Vintage after vintage, Gilles has been ceaselessly improving the quality of his wines. Although part of his vines are classed as AOC, this talented wine producer has deliberately chosen the Pays d Oc IGP denomination to benefit from greater freedom and produce the wines he loves. In explaining the success of his wines Gilles always put forward team work ethic and the total dedication of each team member to his tasks. Gilles knows like no other producer in Southern France how to use new oak and age wine. His wines all have a strong aromatic personality, freshness and great balance. This location affords a range of exposures from north-facing, to full southern exposure. Underneath these sites is the classic soil of Faugères schist. Soil, exposure and climate, combine to allow Brigitte to makes wines that suit her palate, what she calls, Vin du Nord in the South. Brigitte is meticulous in her farming and winemaking. Her vineyards are certified organic and everything is harvested by hand and transported in small bins. Brigitte prefers native yeast, and whole cluster fermentations as well as aging in tank. All wines are balanced, rich and soft, with abundant fruit and spiciness, complex structures, fine tannins and hints that they will continue to evolve over a number of years. In choosing a name for her Domaine, Brigitte took as inspiration an ancient goddess of the celtic tribes of the region, Cébenna, mentioned by Julius Cesar in the first century BC. 3 LANGUEDOC Domaine Alain Chabanon After studies in agronomy Alain crossed paths with one of France s most talented wine producers, Alain Brumont, founder of the Château Montus at Madiran, allowing him to imbibe from his experience. At the end of the 1980s, Alain bought his first parcels of vines in the terrasses du Larzac and produced his first cuvées in The respect for the life in the soil is Alain s first priority: The Domaine has been organic since 1992 and has adopted biodynamic principles since Yields are kept low and the soils are ploughed. The work in the cellar is admirable too: long ageing in old oak barrels or in concrete eggs for its top cuvees. Alain aims to produce exceptional wines that are subtle and elegant, with a true identity of their terroir,. Wines that would become even more complex after several years but that are delicious young. Without a doubt this domaine is among the top 10 in Languedoc-Roussillon. Clos du Serres Sébastien Fillon was born in the Loire and first worked as an engineer. At 30, he switched careers and became a winemaker. In 2006, Sébastien and his wife Béatrice bought Domaine le Clos du Serres in the relatively new Terrasses du Larzac appellation. Serres translates as hills in Occitan dialect. There s everything one needs to make great wine: diverse and arid soil, deep water and a very special climate where the sun is tempered by the proximity to the limestone Larzac plateau which brings in cool air during the summer nights. This large shift in temperature between day and night helps the grapes mature slowly, increasing complexity and maintaining acidity. Clos du Serres produces terroir-driven wines with lovely fruit and freshness. 4 LANGUEDOC Château Pech Redon «I like to feel that La Clape has made me. The strength of the terroir has taught me modesty. He is the one who decides and makes his mark. The winemaker is only an artisan who makes shine what Mother Nature wants to give us. Year after year I gained some serenity. And little by little it came upon me that I had to respect this wild nature around me. Over time I understood something: if you don t respect nature, you don t respect yourself. So I stopped using chemicals and began to farm organically. It is so obvious now that the estate is in the middle of a protected natural area. Being organic allowed me to revitalize the soils, bring more balance and vigor into the wines, and helped me live in harmony with this land that welcomed me. I like to know that La Clape was an island long time ago. Perhaps even an archipelago. untouched massif from where the Mediterranean sea can be seen. 5 LANGUEDOC Mas Champart Isabelle Champart and her husband Matthieu arrived in St. Chinian in 1976, from the north of France. Their estate began as a run-down house surrounded by 8 ha. They slowly developed their vineyards, and until 1988 they sent their grapes to the coop. Altogether they now have sixteen hectares. They bottle some of the most nuanced, pure, and delicious wines in the Languedoc. The Champarts often steep chalk-clay hillsides that favor Mourvedre and their nearly 300m-high rocky plateau with its walled-in Syrah and Carignan conduce to blends of unusually elegant interplay between fruit, animal, and mineral elements.. Mas de Martin Christian Mocci has left his native Corsica and a position as an history teacher to develop this estate from Coteaux du Languedoc. He has chosen to produce red wines with élégance, freshness and digestibility. Christian Mocci s aspiration has been to make the best possible wine in the best possible way (low yield, bio-dynamic farming) from limestone-rich soils located close to the famous enclave of