4 COFFEE EXCELLENCE italian Selection 3,00 4,50 A blend of Robusta and arabica coffees. The Robusta species include those grown in Africa (Congo and Tanzania), India (Kaapi Royale Extra Bold Bean) and Indonesia (Jawa), while the arabica variety is cultivated in Brazil (Sul de Minas). Dense natural hazelnut flavoured foam with light streaks. A strong and intense taste with sweet notes and good aromatic persistence. Nepal Mt. Everest Supreme 7,00 8,50 This is the first coffee beneficial for meditation and the only one cultivated north of the Tropic of Cancer, in a small plantation in the district of Nuwakot. Planted only recently in one of the few regions at these latitudes that are not affected by freezing temperatures. The coffee, fertilized with buffalo manure, is harvested from November to January, dried exclusively in the sun, and exported directly by plane from Katmandu. The organoleptic analysis of the espresso provided a result both impressive and unexpected. The magnificent consistency and singular structure blend in an exquisite scent of cocoa and candied orange, and dissolve into fine, particularly persistent, ginger notes. puerto Rico Yauco Selecto 7,00 8,50 One of the finest coffees in the world, Yauco Selecto cultivation is in limited quantities at an altitude of about 1,000 metres above sea level, in the south-western part of the island of Puerto Rico. At the time of harvest, only the ripe cherries are selected, which calls for numerous collecting trips, after which the beans are subjected to washing for 48 hours. In the cup, the coffee reveals a distinct richness with a full body and an intense flavour of cream and malt. The aftertaste is slightly spicy, with hints of toasted peanuts and dark chocolate. Galàpagos islands di Santa Cruz Estate Coffee 9,00 10,50 The Santa Cruz Estate, as the name indicates, is located on Santa Cruz, the second largest island of the Galapagos, at an altitude of 375 metres (which in view of its particular geographical position is actually equivalent to 1150 metres). Compared to other coffees from these islands, Santa Cruz Estate Coffee is sweeter and has a richer aroma. The superior taste is due to the special microclimate given by its position in the archipelago, and also to the use of the same coffee plants introduced by the French agronomists in Declared a Heritage of Humanity by UNESCO, Santa Cruz Estate Coffee is also an organic coffee.

5 Hawaii Kona Captain Cook 9,00 10,50 The most beautiful coffee bean in the world. Despite the tornadoes that periodically strike the Hawaii islands, the climatic conditions are ideal for coffee cultivation, since there is the right amount of rain and sun, and frost never occurs. Moreover, there is also a peculiar local phenomenon known as free shade : almost every day, at two o clock in the afternoon, the sky clouds over giving the trees just the right shade. Balanced, with deep notes, it has a distinct body, a complex aroma, a rich and evolving flavour and low acidity. A recognizable hint of walnut, and some tasters even discern a touch of cinnamon. A benchmark coffee for connoisseurs. Guadalupa Bonifieur 9,00 10,50 An Arabica coffee, Bonifieur is delicate, slightly fruity, finely acidic, well-balanced and full-bodied, exactly like a good vintage wine! It is grown at an altitude of metres in the shade of the banana trees on the mountainous slopes of an active volcano, La Soufriere (one of the highest mountains of the Caribbean). The French word Bonifieur means improve and it was given to this coffee as a name because in the past it was used to improve blends of inferior quality, thanks to its top-notch character and outstanding taste. Connoisseurs consider it one of the best coffees, and also one of the rarest. Jamaica Blue Mountain 9,00 11,50 pure washed arabica from the wallenford Estate plantation. Altitude and distance from the sea are among the factors that make a coffee special; the higher up and the closer to the sea a coffee grows, the finer its quality. Jamaican coffee, that grows at altitudes of approximately 2,000 metres, is simply the best coffee in the world. It is the coffee served in royal households, the most coveted by those who seek the best in life. In its sphere of excellence, the wallenford Estate is the Cru that represents perfection. Intense aroma, round and caressing taste, exceptionally rich in flavour, soft and sweet, well-balanced and with an incredibly prolonged persistence. New Caledonian Bourbon pointu 19,00 20,50 The history of coffee in New Caledonia dates back to the nineteenth century, when the shrub was brought there for the first time by missionaries from the Reunion Island, hence the name Bourbon coffee which is still in use today. A Leroy coffee of the Arabica variety, the shrub is particularly low, with small, narrow leaves, short internode and beans pointed at both ends. Another distinguishing feature of the Leroy coffee beans is that they lose only 16-17% of their weight during roasting, while ordinary beans lose around 20%. In addition, this coffee has a naturally low caffeine content.

Its exclusivity is granted by a particular mammal, which in Indonesian is called Luwak (Asian palm civet), which climbs the coffee trees and eats the ripest fruits. The eaten red coffee cherries, then, pass to the stomach and the gastric acid of the animal, which is rich in sugar enzymes, toasts the coffee beans naturally. The expelled beans are collected and sold as an authentic delicacy. The coffee has a strong and complex flavour with an aftertaste of burnt sugar (caramel) and chocolaty notes. Brasil Bird Jacu 29,00 30,50 Camocim Estate, situated in Pedra Azul, Espirito Santo, Brazil, produces a special quality of coffee, with the help of a bird, the Jacu, that is native to South America. It is a process of natural selection for quality coffee. These indigenous birds feed on the ripe coffee cherries. After eating the cherries, the Jacu bird eliminates the digested beans, which are then collected, transported to the drying areas, where they are dried, cleaned and preserved in their parchment skin for a maximum of three months. The dry fragrance is characterized by a delicate hazelnut flavour, while the aromatic compounds contain notes of lemon balm with a slightly spicy aftertaste. This coffee is sweet, full-bodied, and slightly more acidic than traditional ones and it is also among the rarest.
