2 What s New IMPORTANT INFORMATION Beginning March 2014, your restaurant will be selling the Santa Fe Maxim. This delicious product features a santa fe chicken fillet, turkey ham, tomato, lettuce, Swiss cheese and chipotle sauce, all on a braided bun. Participating Restaurants All restaurants as directed by Marketing will sell the Santa Fe Maxim. POP Posting Post POP as directed by your Marketing Manager. Implementation Steps The information in this handbook will help you to implement the Santa Fe Maxim successfully in your restaurant. Read the information carefully and review it with your crew. For International Use February 22,
3 MENU STANDARDS Santa Fe Maxim INGREDIENTS Amount Buttered, Braided Bun Crown... 1 Chipotle Sauce... 1/2 oz. Turkey Ham... 1 slice (1/2 oz.) Swiss Cheese... 1 slice Santa Fe Chicken... 1 Tomato... 2 slices Lettuce... 2/3 oz. Chipotle Sauce... 1/2 oz. Buttered, Braided Bun Heel... 1 PREPARATION For all existing ingredients, please refer to Ingredients Preparation section in the OPM. Wash and sanitize your hands prior to handling food products. 1. Portion ½ oz. chipotle sauce evenly on both the crown and heel. 2. Place these items on the crown in the order listed: Turkey Ham 1 slice (1/2 oz. weight) Swiss cheese - 1 slice 3. Place these items on the heel in the order listed: Lettuce 2/3 oz. - cover heel Tomato - 2 slices Santa Fe Chicken Place crown on top of chicken fillet. Dine In PACKAGING 1. Collar-wrap sandwich and serve in basket. Use ORANGE frill toothpick and mark as SFM. Take Away 1. Collar-wrap sandwich and place in chicken wrap with a sticker. 2. Place in the transfer cabinet. ( ) Crew is trained on the preparation, holding, serving and home delivery procedures for the Santa Fe Maxim. ( ) Frontline employees (cashiers) are trained to suggestive sell the Santa Fe Maxim. ( ) Verbally quiz all employees to test their knowledge. START SELL DATE VERIFY POS DOWNLOAD - check and verify on morning of start sell. Ensure all POP is posted correctly refer to the POP posting instructions you received with your POP kit, for proper placement of all POP. ( ) Check all Santa Fe Maxim POP to make sure it is posted correctly. ( ) Check all pricing (refer to Franchisee for proper pricing). BEGIN SERVING the Santa Fe Maxim UPON OPENING - NO EXCEPTIONS! Remind all employees about the Santa Fe Maxim and discuss the procedures with each employee as they clock in. Talk to your shift leaders, backline & frontline crew about the importance of product quality.
