2 ABOUT US Massimiliano and Riccardo Lunardi relaunch the family business, creating a new brand and images that carry their faces: FRATELLI LUNARDI is born. Linked by the family tie and by an incredibly strong passion for food in general, the two brothers work together, teaming their individual abilities and attitudes in a job offering daily challenges, sharing hopes, happiness and the occasional disappointment. Research, development and selection are constant facets of their work. Everything is based on the concept that when an ingredient is the very best, it should be respected in a balanced recipe that best enhances its traits. In the Quarrata bakery, bread, sweet and savoury items have been produced since 1966, made to meet the shop s needs. New recipes are also tested here. Only the best of these products have been selected for the FRATELLI LUNARDI brand: the tender cantucci BISCUITS the precious LEAVENED CAKES the special WINE JELLIES and other creations linked to holidays and celebrations. The choice of ingredients is critical for the Brothers of gluttony who do not use preservatives, dyes or other chemical additives. 3 BISCUITS FORMATS CANTUCCI are traditional Tuscan biscuits. Baked shaped like a long loaf, they are cut on the diagonal to make the famous little slices, known as cantucci in Tuscan dialect. As our aim was to make a delicious, soft biscuit for daily eating, suitable at any time of the day, we reworked the recipe, adding butter and playing with other ingredients, coming up with seven different flavours, four of which feature chocolate. All of our biscuits are based on a central ingredient, based on the principle that when ingredients are of the finest quality, they must be respected, in a balanced recipe that best enhances their traits. Using the finest products, observing their seasonality and finding the best ways to preserve them naturally allows us not to use preservatives, additives or artificial colourings, which subdue the wonderful diversity of natural flavours. This is the best guarantee of a handcrafted product made with love. Organic Italian wheat flours only. Organic free-range eggs only. To package our biscuits, we chose the traditional bag, perfect for everyday use. Parchment paper enabled us to create artistic packaging with a touch of craftsmanship. The seven flavours in the collection are available in 200g format, which allows for high product rotation. Only the almonds and chocolate versions are available in the larger 400g format. For bulk buys, we have designed a 1Kg bag, a format that we believe is ideal to offer customers with a product that is always fresh. In its well designed pack it could be sold as all the other formats, as a special gift or for people who know exactly what they are looking for. We propose the 1Kg bag for chocolate, almonds and muesli. For a sweet and greedy chocolate snack we created the 48gr bag. A nice red bow embellishes the 350gr box of chocolate biscuits, a delightful gift for any occasion. 4 CHOCOLATE, IN BIG PIECES King of the cantucci kingdom, the most envied of all in its golden appearance and the most sought-after by gourmands. We suggest you keep these underlock and key to make them last longer. Our chocolate cantuccio biscuit is the KING of the collection, as it was the first flavour to be made than the traditional almond one, the first to receive a unanimous stamp of approval. The recipe dates back more than a decade ago, when we experimented with chocolate in the dough for the first time, which gave the biscuits their distinctive brown colour. Deliciously flavoured with its big pieces, these biscuits are perfect by themselves or when served with a curl of cream, just like the classic Viennese Sachertorte. 6 biscotti mignon BISCOTTI MIGNON MINI BISCUITS Wild bites are what you give to our new biscuits. The design immediately emphasizes its small size (one is never enough!), and is a great tribute to the origins of cocoa. The image of the jungle also anticipates the intense and determined taste of cocoa beans, present in grain in our mini biscuits. Cracking under the teeth give us a tasteful experience more close to the wild cocoa, which is well combined with the soft and velvet experience of the chocolate. 170 g - 6 oz art.107 (packed to 15 pieces)

7 CHOCOLATE AND ORANGE CHOCOLATE AND HAZELNUTS We have chosen special Italian orange peel, slowly and naturally candied in open tubs, without chemical additives for a natural and fragrant softness. We select the Piemonte hazelnut IGP which once toasted is added whole to the chocolate mixture giving the cantucci an irresistible gianduja fragrance. For this biscuit, we decided to use dark chocolate in small pieces, as well as mixed into the dough to best enhance the naturally candied orange. Using candied orange is a classic in Italian baking and combining it with chocolate is always a must. The decision was made to use thick orange peel as it allows softer candied fruit, perfect for our soft biscuits. This cantuccio biscuit hails from the idea of bringing the scent of gianduja to a biscuit. Gianduja is the most famous form of Italian chocolate, a result of Piedmontese genius, having gone in search of a solution when cocoa supplies stopped after the war. Chocolate makers found the answer in the old hazel groves in the hills. We wanted to use those hazelnuts in our product, as there was no other way to recreate that exciting aroma, which is achieved when hazelnut gives some of its intense scent to the cantuccio biscuit during baking, combining with the chocolate, used in small pieces as well as in the dough. 200g oz item g oz item 130

