1 White Wine A superbly fresh, fruity wine which preserves all the primary aromas of the Viura and Malvasía grapes, hinting at citric fruits mixed with apple and pear. Varieties: 90% Viura and 10% Malvasia. Alcoholic Fermentation: 20 days in stainless steel at temperatures no higher than 15ºC. Colour: Green, brilliant and clean. Nose: Without swirling the glass, one appreciates tropical notes of melon and pineapple mixed with a hint of banana. Swirling the glass, the freshness springs forth with citric notes. Palate: The initial sensation is marked by the wine s freshness, followed by the medium weight with a good balance between alcohol and acidity. The finish is longlasting, with a mix of tropical fruits and a touch of pear. Ideal drinking temperature: Between 7º and 10º C. Pairing: Aperitifs, all types of fish, light seafood, white meat and rice dishes. 2 Barrel Fermented White Made of grapes from a unique vineyard with limited production and over 50 years old. Only 1,000 bottles of this unique white wine are created each year. After fermentation, it is aged in new oak barrels for 5 months. Varieties: 90% Viura and 10% Malvasia. Alcoholic Fermentation: 15 days in a new French oak barrel at temperatures no higher than 20ºC. Barrel aged in the same barrels for 5 month. Colour: Light yellow with some green reflections, brilliant and very clean. Nose: Floral notes, honey, citric and sweet fruits with light toasted touches typical of good crianza. Palate: The wine presents itself on the palate of medium body and well balanced. This is followed by fine citric tones on the mid-palate, along with a light taste of new wood. The aftertaste is long-lasting and persistent. Ideal drinking temperature: Between 7-10 º C. 3 Carbonic Maceration This wine is made through the process of Carbonic Maceration. The whole bunches of grapes are fermented without prior destemming in stainless steel tanks.. After fermentation, the grapes are pressed and the press wine is seperated from the free flow wine. Varieties: 92% Tempranillo and 8% Viura. Production Method: Carbonic maceration. Alcoholic Fermentation: 10 days at temperatures no higher than 26º C. Malolactic Fermentation: In stainless steel tank. Colour: Brilliant red with violet tones on the outer edges. Medium-high depth. Nose: Without swirling the glass, one appreciates fruity aromas of red berries such as strawberries, redcurrants and raspberries. Moving the glass highlights floral notes mixed with aromas of rose, acidic raspberry and fruits of the forest. Palate: On the palate the wine is silky, smooth and fruity. The mid-palate is marked by red berries, well-balanced with smooth tannins and the perfect level of acidity. Ideal drinking temperature: 14º C. 4 Crianza One of the most highly valued Rioja Crianzas by Guides and the best wine critics. The grape comes from various vineyards over 40 years old. This wine is of exceptional quality thanks to the highly controlled, selective production process. Varieties: 95% Tempranillo and 5% Graciano. Method: Stalk removing. Alcoholic Fermentation: 12 days at temperatures no higher than 30º C. Malolactic Fermentation: In stainless steel tank. Ageing: 17 months in French and American oak barrels. Colour: Intense cherry red with a high depth with no changes around the outer edges. Nose: Without swirling the glass, we can appreciate ripe black fruits mixed with slight, elegant roasted notes. Swirling the glass brings out mineral aromas and wild berries, mixed closely with vanilla and cedar notes. Palate: The initial sensation is warm, sweet and consuming, the mid-palate is marked by ripe red and black berry flavours, mixed together with mature, elegant tannins. The aftertaste is long-lasting and pleasant thanks to its good level of acidity. Ideal drinking temperature: 17º C. Pairing: Cold meats, grilled fish and meat, as well as small game. 5 Private Selection Selection of grapes from vineyards over 70 years old, whose characteristics and meticulous production process means fewer than 2,500 kg/ha are produced. The quality of the vines is shown in the variety of this wine, made in tanks using the pigeage system and ageing in extra-fine grain barrels. Varieties: 100% Tempranillo. Method: Stalk removing. Alcoholic Fermentation: 12 days at temperatures no higher than 30º C. Malolactic Fermentation: New French oak barrels. Ageing: 17 months in French oak barrels. Colour: Bright red with violet tones and high depth. Nose: Before swirling, you can pick up highlights of aromas of black fruits (blackberry, etc.), olives and tar. Upon swirling, savoury, spiced (pepper, sandalwood, clove) and roasted tones are released. Palate: Very powerful initial sensation, very fruity and expressive. The mid-palate is a good weight, silky but at the same time balanced with mature, elegant tannin, complex fruits and fine roasted touch. Long-lasting aftertaste with savoury tones, good acidity. Its ageing in extra fine grain barrels makes for a complex, unique wine. Varieties: Maturana, Graciano, Garnacha, Merlot, Cabernet Sauvignon, Syrah and Prieto Picudo. Method: Destemming. Alcoholic Fermentation: 12 days at temperatures no higher than 30º C. Malolactic Fermentation: New French oak barrels. Ageing: 17 months in French oak barrels. Colour: Bright red with violet tones and high depth. Nose: Without swirling the glass we can already sense the aromatic intensity of black fruits such as plums. Upon swirling the glass, the aromatic intensity increases resulting in savoury, spiced tones and roasted aromas of fine woods. Palate: The initial sensation is expressive, light and powerful with ripe fruits. The mid-palate is smooth, silky, well-balanced with mature, elegant tannins, and fine roasted hints. The aftertaste is long-lasting, marked by savoury notes. Ideal drinking temperature: 17º C. 7 Graciano This is a single variety wine made with the graciano grape; a rare, unique grape with which we seek an exceptional wine; a demanding grape that requires meticulous work in the vineyard for an excellent balance. Vintage: Manual Variety: Graciano Method: Destemming Alcoholic Fermentation: In French oak barrels of 500 l with 5 days of cold maceration. oxo line method. After the alcoholic fermentation the wine is drained and returned to the barrel for malolactic fermentation. Ageing: 8 months in French oak barrels. Colour: Intense cherry red, with great depth of colour and a young and lively edge. Nose: Before swirling the glass, one appreciates nuances of dark berries, blackberries, currants, red and black cherries. Moving the glass brings out intermingled arid nuances of pink grapefruit, savoury liquorice and a light background of fresh herbs. Palate: The initial sensation is fresh and lively, marked by the aromas of the dark berries, with a subtle touch of blackcurrant. The mid-palate is smooth, marked by the characteristic nuances of graciano of citric acidity and a light background of herbs, with mild, elegant tannins, with an after-taste of freshness and a subtle toasted touch that is reminiscent of bitter chocolate. Consumption: 17ºC, open an hour before serving in a large glass. 8 Parcelas White Made from grapes from a unique vineyard with very limited production and going back more than 50 years. Only 800 bottles of this unique white wine are produced each year. Grape Harvest: Manual. Varieties: 100% Viura Alcoholic Fermentation: 20 days in a cement tank at temperatures no higher than 20ºC. Aged in the same cement tank for 6 months. s Colour: Light yellow with some green hues, bright and very clean. Nose: Floral, citric nuances with mineral hints reminiscent of their Terroir inherent in vinos de pago (single-estate wines). Palate: Full-bodied at the start, with a glycerine taste. Citric nuances come to the fore mid-palate, accompanied by a mild creamy texture. The aftertaste is long and persistent. Ideal Drinking Temperature: Between 7º and 10º C. Pairing: Aperitifs, fish, light seafood and white meat, pasta, pizza and rice dishes. Note The label for this white wine was designed by Nestor Basterretxea who is, indeed, representative of these small and irregular-shaped vineyards which comprise the landscape of Rioja Alavesa.
