Tell TWo friends, Who Will Tell TWo friends, and so on... help, at's right, we need your help. let me share with you three very important letters. o.n.d. ese simple letters stand for october, november and december. So what? ese three simple letters to Wilson creek mean, "champagne season". again, So what you ask? first and foremost, we need your help to spread the word about our amazing almond champagne and it's brother and sister the Peach Bellini and orange mimosa, as well as the new baby of the family our awardwinning Sparkling Sangria. ok, again, "What do you want from me?" you ask. Simple, "tell a friend". We have worked incredibly hard to make it available across the united States and many would be fans don t know yet! So, i am asking each and every one of you to tell a friend about the almond champagne products we have available in 32 States! omg, i almost said holiday season and it is way too early to start using the "h" word. many of you send our champagne all over the nation to friends and family for the "h" word. We sincerely thank you for that. What we want you to do is introduce your friends to our family of products and help them bring sparkle to their celebrations. Tell a friend via Twitter, facebook, smoke signals, or pick up the phone and actually call them personally. Whatever it takes, we just need to get the word out that our champagnes are available in 32 states and your friends have friends that will want to buy some for the "h" season and will be happy that you told them. We have worked really hard for years to get it on the store shelves in 32 states. e problem is this, if we do not get it off the shelf, the stores will take it off the shelf, and we will never get it back on. help us reach 200 million people. 4 W inemaker s c orner 2013 HARVEST with your Winemaker Etienne Cowper We are looking forward to great wines from this harvest! no anti-fungals could be used because any chemicals so close to harvest could cause the fermentations to go south on us, creating off odors and flavors in the wine. Worse yet, we could easily have had stuck fermentations. is could also be caused by the nasty bugs (lacto-bacillus) that often accompany rotten grapes. We used every resource at our disposal to rescue the vintage. much of the credit for our success is to the credit of Greg Pennyroyal, our very own Bio-man. he saved the day by using all sorts of organic controls. he sprayed the grapes with milstop which is like very expensive baking soda. is kept the mold and rot from getting any worse. he sprayed grapes that were getting too hot and starting to dehydrate with Surround, a very white form of clay, that shaded and cooled the grapes. We even fought fire with fire and used a product called Serenade which is a benign bacterium that out competes the mold rot and spoilage bacteria on the grape bunches. e proof is in the pudding. We are making some great wine this year at Wilson creek including a barrel fermented malbec. We had to fly from the seat of our pants this harvest and it worked! e 2013 harvest at Wilson creek started on the 26th of august, about nine days later than last year. cool summer temperatures slowed the ripening of the grapes a bit. e grapes seemed happy and so were we. it s easier when the grapes ripen gradually and we can pick them at our leisure. Just about the time we were finished harvesting our white grapes (exclusive of cabernet Sauvignon for White cabernet) things changed radically. instead of cool mornings and evenings influenced by gentle ocean breezes with good ripening heat in the middle of the day, we had monsoon conditions. it was very hot and very humid here in Temecula with very little cooling at night. it felt like we had transported to a tropical rain forest. e grapes were essentially in a pressure cooker. e hot humid weather created a perfect storm for us. not only was the harvest compressed with almost all grape varieties ready to harvest at the same time, we were also fighting the perfect conditions for mold and rot. We had to fly into action. We dropped every infected bunch of grapes. is was a lot of work! We were very limited in what we could use to protect the grapes from these horrific conditions. 6 EGO S BE ST N DI SA CHEF rd PLACE U-T Readers Poll We would like to give a big shout out to our executive chef, Steve Stawinski. congratulations on winning 3rd place in San diego s BeST u-t Readers Poll 2013! not too shabby, especially since we are not even in San diego! if you haven t yet, visit the creekside Grille for lunch and try chef Steve s meticulously handcrafted, Wilson creek wine influenced menu that uses locally grown, seasonal ingredients. you be the judge. creekside S executive chef PReSenTS FLATTENED GRILLED RIB ROAST Pairs well with 2010 Winemaker s Select Syrah 1 four bone rib roast kosher Salt Black Pepper Granulated garlic BaSTe 1/2 cup melted unsalted butter 1/2 cup extra virgin olive oil 1 tsp minced garlic 1 tsp brown sugar Trim the fat cap off of the bones of the roast. Remove the 2 outer bones. Separate the 2 remaining bones and leave them attached. Season all sides of the roast with salt, pepper & granulated garlic or your favorite seasoning. On a gas or charcoal grill place 2 bricks, evenly spaced on the grates over the heat source. Support another grill grate on the bricks. Place the seasoned beef on the elevated grate. (elevating the grate will prevent the meat from burning.) Cook the beef until it just starts to drip fat into the fire. Turn the beef over and baste with the olive oil-butter mixture. When the second side begins to drip fat turn the beef over again. Do this until a thermometer inserted into the center of the beef reads 105 degrees. Grill each edge of the beef to sear then continue to grill the top and bottom until a thermometer inserted into the center reaches 115 degree. Remove the beef from the grill and allow to cool for 15 minutes. Slice thin to serve. Enjoy!
