1 A Great Harvest Yields Great Wines! The harvest of 2016 was another tough year with several inches of rainfall at the end of the growing season. Though not ideal, we still had a beautiful crop and we cannot wait to share the end products with you starting this month with our newly released wines! St. Julian s approach to winemaking over the years has transformed to benefit our growers and members. We are still producing our award-winning classics, like the Herons and Simply wines; but we are also focusing on super-premium, small batch Artisanal winemaking! We work closely with our growers and have the luxury of sourcing many small parcels of top quality fruit, optimizing varietal expression in each and every lot. We keep wines from each vineyard separate during the winemaking process, which allows us to better evaluate each vineyard and adjust growing techniques from vintage to vintage. This also provides us with a spice rack from which to select blending components when making wines. Countless bench trials are conducted in our lab trying different combinations of wines. Once the perfect combinations are determined, the final blends are assembled in the cellar; creating exciting new single varietal and blended wines for all of us! With the start of 2017, we are proud to release some of our finest wines exclusively to our Wine Club Members. We are honored by your continued support and enthusiasm for St. Julian and look forward to sharing more exciting experiences and delicious flavors in the coming months promises to be a great year! 2 SPOTLIGHT ON: 2014 Big Barrel Chancellor 2014 Big Barrel Chancellor Here at St. Julian, we have the luxury of sourcing many small parcels of top quality fruit, optimizing varietal expression in each lot. Each lot is aged separately and allows us to handpick individual barrels for bottling, depending on what characteristics Nancie is looking for in the wine. For the 2014 vintage of Chancellor, one lot of wine was put into a big 132 gallon barrel (called a Puncheon) for aging, as opposed to the standard 70 gallon size. Using a larger barrel increases the volume to surface ratio of wine to oak contact. This means there is far less interaction between the wine and the oak. The result is a BOLD and MEATY wine with jammy brambleberry flavors, a hint of leather and a soft finish. The Big Barrel Chancellor is an example of artisanal winemaking at its best! Only 53 cases of this wine were made, exclusively for our Wine Club members! In 2015, we created 2 Paws, a semi-sweet red blend, to benefit our local no-kill animal shelter. This wine quickly sold out and we knew that when we released it again, we wanted to do it bigger and better. So to sweeten the release of this year s 2 Paws Red, we have also created the new. Those of you who love a Moscato wine will love 2 Paws White! In keeping with our commitment to only using local fruit, we chose to make this blend from Traminette and Valvin Muscat. Valvin Muscat is newer to us, with this year being only the second harvest of this small lot variety. Traminette was the perfect choice to blend with the Muscat, as they both have beautiful aromatics and tropical flavors. The result is a semi-sweet wine with 5% residual sugar and a bright acidity. 3 s ASK Winemaker Nancie Is there a way to make a wine taste sweeter if it s not sweet enough out of the bottle for my taste? George Nielson in Deluth, MN We are always creating new wines for our members and always have something new and exciting to offer. However, this can be very challenging! Wine is very personal and what might be too sweet or too dry for one person, might be the exact opposite for someone else! So here are a few tips if you ever find a wine needs a little tweaking to better match your palette. Members of St. Julian St. Julian has Wine Club members across the nation, each with a unique connection to the winery. It s through these individual stories that we realize we are part of a shared culture; one where the experience of enjoying wine makes life more beautiful. Share your SJ story and connect with us! Cheers! Jason Nancarrow * Kalamazoo, MI IF A WINE IS TOO DRY: You can always make a wine sweeter. If you add a few drops of simple syrup ( a mixture of sugar and water that is boiled down) or honey to the wine, the sweetness level can be increased to your individual liking. You can also play winemaker and blend the wine with a sweeter wine, like adding some port to red wine or sherry to white wine. Chilling a red wine will make the tannins more muted and appear smoother. This time of year, try mulling it or adding it to hot chocolate. IF A WINE IS TOO SWEET: Sweetness can be counteracted by acid. An easy way to balance sweetness in wines is to make a sangria or wine cocktail by adding citrus juice or brandy. This will tone down the natural sugars. You can also spritz it by adding some sparkling water. The bubbles often cut down on the sweetness. Another sure fire way to tone down sweetness is to pair the wine with spicy food. This will offset the sweetness and makes a delicious complimentary pairing. Try serving the wine at a slightly warmer temperature. This will soften the fruit characteristics and highlight the vineous notes, making it taste less fruity which you may detect as sweetness. In the Wine Club office, we have a coffee mug that says There is probably wine in here. And sometimes there is! If you are like us, you ve probably consumed wine out of coffee mugs, mason jars, red solo cups or straight from the bottle and enjoyed every drop. However, if