4 D.O.C. Rioja Bodegas Pujanza TERROIR-CENTRIC REDS Pujanza Hado Alcohol: 14.5% Ageing: 12 Months in French Oak barrels. Tasting Notes: Black cherry aromas dominate on the nose combined cassis and violets and underpinned with earthy notes of scrub and spice. On the palate the flavours are medium in intensity but still robust with toast and spicy notes sitting comfortably atop ripe plum and berry fruit, round and elegant on the finish. Pujanza Finca Valdepoleo Ageing: 14 months in French oak. Tasting Notes: Picota cherry red colour, intense, deeply coloured with violet hues at the rim. Intense fruit aromas of dark red fruit such as cherry, plum and strawberries, and mineral notes with sweet spices. On the palate, the flavours are medium in intensity but still robust with toast and spicy notes sitting comfortably atop ripe plum and berry fruit, round and elegant on the finish. Pujanza Norte Ageing: 16 months in French oak barrels. Tasting Notes: Deep cherry red with purple hues. On the nose this wine is clean with pronounced aromas of blackcurrant, plum and blackberry, spicy notes and hints of pastries and cocoa. First winery in the world to apply geothermal energy for keeping constant temperature during wine-making. Use of cryo-maceration to extract optimum fruit (the application of dry ice to create cold conditions for maceration). Cryo-maceration results in highest levels of Resveratrol and Quercetin (10 times as much), which have many health benefits including heart health, fight cancer, protect skin health and lower inflammation. Cryomaceration creates stability of taste and high antioxidation stability leading to reduced use or complete absence of SO2 in the finished wine. Optimum flavour is achieved through the terroir, hand harvesting of select grapes and cryo-maceration, which extracts the greatest level of aromas and fruit from the grape. It extracts more colour, tannin, body and natural sugars (higher alcohol), resulting in a softer, fuller mouthfeel. These wines are more fruit forward and ripe with pronounced colour and aroma intensity, well-balanced, smooth and round in the mouth. Wines from Marques de Teran are the choice of more than 1000 restaurants including many Michelin such as Zalacain, Arzak, La Venta de Moncalvillo. Tasting Notes: Deep cherry-red with garnet hues, bright and clean. A complex nose with aromas of ripe red fruit (plum, cherry) and toasty notes that blend perfectly with the varietal aromas. Smooth, round and wellbalanced in the mouth, filled with pronounced flavours of ripe red fruit, vanilla, cedar and sweet spice, with a long and lingering aftertaste. A classic Rioja nose with ripe red, fruit, toast, spice and hints of leather and liquorice. The right oak and rackings round off this mouth-filling wine, with its fruit (red cherry, plum) and floral (violet) notes enhanced by the oak. A complex mouth of fine and elegant fruit with smooth, ripe tannins and an unctuous finish that leaves long-lasting reminders on the palate. A perfect mid-point between youth and maturity. Ollamendi Crianza Alcohol: 13.5% Ageing: 14 months in American oak cask with a minimum of 6 months in bottle. Tasting Notes: Cherry red colour with garnet rim. Aromas of ripe red fruit, well integrated with spicy aromas of oak ageing (vanilla, black pepper, cinnamon). Round in the mouth, with a balanced structure and wellintegrated tannin. Consejo de la Alta OLD-WORLD WINES With its unique soils and microclimate, Rioja Alta is regarded as a producer of high quality wines that are more old world in style. At higher elevations, Rioja Alta sees a shorter growing season which produces brighter fruit flavours and results in wine that has a lighter body but is fresh and juicy on the palate. In Consejo de la Alta we have 235 hectares of vineyards planted with carefully selected, old vines of indigenous grape varieties mainly Tempranillo, but also some Graciano and Mazuelo. Grape quality is at the focus of our activity. We use harvesting methods that ensure the gentle transportation and treatment of the grape, along wine good winemaking practices that involve temperaturecontrolled fermentation and a continuous pump-over system that allows us to extract maximum colour and body. The quality of the French and American oak used in our 2,500 casks is the foundation of our ageing and adds flavour, elegance and complexity to our oak-aged