler, by a few degrees, than Napa. The cooler climate produces thinner skins on the grapes. Since most of the flavors and structure of wine comes from the skins, the thicker the skin the bolder the wine. Knights Valley is warm compared to most of Sonoma and cool compared to most of Napa. The Cabernet from Knights Valley is a cross between the gentle Cabs of Sonoma and the bolder Cabs of Napa. The Zukowski Vineyard is on the edge of the valley as it starts to climb Mt. Saint Helena. Under Mark Zukowski s instinctive touch and years of experience the vines are happy here and reward us with a unique and wonderful Cabernet. Mark grows just enough Merlot to keep we blenders happy. We aged the wine 42 months in both French and American barrels especially chosen for this wine. 4 WINES TO BE BOTTLED IN SEPTEMBER, Chardonnay, Los Chamizal Vineyard, Sonoma Valley 100% Chardonnay, barrel fermented, sur-lees, gentle oak. We made Chardonnay from Peter Haywood s Los Chamizal Vineyard for the first time in Thirty years later Robert and Peter still collaborate each year on when to pick the grapes for optimum ripeness and from which rows. The wine is fermented in French oak barrels from selected coopers. Kept in the cool cave, each barrel becomes a separate batch allowing us to use a selection of yeasts, including native yeast, each providing a distinct nuance to the wine. After the completion of malo/lactic conversion, the traditional technique of Bantonnage or stirring of the lees is employed to mold the mouth feel of the wine. The 2011 Chardonnay shows restrained oak, bright fruit, layered complexity and a long finish. A perfect food wine, it is a marriage of nature and man, vineyard and cellar, expressed in a glass. They exhibit great fruit flavors and layered complexity unsurpassed by any other Cabernet in the world. It is always perfectly balanced and is never vegetive. It consistently makes a great vineyard designated wine. The 2008 vintage was gentle, less powerful than the 2007 or 2009, producing wines that are softer and more elegant. If you want a Cabernet that has great Cabernet flavor without being aggressive or ponderous this one is it. We added the Merlot to enhance the nose and bring the flavors forward. The result is a delicious wine. Retail Price $65.00 Barrels available 3 Private label price $13, Equivalent bottle price $ Meritage, Sonoma Valley 70% Cabernet Sauvignon, 11% Merlot, 9% Cabernet Franc, 6% Malbec, 4% Petit Verdot Meritage blending is the state of the art in California wine, based on centuries of Bordeaux winemaking tradition. This blend uses all five of the Bordeaux varietals. The blend is done by taste after the individual wines are barrel aged for 18 to 24 months. The blend is then returned to the barrel for additional aging. Winemaking is a like cooking. The best dishes are created with a combination of flavors, each playing on the other and adding complexity to the dish. Wine blending is the same. Each grape varietal in the Meritage blend focuses on a different place on your palate, reaching every flavor receptor, every sense was an exceptional vintage for these particular grapes and the 2009 Meritage is complex, sophisticated, full flavored yet delicate and simply delicious. It is our top wine. Retail Price $75.00 Barrels available 3 Private label price $15, Equivalent bottle price $52.08 WINES TO BE BOTTLED IN DECEMBER, Merlot Cuvée, Sonoma County 79% Merlot, 14% Cabernet Sauvignon, 7% Cabernet Franc Cuvée (Ku-Vay) means wine blend in French. When we first turned Merlot into Merlot Cuvée, prompted by the hit Merlot took after the movie Sideways, we said it was a whole new reason to drink Merlot. This still applies. While Merlot is noted for it s floral nose and gentle tannins it is criticized for its lake of structure and finish. We fixed that by the way we make our wine and by blending. The Cabernet adds structure and a very long finish. The Cabernet Franc adds lift, taking the Merlot flavors into your nasal cavity, greatly expanding the taste experience. It s what Merlot wants to be when it grows up. It remains one of our most popular wines. The 2008 vintage made gentler more elegant wines than did It was a perfect vintage for Merlot, accentuating the aromatics and gentle structure of Merlot. This is a wine that will pair with a very wide 4
5 variety of foods. The grapes are from several of our premier vineyards, including Los Chamizal, Rancho Salina, Quailbush, and Zukowski. The blend was done entirely by taste. Retail Price $28.00 Barrels available 5 Private label price $5, Equivalent bottle price $ Pinot Noir, Edna Valley 100% Pinot Noir Edna Valley is one of the premier appellations of California for growing Pinot Noir. Located near the central California coast, the hot summer days are chilled every afternoon from cold sea breezes off the Pacific. The combination of daily hot and cold weather produces Pinot Noir that is rich in the mid-palate while still retaining the gentle femininity that is so important to the nose, flavor and structure of good Pinot Noir. We bottled this wine under our sister winery A portion of the lot we returned to barrel for additional aging. Wine ages better in a barrel than it does in the bottle. The additional age concentrated the flavors, rounded the mouth feel and gave the wine additional character. Retail Price $24.00 Barrels available 5 Private label price $4, Equivalent bottle price $ Red Rex, Sonoma County (We ll name it Your blend or Your Cuvée on your label) 33% Syrah, 26% Cabernet Sauvignon, 17% Merlot, 14% Cabernet Franc, 4% Petit Verdot, 3% Petit Sirah, 3% Dolcetto We shouldn t have to say much about this wine, as everyone seems to know it. It is our most popular wine. Each varietal plays a roll, fitting like a puzzle, bathing your palate in flavor that reaches every nook and cranny. It s full bodied without being aggressive. As usual, Cabernet, Syrah and Merlot dominate the new 2008 Red Rex blend, although, since the wine is blended by taste, the Syrah, for the first time, is in greater proportion than the others. This give-and-take in the blending keeps Red Rex stylistically the same from vintage to vintage while recognizing the uniqueness of each vintage. Red Rex will fit any occasion, by itself or with almost any food. It is gentle enough for the neophyte and interesting enough for the oenophile. You can give the blend your own name on your label. It made our