The production increased significantly, quality improved constantly, and increasingly attention to product quality was paid by nation, industry and enterprise. At the same time, the quality accidents were frequently reported by media with the overall cognitive ability improvement of the consumers. The quality safety problems become the new hotspot for consumers, industries and enterprises. In recent years, the research intensity of the quality and safety gradually has increased. Compared with foreign research, the gap was huge, and the research focus was not balanced in China, especially in the production process control, reduction of toxic and hazardous compounds. This was not conducive to quality safety improvements of alcoholic beverages. We suggested that the researches of these aspects would be strengthened. We expected the quality and safety of alcoholic beverages would reach the international advanced level in the near future.