Pic Saint Loup. Average vines age : 25 yrs Type of viticulture : Responsible farming production : 850,000 bottles Domaine Montrose Domaine Montrose is a family wine estate founded in 1701 when the "Three Lizards" coat of arms was given to the ancestor of Olivier Coste. The name Montrose refers to its geographic location on a volcano (Mont) and to the pink (Rose) flowers almond tress surrounding the vineyard. Montrose is located a few kilometers away from the Mediterranean sea, on the great "Côtes de Thongue" terroir. Montrose is actively involved in preserving and enhancing its terroir s biodiversity. Montrose s wines elegance and authenticity comes from this harmony between terroir s diversity, benefits from the Mediterranean climate and the knowledge Coste s family has gained through generations. LANGUEDOC 7 Surface : White : 3ha Chardonnay Red : 1ha Pinot noir Soils : Clay-Limestone Average vines age : 35 yrs Type of viticulture : Organic production : 18,000 bottles Domaine de Mouscaillo Domaine de Mouscaillo, created by Marie-Claire and Pierre Fort is one of the few independent wine growers in the small village of Roquetaillade, in the Haute Vallée de l Aude. This région is influenced by both the mediterranean and Pyrennes climates. Pierre Fort s first vintage was in 2004, and with just four hectares, three of Chardonnay and one of Pinot Noir, he is very much his own man, with a vineyard that he can manage without any extra hands. Although he was born in Roquetaillade, he has worked in other vineyards, notably spending ten years at Chateau de Tracy in the Loire valley. There he made friends with the iconic winemaker, Didier Dagueneau, who encouraged him to make his own wine. Having worked in the Loire, Pierre likes acidity. He is quietly ambitious: 'I wanted to do something better than the others, and I couldn t do that with sparkling wine'. Far from any ideology or dogma, Pierre is working in harmony with nature. He respects its cycles; technique and execution always come after careful observation. The wines are concentrated with firm intensity and tightly knit fruit and with always good acidity. While Chateauneuf remains the source of my orientation, Burgundy is my inspiration. The purity of fruit and the minerality in those wines is something magical. Think of Henri Jayer!. Claude has already redefined the potential of Minervois, and bottled what are almost certainly the finest and most exciting wines ever grown in that appellation, not to mention their representing extraordinary values. Sandwiched between the warming Mediterranean and the cooling northern mountains, Larzac is blessed with an ideal mesoclimate for indigenous grapes Carignan, Grenache and Syrah. That makes for a longer, tempered ripening season and grapes that retain their balance and acidity. Julien Zernott and Delphine Rousseau acquired this estate in He was well established in the Loire Valley as a consulting oenologist. Julien and Delphine farm old stone terrasses the right way. They work by hand, avoid chemicals in favour of plant-based vine treatments. They farm in limestone-rich northfacing vineyards that permit the crafting of wines with a degree of freshness to complement their Mediterranean warmth. Equal to the rugged terrain and dramatic scenery, the wines of Pas de L Escalette are elegant, rounded and well balanced. They display wonderfully fresh and fragrant savoury aromatics. 8 LANGUEDOC Plo Roucarels Roc d Anglade Plo Roucarels means small rocky plateau in occitan. It is run by two young and passionate wine makers, Julia Hubrich (from the former East Germany) and Julien Gil. This domain is located a few kilometers from the medieval citadel of Carcassonne, near the Pyrenees mountain range. The warm Mediterranean climate is tempered by some Atlantic oceanic influence. It allows Julia and Julien to produce wines based on elegance and finesse. Rémy Pedreno is an intriguing guy; unusually for someone who is now so enthusiastic about wine, he did not touch a drop for the first 22 years of his life. He made his very first wine in 1996 from some bunches of Carignan, just enough for one barrel. And in 1999 he went into partnership with René Rostaing from Côte Rôtie who gave him carte blanche. In 2002 he made his first wine from his own vines. His vineyards are organic, but not biodynamic; everything is handpicked; he uses natural yeast and keeps the sulphur levels as low as possible. And he enthused about Carignan; it s the Pinot Noir of the Languedoc, a fabulous variety. Remy Pedreno is a combination of modesty and confidence, and displays commitment and dedication. He never analyses his grapes, only tastes them and he states very firmly that he makes wine according to his own taste. He is not looking for concentration in his wines, but sheer drinking pleasure. 9 LANGUEDOC White: 2ha Chardonnay, Roussanne, marsanne, Red: 6ha Syrah, Grenache, Mourvèdre Limestone, Clay- Limestone. 