8 CHOCOLATE AND MINT ALMONDS CANTUCCIO These fresh biscuits with a hint of mint are excellent for a tea break, especially with a glass of milk. This is the typical Tuscan recipe, and we ve added butter to make the almonds cantucci even crumblier. The almonds come from Sicily. Classic with a nice Vin Santo, always delicious. We left Italian borders in choosing this combination, which struck us in the English chocolate and mint so much that we wanted to convey it in this biscuit. The recipe uses more than 35% dark chocolate, partly mixed into the dough and partly left in small pieces, giving the biscuit a strong chocolate flavour, that is necessary for us in the combination with the Pancalieri mint, characterized by an intensely fresh aroma. The almonds cantuccio is traditional in Tuscany and it was the first to be exported abroad in the wake of textiles. We allowed ourselves to rework the recipe by adding butter to make a more crumbly biscuit, which can be eaten at any time of the day, without having to be softened by being dipped in Vin Santo, making it a more flexible biscuit. In addition to the Sicilian almonds, we added armelline (the seeds contained in an apricot stone) to the mixture in a balance of flavours on the bittersweet spectrum. 200g oz item 140 1Kg- 2.2lb/400g oz 200g oz item 150/151/152

9 MUESLI LEMON AND LIME A mix of specially selected seeds and nuts embellish our biscuit, created for breakfast as well as healthy and balanced daytime snacks. With its soft cubes of lemon peel, this biscuit will make al fresco chats with friends even more delicious. Excellent with a fresh citrus liqueur. It s not easy to convince an Italian to eat in the morning something different from the tradition. Muesli has proven successful on this front, finding a place on the Italian breakfast table of those who enjoy a healthy and balanced diet. Hence our muesli recipe, with the addition of pumpkin and sunflower seeds. Served with a glass of milk or a cool yogurt to make a healthy start to the day, this biscuit is a delicious snack for young and old alike. Munch at dinner or afterwards at supper, or even as a midnight snack: a light way to silence those moreish temptations. We wanted to include a fresh flavour in our biscuit collection, perfect during the hot summer season. We had no doubts about the main ingredient: our yellow lemon, matched with piercing green limes. The lemons are candied slowly in an open tank, so that they keep their colour, scent and natural softness, without additives. Squeezed lime juice is added to the mixture. Perfect to serve to friends at afternoon tea or at the end of a meal with a glass of limoncello. 10 For over thirty years we produce Panettone, following the classic recipe: rich in candied orange and raisins and covered with icing hazelnuts, whole almonds and sugar grains. The handcraft production of sweet leavened is complex: it takes a lot of experience, manual skills, eyes and sensitivity. It s a long path determined largely by the yeast, because without using starter (brewer s yeast) but only our 80 years old yeast, you have to wait that it starts the fermentation naturally. In order not to stress or heat the flour and the dough, we work with small, slow equipment, and we stay there listening, always available. But it s worth it, especially in terms of digestibility, because natural slow rising respects our bacterial flora, without irritating the stomach. The goodness of a product does not come just from the mouth, but it starts from the story of its ingredients and ends in the wonderful sensation of feeling good. PANETTONE CLASSICO 1Kg and 500g - 2,2 lb and 1,1 lb item 457/item 462 by reservation only! There is a big difference between a more commercial Panettone, which for market needs must last as long as possible... and our Panettone, which does not last more than 45 days (because we do not like to use preservatives), because we don t want to follow these market rules but the recipe, the time of the yeast, and we chose just great ingredients. And you can be absolutely sure that the everybody will understand the difference!!

11 We play with the design of the boxes in a succession of hearts and stars, and what about the interior decorated with style! Two Gentlemen Sweets. An enviable and close-knit couple. Gentle but firm, tender but strong taste, they know how to behave: always tempting you! Our Black and White are sweet cake, naturally leavened according to the same methodology used for Panettone. It is therefore an important recipe, that needs the precious box that we have studied, which makes them also a great gift. BLACK Chocolate leavened cake with dark chocolate in pieces, drenched in Vin Santo. WHITE Leavened cake with golden raisins, drenched in Vin Santo. Vin Santo naturally preserves our cakes for 8 months, without adding any chemical additives. 12 THE GOOD TUSCAN WINE...IN JELLY The idea of eating wine with the spoon (only the Good wine) paired with cheese, meats and sweets, we ve always liked. This is how our jellies have started, adding only sugar and apple pectin, in order to maximize the wines and leave unchanged all their special qualities. We have selected four Tuscan wines, and the balsamic vinegar, that is a must in Italian seasonings. Following our suggestions on how to use them: BRUNELLO DI MONTALCINO Suitable for the preparation of particularly refined dishes, special to enhance a good chocolate cake. VIN SANTO Optimal for mature and blue cheeses, and dishes made with liver. Ideally with our cantucci with almonds. VERNACCIA Good with fresh and aged pecorino, a winning pair with rabbit meat. CHIANTI We recommend pairing with fresh ricotta cheese, seasoned and baked, panna cotta and sweet creamy puddings. ACETO BALSAMICO Obvious tasting with Parmigiano Reggiano and Grana Padano, boiled and grilled meats. Try it with fresh strawberries. Our delicatessen laboratory in Quarrata is an important point of reference for those who love good food and never get tired of looking for the best.