job easy. There was nothing to fix and the blend is the better for it. This wine could sell for much more than we are asking. Seven of our vineyards contributed to the blend. The 75% Cabernet is itself is a blend from different vineyards, allowing us to balance taste, structure, tannin, and finish. Perfection was achieved with the addition of that little one percent Syrah, like adding a pinch of pepper at the end of your soup, not enough to notice, just enough to matter. This 2007 Sonoma Cabernet will please everyone and will age well. Retail Price $38.00 Barrels available 5 Private label price $7, Equivalent bottle price $ Super T-Rex, Sonoma County (We ll name it Your blend or Your Cuvée on your label) 63% Sangiovese, 16% Cabernet Franc, 10% Cabernet Sauvignon, 7% Merlot, 4% Dolcetto We haven t made a Super T-Rex since The 2008 Vintage Sangiovese and Cabernet Franc kept whispering, Super T-Rex, Super T-Rex in our ears. Often the wine tells you what it wants to be and we couldn t ignore this. When we started the blending trials the wine came together naturally and effortlessly. The result is a Super Tuscan style blend that is a perfect marriage of Italian origin Sangiovese and Dolcetto and their Bordeaux cousins. It s like strawberries with a drizzle of dark chocolate, and reaches every corner of the palate. Aged almost four years in artisan-coopered French and American oak barrels, Super T-Rex gives homage to the great Brunello wines, the only wines in the world regularly aged as long in barrel as Deerfield wine. As part of the Mayacamus Mountain range that separates Sonoma from Napa, this place should have it s own appellation. Cabernets from the western slopes of the Mayacamus are unique and special. They profit from the thin red rocky volcanic soils of the mountains. They are above the fog line. They develop a richness and structure than doesn t develop the same elsewhere. This is an exceptional Cabernet from an exception vineyard and vintage. We knew this going in so we doted over the wine. It s the state of our art for Cabernet. In 2006 we made it into a Meritage was such a great vintage for Cabernet we let it dominate the blend. Just a touch of Merlot was added to increase the nose and first taste impression. 8 HOW TO CHOOSE, SECURE, AND LABEL YOUR PRIVATE BARREL OF WINE 1. Some of the wines listed have already been bottled. We call them shiners - wine bottled without labels. Most Deerfield s wines use silk-screened labels, printed directly on the bottles. This must be done before the bottles are filled. We often have wine left over and will bottle that wine as shiners. The advantage is that the wine has been in the bottle for a while so it is ready to go. The time frame is also shorter because we typically bottle four times per year. The shiners are available all year but are limited to what is on hand. The list of available wines for private labeling is split between shiners, and those wines scheduled for bottling. 2. Visit the winery to taste and reserve a barrel: You can make arrangements to come to the winery and taste the wines from the barrels. If you can t come to the winery we can send you small samples. The number of barrels available for each wine are limited and will be reserved on a first come, first served basis. There is a one-barrel minimum, which is 24 cases. 3. Payment Terms After you select your wine, a 50% deposit is required. The balance is due before the wine labels are printed. 5. Label Design: Each bottle has a front and a back label. We can supply a template if you want to do your own label design, or we can do it for you. Your private label wine is required to be a legal label approved by the Federal Alcohol and Trade Bureau (TTB). Certain information must be printed on the label in a specific fashion. There is also limitation on what can be printed or said on a label. Samples of custom front labels we have produced can be seen on our website at: We use three different label dies depending on the shape of the bottle your wine will be bottled in and the layout of your label. We can work with you on special projects and have new dies made. They cost a few hundred dollars each. 6. Sharing barrels: The minimum order is one barrel or 24 cases. You and your friends or associates can share a barrel, but the label has to be the same on all the bottles. We will accept multiple payments. One person in a group should be the spokesperson. Barrel tasting can be arranged for a group. We can ship to multiple addresses. 7. Bottling the wine: We bottle several times during the spring and summer. To maximize efficiency we gang several bottlings together. Your wine, if it not already bottled, will be bottled on one of these dates, which are scheduled months in advance. Every effort will be made to schedule the bottling of your wine at the earliest opportunity after you select your barrel. No wine is bottled during the months of September, October, November or December. We have the capability to bottle a barrel of wine by hand. Such special hand bottling can be scheduled for an extra $750 per barrel. 8. Shipping and Storage: We can arrange shipment of your wine. We do not pay for shipping. Shipping costs vary by method and distance. You can also pick up your wine. Some places are impossible to ship to directly, like Canada. We do not provide storage. We can arrange storage in the commercial warehouse we use for our wine. Wine must be stored properly. It is perishable. It should not be stored in a garage, in a damp area or in any area where the annual temperature varies more than a few degrees. Ideally it should be stored between 55 F and 65 F. We age our wine in the barrels at 60 F. White wine can tolerate temperatures up to 85, red wine up to 95. Higher than ideal temperatures may increase the rate at which the wine will age and may eventually cook the wine. Frequent temperature fluctuations can be damaging. Commercial storage facilities designed for wine are available in most cities. An insulated closet in the center of the house can be turned into a wine cellar in many locations of the country. 9. Limit of Liability: Deerfield Ranch Winery LLC (DRW) warrants its wine to be suitable for consumption when it leaves the winery. DRW is not responsible for damage caused by improper storage of wine after it leaves the winery. The customer approves labels, and DRW is not responsible for errors or omissions in labels.