25 yrs Organic 20,000 bottles Domaine St Sylvestre Vincent Guizard became involved in viticulture from an early age, working in the vines with his grandfather and, in the late 1990's, he worked with Olivier Jullien at Mas Jullien. From 2003 to 2010, he was part owner of Domaine de Montcalmès. At the end of 2010, Vincent decided to break away from Montcalmès, taking his 7 hectares of vines and creating Domaine Saint Sylvestre. His vineyard is scattered amongst the wild, oak-covered hills of the Terrasses du Larzac just a few kilometres north-east of Aniane - historically one of the real hotbeds of Languedoc fine winemaking. His wines are in such demand that they are available only on allocation, to his loyal band of customers. It is remarkable that Vincent has gained such a cult following in such a short space of time. But his real passion was wine. He started La Terrasse d Elise in His vines and wines are cared for as naturally as possible, with minimum treatments in the vineyards, and with no fining, natural yeasts and very little sulphur used in the winemaking process. Xavier s specialty is to blend terroirs from a same grape variety to best express its character. Although 85% of Xavier s land is within the Appellation, all his wines are labelled as Vin de Pays because they are mono-varietal and thus do not comply with the local AOC. Clay-Limestone. 25 yrs Traditional 1,375,000 bottles The vineyards of Château Ventenac lie in the foothills of the 'Black Mountain', north of Carcassonne. The climate here is an interesting mix of Mediterranean and Atlantic influences. Alain Maurel established his winery here in 1973, blending classic Bordeaux varieties with their Mediterranean cousins, Syrah and Grenache. His son-in law, a former consultant, joined him in 2009, bringing new ideas in the vineyard and the cellar. From the fruit-driven single grape variety bottlings to the top cuvee Mas Ventenac the wines are fresh, bright and balanced to bring immediate pleasure. Caravent = Caravanserail - a roadside inn along the silk/spice route. Luc and Marie Michel of Zélige-Caravent began in 1999 with three hectare of vines in Corconne, a small village in the Languedoc, at the foot of the Cèvennes. Zelige- Caravent is the realization of a dream as well as a second career for its proprietors: Luc Michel reconnecting with his family s roots; his wife Marie still finding time to work as a painter (and responsible for the Domaine s dramatically distinctive and diverse labels). Today the domaine comprises 15 hectare, made up of 25 different plots, and offers a wide range of different grape varieties native to the Languedoc: Aramon, Alicante, Cinsault, Carignan on top of syrah, grenache and mourvedre. His son Julien, who has worked for the Mas Amiel, joined him last year. The high-elevation vineyards southeast of the village, where much of their fruit grows, preserves freshness and warded off dehydration in 2009, but in general it's clear that old vines, exceptional sites, and meticulous vineyard work combine at this estate to minimize disparity across vintages in ripening-curve or quality in general. 14 ROUSSILLON Domaine des Enfants Domaine des enfants sauvages Domaine des Enfants was founded by Marcel Buhler, a Swiss-born perfectionist who arrived in Roussillon in More than half of his 23 hectares of vines, located in 20 parcels in seven communes, were planted before the Second World War, and some of the vines were even planted over 100 years ago. From the beginning his intention was not only to make great wines, but to also preserve the cultural landscape and heritage of the region. He tries to show other ways of cultivating using horses and plows instead of herbicides, exhausting handcraft instead of mere efficiency. 15 ROUSSILLON Mas Mudigliza After a stint in Bordeaux, Dimitri Glipa moved in 2005 to the vineyards of Roussillon, in the highly coveted, rugged and dry area known as Fenouillèdes. Like many talented winemakers in the area, Mas Mudigliza produces wines from the best terroirs with altitude and from old vines that impress with their intensity, mineral complexity, purity, freshness and generosity. The farming is organic and Dimitri works the soil by hand. His yields are ridiculously low, but it is the only way to give his wines the level of concentration and complexity he seeks. 16 ROUSSILLON Domaine Modat La nouvelle donne Philippe Modat is a Catalan who has returned to his roots. His grandfather had vines and Philippe s legal studies in Bordeaux triggered his own interest in wine. He bought land and vines in 2007, in partnership with his father, from a coop member in Cassagnes, on a 300 metres altitude plateau in the Agly valley. Philippe is converting the vineyards to biodynamic viticulture. The winemaking is carried out in a custom-build cellar made of eco-friendly materials. The soil of gneiss is well suited to produce elegant white wine and reds with silky tannins and a refreshing character. Wilfried Walt, a former student in biochemistry in Montpellier and in oenology in Dijon, started his domaine in He bought 5 hectares of old vines about to be uprooted near Calce, at the Done pass (Col de la Done). His farming is organic, respectful of the environment. His winemaking is modern, with cold pre-fermentation maceration and soft extraction. Exposed to wine at an early age (she grew up near Côte Rôtie), she earned her degree at Montpellier while doing apprenticeships with Yves Cuilleron and Pierre Gaillard in the northern Rhone. The domain is located in the valley of Agly, on shallow schist soils (the bedrock is less than one meter down in most parts of the vineyard). 