3 FROM OUR HOME TO YOURS... as always TIDBITS from Bill spring Cleaning As i was cleaning out the garage as one of my honey-do projects this weekend, it suddenly hit me like a stack of wine falling off a pallet. ok, maybe you haven't had a pallet of wine tip over on you, but i have. it is not a pretty picture, quite sad actually. Back in the day i had a full pallet of Cabernet in the back of a pickup truck. i went around the corner of a busy intersection in San Diego a tad too fast, and you guessed it, a sea of red Cabernet appeared everywhere. e carnage was horrifying. People were driving over award-winning, perfectly good bottles of delicious wine and shattering them to smithereens. oh, the tears i shed that day, i did the best i could to clean it up before people ran over even more. i lost several cases, but it could have been worse somebody could have been hurt. i never shared that story with anyone, until now. We all need to spring clean our garages, but even more important we need to spring clean our wine cabinets. i can't tell you how many times i hear of people trying to save a particular bottle of wine for that "special occasion" and not opening it until it was so far beyond its peak. So here is my challenge to you-what are you waiting for? Drink it and enjoy life now. Don't wait. Life is too short. So here's my pledge and dedication to you. Just know, i am a giver, right? i am on your side and here to help you with your daunting task of cleaning out your wine cabinet. if you have a wine that you want my expert opinion on whether it is still good or bad, bring it over to Wilson Creek around 4:00 or 4:30 pm, and i will be more than happy to give you my highly skilled and trained professional opinion. Please include some cheese and crackers, and salami is also a very good idea. i won't even charge you for my opinion. at is what a great guy i am! is service will only be available to a limited number of people each day. To be put on the schedule, please call my assistants Barbara or Lisa. Now here's the good thing, if i am not available Lisa and Barbara will also make themselves available for half price. So break out those older wines and come on over. it's only fair to the other members that will demand this extraordinary personalized service that i must limit you to a max of 4 bottles per tasting. Update ON THE HIGH SEAS ADVENTURES Three Wine Themed Cruises ahead! Late last year Rosie and Gerry went with AMA Waterways to the Rhone Valley in France, researching a cruise that over 60 Wine Club members are going on with them this November. Rough life, but Rosie and Gerry had to scout out trips for two wine cruises that we will be doing in 2014 as well. ey just got back from an amazing time in Tahiti on the 5-star ship, the Paul Gauguin. Several members of our Extended Family Wine Club are already scheduled to do the same seven day cruise in March of ere is so much buzz about these wine themed cruises that we just added another with AMA Waterways in November 2014 to the itinerary! e cruise will be heading down the beautiful Danube river in Europe with Rosie & Gerry along for the ride. 4 W INEMAKER S C ORNER VINEYARD UPDATE from your Winemaker Etienne Cowper Spring Activities around the Winer y & Vineyard At Wilson Creek it is sometimes easy to get lost in our fabulous grounds, fine restaurant, events and other activities, and lose the sense of what is at the core of Wilson Creek as a winery and vineyard. e center of Wilson Creek is an agricultural business that operates on an agricultural cycle. While our goal may be the production of the best wine in the Temecula Valley, our focus on the vineyard is the best way for us to realize our goal of making the best wine. Much time and effort goes into producing the best grapes. e work we do now as we come out of the winter months and go into spring and on to the summer will pay off at harvest time. Timing is critical in the vineyard. At this point in the season, pruning has been completed, and the vines appear bare except for the lush green cover crop growing down the center of the rows. Almost imperceptibly the buds on the vines are swelling, preparing to burst open with bright green leaves and tiny grape clusters. our job is to nourish and protect this new growth using the best viticultural practices which reflect the principles of sustainable agriculture. Moving away from inorganic fertilizers and herbicides is an important step. e use of a cover crop which adds organic matter to the soil and helps to provide a home for soil enriching microbes and beneficial insects are a part of this process. Early protection and prevention of mildew with the use of natural fungicides is another key activity at this time. So while you are enjoying the beautiful surroundings here at Wilson Creek, remember that there is a crew of worker bees in the vineyard working hard to make better wine for you. 6 SPRING NEW MENU Coming late April Brunch MAY am - 3 pm CREEkSiDE S ExECuTiVE CHEF PRESENTS Chicken Angelica Paired with Angelica Cream Sherry 4 chicken breasts, skin on, wing attached 1 cup all purpose flour kosher salt and white pepper 2 oz Canola oil 1 Tablespoon chopped shallots 1 teaspoon minced garlic ½ cup Angelica Cream Sherry 1 cup heavy whipping or manufacturing cream Season the flour with salt and pepper. Dredge the chicken in the seasoned flour. Shake off the excess flour. Heat the oil in a large heavy bottomed ovenproof skillet. Place the chicken in the skillet, skin side down, and cook over medium heat until golden. Turn the chicken over and place the skillet in a pre heated 350-degree conventional oven. Cook to an internal temperature of 160 degrees. ( e temperature will rise to 165 degrees as the chicken rests) If the chicken appears to be browning too much during cooking, loosely cover with foil. Remove the skillet from the oven. Remove the chicken from the skillet and let rest. Put the skillet on the stove over medium heat. Add garlic and shallots and sauté for 20 seconds. Do not let the garlic and shallots brown. Take the skillet away from the flame and add sherry. Carefully return to the flame and reduce the sherry by half. Add the cream and reduce until thickened to a saucy consistency. Season to taste with salt and pepper. Serve the sauce over the chicken. Enjoy! It s mom s turn to be Queen for a Day.
