3 Denmark is Organic country of the year this year A title brought home after many years of teamwork by companies and organisations, the retail trade and authorities. One of the cornerstones of the Danish success is the Danish state organic label, enjoying recognition among 96 per cent of the Danes. And they do not only recognise it, they trust in it, a credibility that is crucial for organics and the Danish success. But the products are most important. The quality must be good if the consumers are to pay; and crunchy carrots grown without the use of pesticides, juicy bacon from pigs living outside, and cold, quenching milk from organic cows have in recent years tempted Danish consumers and foreign retailers into buying Danish organic products. But this has not always been the story. Twenty year ago when an organic baker, a bit of a pioneer, was to show interested people round his unusual shop, he made 13 layer cakes. Unfortunately, only five people turned up, so we must assume that they went home VERY full. When the baker shows people round today, up to 500 people turn up, so he does not make cakes for all of them. So as the little story shows, much has happened within organics the past twenty years. I hope that the fair and this brochure can contribute to making even more people contact the Danish producers of organic food, so that the next twenty years can show just as great a development as the past twenty years have. 4 BIOSYNERGY About Skarø Ice-cream The ice-cream from the island of Skarø is made from pure organic ingredients, without any additives. The beech tree sap gathered each spring on Skarø is the real magic of Skarø Ice-cream. The content of natural salts and sugars found in the pure beech tree sap enhances the taste and makes it less necessary to add sugar as it is done in other ice-creams and sorbets. Another principle in our production is not adding air to the Skarø Ice-cream during production. The taste experience thus becomes more concentrated and intense. No additives is to be taken literally. Unlike other manufacturers on the market, we do, actually, not use any additives. This principle makes a world of difference to the taste experience.

6 COESAM Coesam Rosehip Powder certified organic Coesam Rosehip Powder is a joint health supplement made from fruits of a special cultivar (AP-4) of the dog rose Rosa canina L. The powder is a mixture of grained fruit shells and grained seeds from Rosa canina AP-4. All hairs from the fruit have been removed to ensure the highest quality. 7 Organic plantation 500 km south of the capital Santiago in the beautiful south of Chile you find the plantation Santa Magdalena where the Coesam rosehips are cultivated in a volcanic soil without the use of pesticides or fertilizers. The organic status is certified and controlled by IMO (Institut fur Marktökologie), Switzerland and by the Danish Danish Veterinary and Food Administration. More taste more active ingredients Rosehips from Coesam plantations are full of taste. The organic cultivation, the unique climate conditions and the selection of the AP-4 cultivar makes the difference. More taste means at the same time more active ingredients. Rosa canina - cultivar AP-4 The selection of the Rosa canina AP-4 variety is a result of a research project where rose hip plants from the mountain area in the South of Chile were analysed for yield and the content of active ingredients. Who are we? Coesam Scandinavia has roots in both Chile and Denmark. We have familiar relations to the owner of the plantations in Chile. Our background is in biochemistry and a career in research and development from the health and food industry.
8 FIELDS OF FLAVOUR Our Mission There are many views on which kind of foods are healthy. One day experts say one thing, the next day something else. However, experts, your parents and common sense have always agreed on one thing: It is good for us to eat a lot of vegetables! But many of us simply don t eat enough of these green things. Why? Yes, most of us know that we probably ought to find good, fresh produce and cook our own meals from scratch every day. Sometimes we manage, but frankly, many days we take short-cuts. And too often they don t include many vegetables.
9 Another excuse for not eating enough vegetables: Many people feel they don t taste of much. And there is really nothing as unappealing as overcooked greens or a soup that lacks seasoning. However, that is a just a question of knowing how to prepare them properly. Basically, we just want you to eat as many vegetables as possible. Not because your mother says so, but because it is good for you! Therefore, we make soups with good taste and lots of healthy vegetables ready for you. The soup is available in: Tomato & Basil Indan Carry & Coconut Potato, Leek & Thyme Pumpkin & Ginger Our Principles We use organic ingredients in our products. It s good for the environment, and we also believe it s good for you to eat food that has been grown without pesticides. And although we may not be able to prove it, we believe organic produce often taste better. When we make our soups, we keep it as simple as possible. We do not use any additives, but only ingredients that you will find in your own kitchen. And the preparation process is the same as when making your own soup. Our kettles are just slightly bigger When the soup is hot and ready, we immediately fill it into the soup cups, chill them fast, and distribute them to the shops were they are kept fresh in the chilled cabinet.
10 NATURMÆLK Naturmælk is an independent, organic co-operative dairy, owned by 30 organic farmers in South Jutland. We manufacture and deliver a large selection of organic milk products to quality conscious customers. We only produce organic ice cream, which is free of additives. Only the best raw ingredients are used. The ice cream is made from fresh milk and Jersey cream from Thise Dairy. 13 Every one deserves a good life including the farmers who produce the raw materials. Therefore, they need a decent income and fair treatment. That is ensured through our Fairtrade certification. No E numbers. We take an uncompromising approach to food. For us, additives do not belong in food products. Consequently we use no food additives. We are proud of our labels, which list no E numbers. Taste is our strength. By carefully selecting good-quality raw ingredients and gently processing them, the finest flavours emerge. Always fresh. Skee Ismejeri produces ice cream to order. This ensures optimum freshness. Intelligent packing The ice cream is well protected and can be transported home from the retailer without any deterioration in quality. The ice cream melts evenly, and in so doing produces sublime flavours and a beautiful consistency. Containers are made of polystyrene that, thanks to their low weight (1-5 g) and low-impact manufacturing process, are an environmentally friendly packaging material. Disposing of polystyrene releases far less CO2 than conventional packing.
14 TEBSTRUP Tebstrup farm dairy in Denmark has its own 500 café au lait coloured milking goats. We are proud of our possibility to offer you different types of organic high quality goat s cheeses.
15 The goat s cheese production starts every morning, made of the freshly milked goat s milk. In Spring, Summer and Autum, you can meet our goats in the beautiful upland around the farm, converting the green fresh grass to milk. We milk twice a day in a modern milking parlour, to make sure that we deliver a top-quality raw material for the cheese production. In the dairy we make all cheeses from 100% organic goat s milk, from healty goats, living a worthy life. We only add culture, rennet and seasalt.
16 WOODSHADE ORGANICS Woodshade Organics started in 1983, as one of the first in the world, to produce organic confectionery. Our enviable mission is to develope and market organic chocolate creations of the highest quality. We produce our own marzipan with 65% Sicilian almonds and we make soft nougat both with and without milk. Woodshade Organics works closely together with Pacari Chocolate in Ecuador who is an outstanding supplier of Raw Chocolate and Single Origin chocolates produced from the Arriba National cocoa bean. We use a lot of dried fruit in our fillings and we are partners to a fruit processing factory in Mozambique.
17 We have over the years received a number of prizes for our quality as well as our design. Resently we introduced a new toffee spread called Dolce Latte and we have also developed a series of chocolates with Dolce Latte as Filling - natural with cocoa nibs, with coffee and with chilli.
