2 LOOKING FORWARD TO A FIRST CLASS STEAK Source We never compromise when selecting our meat. That is why our meat is traditionally sourced from the best cattle breeds: Black Angus and Hereford, reared in the lush pastures of Argentina and Uruguay. There they have freedom to roam and feed on the fresh grass and herbs. This is the guarantee for excellent quality and gives the meat its unique, strong flavour as well as supplying much valuable protein, essential vitamins, minerals and micronutrients. Quality The connoisseur recognises a first class steak from the first mouthful. It should be savoury and tender. In order to guarantee such quality, our meat is selected on the spot by experts, in accordance with extremely strict criteria. During processing and transportation it is subjected to constant controls. It has time to mature slowly at the ideal refrigeration temperature while crossing the Atlantic THE HEARTY ONE: RUMP STEAK The meat comes from the heart of the loin and has an intense flavour. The fine marbling enhances the strong taste. 6 2 THE HEARTY ONE: SIRLOIN STEAK The highly aromatic sirloin steak is cut from the top sirloin, the rear end of the back muscle. It has a thin edge of fat on one side and is marbled throughout. 6 THE AROMATIC: FLANK STEAK Thin cut steak from the beef flank. Fine marbled und especially strong in taste. THE SUBSTANTIAL 1 ONE: RIB-EYE STEAK Also called entrecote. The shape of the largest muscle strand is characteristic of this cut, which on closer inspection looks like an eye. That is why it is called rib-eye. It is a particularly juicy steak, with a subtle nutty taste. 3 THE DOUBLE TREAT: T-BONE STEAK Double enjoyment for your taste buds, named after the profile of its distinctive T-shaped bone. The steak is cut from the middle of the beef loin. On one side of the bone the meat is from the top loin and on the other side part from the tenderloin. 4 THE SELECT ONE: FILLET STEAK The fillet is the choicest prime steak. It is cut from the tenderest muscle meat in the loin. The texture makes it particularly succulent and flavoursome.
3 STEAKS In order to preserve the genuine steak taste, we only season our steaks with a little oil and salt. Our grilling staff cut every steak fresh from the piece of prime meat (except for T-bone). Therefore, your steak can also be slightly bigger please contact us. Fillet of beef 180 g The choicest cut 250 g from the tenderloin Rib-eye-steak 200 g The succulent cut 300 g from the fore rib 400 g Sirloin steak (USA: Roast beef) 180 g Cut from the top sirloin, 250 g with typical edge of fat and 350 g strong flavour Flank steak 300 g Thin cut steak 400 g from the beef flank. Extra juicy and tender. Rump steak (USA: Sirloin) 180 g Finely marbled and 250 g flavoursome 350 g T-Bone steak 650 g The double steak with tender fillet and succulent sirloin On request we serve your steak with herb butter.
