1 HISTORY & WINEMAKING PHILOSOPHY The finest things in life are often hidden away, in fact the Castello Romitorio winery takes its name from the massive twelfth-century fortress that sits atop a hill surrounded by thick oak forest in North-western Montalcino. Its name suggests that the edifice served multiple uses throughout its history- probably as fortress as well as Monastery, making it a location that is remote in time and space. Abandoned in the 1950 s its rebirth as a winery occurred in 1984 when Artist Sandro Chia acquired the estate from his friend Baron Giorgio Franchetti. The restoration of Castello Romitorio began immediately, followed by the transformation of its overgrown lands into vineyards, and the construction of a cellar on the Castle s ground floor. Twenty years later in the year 2006, the winery broke ground on a new state-of-the art underground cellar completed in The Castello Romitorio winery currently comprises of three properties two of which are in Montalcino and one in Scansano. The vineyards in Montalcino capture the multi-faceted beauty of two of the main micro-climates in the windswept hills of Montalcino; Castello Romtiorio in the north-west and Poggio di Sopra in the south-east. These two estates consists of 455 acres of thick oak forests, broken by 40 of them dedicated to the vine, and 10 to the olive. The soil upon which all thrives, is mainly composed of marl and limestone and the climate ranges from the cooler, continental type in the north to that of the milder, Tyrrhenian coastal one of the Mediterranean. The main cultivated variety of grape is the Sangiovese, specific to Tuscany soils and whose climate becomes ideal for the production of such wines as the Brunello di Montalcino, rich in structure and elegance, especially when left to age. The third estate, is located in Scanasno and called Ghiaccio Forte- a name taken from an ancient Etruscan settlement dating from Hellenistic times whose ruins lie only a few meters from the property. The Ghiaccio Forte estate consists of 178 acres, 36 of which are planted with vineyards and 8 of olives. Its territory is characterized by unspoilt, natural surroundings, with barren hills rising up to approximately 500 feet from the coastal plains only 12 miles away. The combination of various factors, such as the relatively low altitude, its south-westerly position, the volcanic soil and the waters of the river Albegna originating from the hot springs of Saturnia, create for one of the most unique micro-climates in Italy, thus becoming perfect for the vine. It is the beauty, excellence and tradition of these extraordinary lands which Castello Romitorio is proud to honour. 2 Brunello di Montalcino Riserva DOCG 100% Sangiovese 12 months in French oak 24 months in Slavonian oak 5.72 g/l 14.80% September 2007 shale 2007 BRUNELLO DI MONTALCINO D.O.C.G. RISERVA The Tuscan climate regularly bestows on us the gift of excellent wine, but every so often fortune shows an extra measure of generosity. Only a careful selection of grapes from a truly exceptional harvest can produce a Riserva. Its ruby red colour is incredibly vivid and intense. On the nose it radiates a powerful perfume of ripe, dark cherries along with hints of tobacco, vanilla, black pepper and liquorice. Rich and voluminous, the wine blossoms on the palate with deep tones of spices and dark fruit that combine well with the imposing tannins. This full-bodied riserva reveals outstanding length that follows through to an incredible fresh and persistant lingering finish. It should develop into an even more splendid wine with more years of bottle ageing. For it possesses an extraordinary aging potential and will continue to evolve in the cellar for many years. VINTAGE The 2007 harvest in the Montalcino area began a little sooner than usual. The vegetation growth being rather ahead due to a very dry, warm winter. The rains came at the end of May up to the beginning of June, serving well the vineyards, before the hot and more dry periods, in between July and August that permitted a more regular development of the phenological phases of the vines. So by harvest time the grapes were very concentrated, with high degrees of sugar and a gradual developing of the phenological components. Meanwhile the grapes were healthy when picked, with uniformly- sized bunches, not over large. (Data source: Consorzio del Brunello) bot. 750 ml