30 different parcels make up the domain with primarily a northern exposition on the side of the Força Real Mountain, protected from the ocean wind and humidity. 40% of the vines are more than 95 years old! 19 ROUSSILLON Les Terres de Fagayra La Tour Vieille The Gallets, owners and winemakers of Domaine le Roc des Anges, have acquired in 2007 a tiny new Domaine, Les Terres de Fagayra, giving Marjorie s husband, Stephane, a chance to utilize the special talents for Maury that he honed as winemaker while at nearby Mas Amiel. This little known appellation yields wines of great structure and flavour. These are fortified wines made in a similar style to Port. Their three cuvees are stunning. More than good fortified wines they also display freshness, brightness and mineral smokiness. To say that Stephane is off to a flying and successful start would be an understatement. The Domain was created in 1982, resulting from the union of two established wine producing families with Vincent Cantié already at Collioure and Christine Campadieu joining him from Banyuls-sur-Mer. Their two Catalan families have been linked to wines for many générations. The chai is in the heart of their vineyard in the locality of la Tourette (the little tower) over-looking Collioure. This domain s dozen hectares of vineyards is meticulously farmed by hand. The low dry schistous stone-walls and steep slopes prevent any form of mechanisation. Today, Anne-Charlotte Melia, the granddaughter of the founder, and her husband, Laurent, oversee the estate and the winemaking. I was born under a foudre, she told us. Our vineyards are at the top of a hill, facing north, she explains. This and the sandy soil (similar to close by legendary Château Rayas) give our wines freshness, elegance, and delicacy. 23 RHONE Chateau Mas Neuf Chateau Mas Neuf Rhone Paradox The position of Château Mas Neuf, half way up the southern flank of the Costières de Nîmes is very special. The exposure to the sun is similar to that found in the Languedoc or Provence, but the proximity of lagoons and the Mediterranean Sea allows it to take advantage of warm sea breezes drifting up from the sea. This unexpected coolness is a real singularity and is called by its passionate manager, Luc Baudet, the Rhône paradox. It also has good terroir and old vines, factors which have all facilitated lightning progress in less than a decade. 30 Champagne Sanger To rebuild the regional heritage after the devastation brought to Champagne by the phylloxera, there seemed to be only one solution: training new generations to winegrowing. On November 3rd 1927, thanks to a donation, the gates of Avize wine school opened for the first time to 13 students for a training in wine-growing and wine-making. In 1952, 16 former students got together, and set up the former students cooperative. For them, the cooperative and the school should be one single entity. They decided to bring every year to the school some of their still wines and their enthusiasm to make wine with the students in the school. The diversity of the geographical origins of the grapes increased along the years. Meanwhile, from the end of the 50s, the school has bought or rent vineyards in the neighborhood of the school, to reach its current surface of about 10 Ha. 32 LOIRE VALLEY Clos del Elu Totaling 22 hectares spread over 30 different plots; Clos de l Elu is located near the village of Chaume, famous for its sweet style of botrytized Chenin Blanc. Clos de l Elu was purchased in 2008 by Thomas Carsin, an agricultural engineer who worked in various cellars all around the world and Grégoire du Bouëxic, an entrepreneur who was equally passionate about wine. Thomas farms Clos de l Elu organically with continuing experiments with biodynamics. In this warmer and drier part of the Anjou red varieties, such as Cabernet Franc, Gamay and Grolleau are widely cultivated along side the traditional Chenin Blanc. Most of the red wines are whole cluster fermentations. Only natural yeasts are employed, macerations are long and the wines age in tank, barrel or amphorae. Sulfur usage is minimal. Wines are elaborated with passion to obtain the best expression from the soil. Domaine Fosse sèche The very old vineyard of «Château de Fosse-Sèche», located in Brossay, Val de Loire, dates from the 13th century. It has been farmed, since 1998, by the Keller-Pire Family. Organically run the estate has 45 hectares in total on clay/flint soil and oxides of iron. 17 hectares are planted under vine with the surrounding land (a national bird sanctuary) planted with sunflowers, cosmos and other wild flowers. Guillaume and his brother Adrien vinify and age their wines in large old beer transport tank without any added SO2. The wines are rich, complex, and well balanced; these are some of the most terroir-oriented wines in all of Saumur.