you are wanting to really taste the wine in a manner that highlights its unique flavors, the best thing you can do is drink from a glass meant for that style of wine. Here is a basic guide on how to pick the right wine glass in order to enjoy a great wine even more. RED WINE glasses are often shaped with a wider bowl and larger opening. These wines tend to be fuller bodied and have tannins from contact with the grape skins. The wider glass allows more oxygen to come into contact with the wine which aids in properly releasing the aromas and flavors in the wine. WHITE & ROSE WINES are usually served chilled and their glasses often have smaller bowls and rims and are shaped like a tall U. This allows their delicate aromas to be released while reducing the contact with oxygen, which can mellow the fruit characteristics and warm the wine. Traditional Rose glasses can be slightly flared at the lip, but since these wines are made in a similar process as white wines, they can easily be enjoyed in a white wine glass. SPARKLING WINE glasses or flutes are tall and thin with a slight lip that serves to help preserve the bubbles- and they are festive! Although this shape helps retain the bubbles, it does limit your ability to fully appreciate the aromas. As spakling wine moves away from just celebratory, it s becoming more common to drink it from white wine glasses. This allows the wine to come into contact with air to release the flavors, while still holding the fizz. Another way to keep your bubbles- add a piece of fruit for the carbonation to grab onto. STEMLESS GLASSES are all the rage. These offer the same shapes of the traditional bowls, but with a modern style and limited risk of breakage. Wine may warm faster than with stemmed glasses, but many people find that their durability make them easier to handle. If using with a chilled wine, it s better to set the glass down between sips so that your hands don t warm the glass. These glasses are perfect for indoor/outdoor use and reflect a style more in line for casual entertaining. DESSERT WINE glasses are traditionally cute and tiny. Dessert wines are much sweeter and often fortified with Brandy, which gives the wine a higher alcohol content than normal wine- usually at least 15% ABV. The smaller glasses directs the wine to the back of the mouth so the sweetness doesn t overwhelm your tastebuds. Also, with the higher alcohol level, your portions should be smaller to avoid wine flu.

5 St. Julian Wins Again! Thomas Jefferson fathered our constitution, helped champion the international concept of human rights and was a seminal figure in America s cultural, culinary (including wine) and agriculture history. In honor of Jefferson, the Jefferson Cup Invitational Wine Competition is an INVITATION only event that honors the best of the best among the wineries from all of America s wine regions. By selecting both vinifera and hybrid varietal wines for the Jefferson Cup awards each year, the goal of this competition is to respect the diversity of American viticulture and Thomas Jefferson s own acceptance of native varieties RSVP and required hybrids. St. Julian was once again included in this prestigious event. The 2016 $5/ competition person included wines from 27 states. This year, 55 wines were selected from only 9 states as Jefferson Cup nominees. Of these, only the top 24 were selected by six judging committees to receive Jefferson Cups; two of which went to St. Julian! Sweet Nancie and Solera Cream Sherry took home the top honors! In addition, the 2015 Braganini Reserve Traminette, 2015 St. Julian Reserve Riesling and the 2015 St. Julian Late Harvest Riesling were all nominated and received Double Gold. St. Julian is proud once again, to add more Jeffereson Cup awards to our impressive collection of honors. 6 Winter Recipes HONEY SRIRACHA CHICKEN Paired with The sweetness of the honey and the spicy of the sriracha compliments the tropical sweetness of the wine. Perfect for a cold winter s day or to spice up your Valentine s Dinner. 3 chicken breasts, diced 1/3 cup cornstarch 1 cup water 1 T. sriracha (depending on how spicy you like it) 5 T. soy sauce 1 T. minced garlic ¼ cup sugar 3 T. honey 2 T. cornstarch + 2 T. cold water Cooked rice for serving In saucepan, combine 1 cup water, sriracha, soy, garlic, sugar and honey. Bring to boil. Whisk together the 2 T. cornstarch and 2 T. water until dissolved. Slowly add to sauce pan and stir until thickened. Reduce heat to low. Add diced chicken and 1/3 cup corn starch to a large plastic bag. Seal and shake to coat chicken. Drizzle a large pan with oil over medium heat. Add chicken and sautee until browned and cooked through. Add sauce and stir to coat. Serve over rice with cilantro. raspberry s mores Paired with BR Cabernet Franc The bright red cherry and raspberry flavores of the wine makes for a fun pairing with the chocolate, marshmallow and fruit of the s more. 8 graham crackers, broken in half 8 large marshmallows Hershey s Chocolate bars, broken into squares 1 cup fresh raspberries Adjust rack to middle position of oven or toaster oven and set heat to broil. Arrange marshmallows on top of 8 crackers and chocolate on top of the other 8 crackers. Broil for 30 to 60 seconds or until marshmallows are golden brown and chocolate starts to melt. Top raspberries onto the melted chocolate cracker and then put the marshmallow and chocolate raspberry crackers together to make the s more sandwich. A sweet treat that s perfect to make any day a little brighter! Also delicious when served with 2 Paws Red.