3 Brunello di Montalcino DOCG 100% Sangiovese 30 months in French oak 5.85 g/l 14.58% 4-12 October 2010 Shale bot. 750 ml 2010 FILO DI SETA BRUNELLO DI MONTALCINO D.O.C.G. Filo di Seta is a special Brunello that is the result of a very careful selection of the best harvest grapes collected from the vineyards just nearby the castle. Its name translated, means Silk thread, a name that takes its inspiration from a small river that flows next to the vineyards where it is produced. This wine seeks to be one of the highest expression of Montalcino s northwest micro climate. It is ruby red with orange tinges and speaks of red berries with saline undertones which then turn to the scent of roses and crushed violets becoming impressive on the nose. The taste is dynamic and extremely pleasant. It is a full bodied wine embracing warm, soft tones and elegant, ultra fine tannins that build on the palate with a cool, sleek texture and style. The progression of its taste is astounding and has a long and powerful finish. James Suckling 2015, 98 points...so much here. Mind-bending... The year 2010 will be remembered in Montalcino for a delay in the grape-leaf budding due to below average spring temperatures and for the frequent rainfalls that characterized this period - a situation that consequently favoured the growth of a strong vegetation causing a reduction in the production. The summer was characterized by good weather interrupted occasionally by a few rainfalls during the month of August that mitigated the heat and favoured a recovery of the phenological cycle even though the beginning of the veraison came ten days later than usual compared to the last ten years. Product characteristics- The wines produced from this harvest have extraordinary features for Sangiovese, both with regard to their organoleptic profile, as to the parameters of their composition. Excellent is the level of their alcohol content, with total poliphenols, anthocyans and extract so rarely found in this grape variety, along with a very high capacity for aging. 4 Brunello di Montalcino DOCG 100% Sangiovese 12 months in French oak 14 months in Slavonian oak 6.10 g/l 14.97% 4-22 October 2010 Shale bot. 750 ml 2010 BRUNELLO DI MONTALCINO D.O.C.G. This Brunello di Montalcino is a wine of boldness and power and ruby red in colour. On the nose a fruity and spicy bouquet combine with an unexpected suggestion of Tuscan dust. On the palate, hints of black berries join secondary aromas of vanilla and clove combining along with smooth, velvety textures of rich and balanced tannins, for a long and satisfying finish. It is advisable to pair it with dishes such as stewed meats and game. It is also excellent with cheeses such as aged Tome and Tuscan Pecorino. In addition, thanks to its particular characteristics, it may be drunk as a wine fitting to meditation. It is suggested to be served, possibly after decanting, at a temperature of 68 F 32 F. The year 2010 will be remembered in Montalcino for a delay in the budding due to below average spring temperatures and for the frequent rainfalls that characterized this period, a situation that consequently favoured a strong vegetative development causing a reduction in the production. 5 APPELATION Sant Antimo Rosso DOC 60% Sangiovese - 20% Canaiolo 20% Cabernet Sauvignon 14 months in French oak 5.51 g/l ALCHOL % 10 September 2012 Shale 2012 ROMITO SANT ANTIMO ROSSO D.O.C. In Castello Romitorio s Romito, the rebellious and the traditional become wed: the boldness of Sangiovese joining the complexity of Cabernet Sauvignon through which the subtlety of Canaiolo emerges in exquisite harmony. In the Super Tuscan style, Romito del Romitorio is composed of sixty percent Sangiovese Grosso, twenty percent Cabernet Sauvignon and twenty percent Canaiolo, and is aged fourteen months in French tonneuax, with one additional year of bottle ageing. The Romito del Romitorio is a complex wine with a dark core and brilliant ruby edge combining elegant aromas of wild fruits and cherry which along with balsamic oak notes, open over a backdrop of medium-intense spices resulting in a wine of full body, with round tannins and a long fresh finish. Its distinct and well balanced suggestion of earthiness represents a formidable expression of the Montalcino terroir. HISTORY The Sant Antimo Rosso denomination, approved as a D.O.C. in 1996, gives winemakers in Montalcino the ability to offer wines that vary from the more rigid regulations that apply to other denominations. Castello Romitorio s Romito del Romitorio draws its unique character from the fact that it is three fifths. Sangiovese, making this Sant Antimo as if a respected son of Montalcino. In fact, this wine was the first ever to be bottled at the Castello Romitorio winery in 1986 and marks the beginning of its winemaking history bot. 750 ml

6 Rosso di Montalcino DOC 100% Sangiovese 10 months in Slavonian oak 2013 ROSSO DI MONTALCINO D.O.C. Rosso di Montalcino is a wine which, being a hundred percent Sangiovese, is similar in nature to Brunello di Montalcino but differs in that it is a youthful expression of the Sangiovese grape. Being ruby red, full, and aromatic, with a pleasant, balanced, and fresh bouquet, its fruit-forward aromas become reminiscent of small red berries and cherries on the pallet, finally giving way to black pepper, herb aromas and tobacco flavours. It is of medium body with fine tannins and a long fruity finish g/l 13.34% 1-16 October 2013 Shale bot. 750 ml

7 Chianti Colli Senesi DOCG 100% Sangiovese 6 months in Slavonian oak 2013 CHIANTI COLLI SENESI D.O.C.G. Produced with 100% Sangiovese, Chianti Colli Senesi is a wine of distinct, soft balance expressing the grandeur of the Tuscan land yet still remains an illustrious example of Tuscany s classic winemaking tradition. It speaks of dark fruits and just a hint of saddle on the nose. On the palate, strong, earthy and savoury tones include sweet redcurrants and wild briar fruits and as the components of the wine take shape, a synergy of flavours and textures is released in readiness to beautifully complement most savoury foods g/l 13.61% 3-15 October 2013 Shale bot. 750 ml

8 APPELATION IGT Rosso Toscana Scansano, Tuscany Cabernet Sauvignon Petit Verdot - Syra 14 months in French oak 2011 TORO I.G.T. ROSSO MAREMMA This wine is the result of blending Cabernet Sauvignon, Syrah and Petit Verdot in equal parts. Its ruby, red colour is vivid and intense. Pleasant to the nose and well-balanced, it radiates a perfume of small red fruits and crushed rose petals. Upon the palate, red-ripe fruits and sweet spices, balsamic hints and a sugared-coffee retro-taste combine perfectly with its delicate, fine tannins. Of sound structure and complexity, it is also a wine of long and soft persistence. TRELLISING SISTEM 6.91 g/l % 3-5 September 2011 Volcanic with shale and clay bot. 750 ml

9 Morellino di Scansano DOCG Scansano, Tuscany 85% Sangiovese - 15% Syrah 6 months in Slavonian oak 5.10 g/l 2013 GHIACCIO FORTE MORELLINO DI SCANSANO D.O.C.G. Deep ruby red, it opens with a sweet bouquet of ripe berries, including wild strawberries and raspberries, enriched with tobacco, earth and quinine soothing notes. It s powerful taste is defined by a promising fine tannic structure, with a full-flavoured body and a persistent, fruity finish. The vineyards which produce this exquisite Morellino di Scansano are situated only a few metres away from the ruins of the ancient town of Ghiaccio Forte, named after one of the few Etruscan warriors who was able to withstand the imperial might of the Romans. In honour of this ancient hero, this exquisite wine blends the traditional Sangiovese with just a hint of the spicy complexity of Syrah. 10 Morellino di Scansano DOCG Scansano, Tuscany 85% Sangiovese 15% Sauvignon Cabernet TRELLING SYSTEM 2014 MORELLINO DI SCANSANO BLU LABEL D.O.C.G. Ruby red with light shades of purple. Complex nose with hints of crunchy blackberries, raspberries and elegant touches of sweet spices, closing on a balsamic note. In the mouth it has great impact with a softness diluted by a good acidity and delicate tannins before ending in a fruity, fresh finish. VERMENTINO TOSCANA BIANCO Costanza is a Vermentino-based wine with 15% Chardonnay thus adding a touch of international style to this re-discovered Italian grape of great character. Its intense straw-yellow is bright and vivacious; on the nose it presents all the forcefulness of its olfactory sensations which open with a floral fragrance of hawthorn, exotic fruits and pineapple, along with hints of lemon and ripe, green apples. Exuberant and fresh on the palate- whilst following a defined citrine entrance- it recalls white peach and citrus pulp. It is of good structure supported by a natural freshness and a pleasing persistent finish g/l % 9-10 September 2014 Volcanic with shale and clay bot. 750 ml

12 Toscana Indicazione Geografica Tipica Rosato 100% Sangiovese TRELLING SYSTEM 7.21 g/l 2014 TOSCANA I.G.T ROSATO The grapes are gently destemmed, then left to macerate for approximately 5 hours - until the desired delicate onion pink colour is obtained - and then softly pressed. This liquid host is then passed into a stainless steel vat where a first filtration is made under cool controlled temperatures, and it is only after higher temperatures are applied that the fermentation takes place. What results is a wine of long lasting finish with delicate tones of rose and peony upon the nose whilst being fresh and mineral-like to the palate along with hints of raspberry and cherry % September 2014 Shale bot. 750 ml