wines. This is a collection of wines for winelovers: Fermina Daza is the protagonist of the story Love in the Time of Cholera a timeless classic that evokes passion, just like the wine itself. Fermina Daza Joven Grape Varieties: 95% Tempranillo, 5% Viura. Alcohol: 13% Tasting Notes: Bright medium intense purple in colour with ruby nuances. The nose is full of fruit, raspberry and blackber-ry, with a hint of floral tones and hints of liquorice. In the mouth this wine is well-balanced and fresh with good length on the finish. Fermina Daza Crianza Alcohol: 13.5% Ageing: 12 months in American oak, followed by 12 months bot-tle ageing. Tasting Notes: A classic Crianza from Rioja. Dark cherry in colour, soft and smooth on the entry. Aromatic and powerful in the nose following through on the palate with dark fruits and toasty notes perfectly and harmoniously assembled. 9

7 D.O.C. Rioja Consejo de la Alta OLD-WORLD WINES The Rios Prieto Collection A classic winery from an up-and-coming DO. Fermina Daza Autor Ageing:10 months in French oak and 12 months of bottle ageing. Tasting Notes: Intense ruby colour with violet hues. On the nose it is quite fruity and light, with liquorice notes. Elegant spices and nice toasted hints. Quite round and classy on the mouth, with very ripe black fruits like plums and figs. Again, elegant spices and balsamic hints. Low acid-ity and velvety tannins. Very easy to drink, a very good choice for all publics. Fermina Daza Reserva Alcohol: 13.5% Ageing: 16 months in American oak cask followed by 22 months ageing in bottle. Tasting Notes: Brick red colour with copper rims, very clean and bright. Fruity and complex, this wine has balsamic and menthol nuances. On the mouth the very ripe black fruits like black currant are perfectly balanced with the complex balsamic and floral hints. Medium-low acidity and soft sweet tannins. It has a long aftertaste with nice evolution from a meaty and fruity wine to a balsamic and floral wine. A wine in the beginning of its maturity. Ribera del Duero the most up-and coming DO of Spain and the home of two of the most expensive Spanish wines, Pingus and Vega Sicilia. Historical winery situated on the archaeological site of Pintia which dates back to the Roman times to the 4th century BC. 8 D.O. Ribera del Duero D.O. Ribera del Duero Bodegas de los Rios Prieto ELEGANT REDS Prios Maximus Roble Alcohol: 13.5% Ageing: 6 months in American oak barrel. Tasting Notes: A lively, deep blackberry colour with violet undertones. On the nose, this wine is clean and powerful with cherries, strawberries and blackberries making up the profile of this monovarietal Tempranillo wine. In the mouth, this wine tastes of well-seasoned, stewed fruits and notes of toffee alongside toasted almonds and hazelnuts. A smooth mouthfeel with soft tannins and a long-lasting finish. Prios Maximus Crianza Grape Varieties: 95% Tempranillo, 5% Cabernet Sauvignon. Alcohol: 13.5% Ageing: 13 months in American and French oak casks and minimum 11 months ageing in the bottle. Tasting Notes: Deep, dark red with ruby hues evolving into brick. On the nose, intense earthy cedar notes over a fruity base are dominated by red fruits (strawberries, cherries) with hints of spice, cocoa and white flowers. Rounded and warm in the mouth, full of red fruits with silky tannins and a long, elegant finish. Prios Reserva Grape Varieties: 95% Tempranillo, 5% Cabernet Sauvignon. Alcohol: 13.5% Ageing: 24 months in French oak barrel. Tasting Notes: Brilliant and lively colour of medium-high intensity. An elegant ruby-red colour with mauve undertones. On the nose this wine has hints of cedar and mineral notes intermingled with nuances of jammy red fruits (strawberry, red plum). After some decanting, the wine exhibits powerful notes of wild fruits (raspberries, cassis) along with pleasant perfumes of butterscotch and spicy notes of cayenne pepper, cinnamon and clove all beautifully merged. A well-structured palate with highlighted but silky tannins delivering a soft and unctuous mouth-feel. A good balance between the alcohol and the acidity. Notes of wild, red fruits, the buttery hints of cocoa and vanilla and the spicy notes from the oak blend harmoniously and lead into a lingering and perfumed after-taste. Ribera del Duero Bodegas de los Rios Prieto ELEGANT REDS The Felix Callejo Collection Most classic and traditional Spanish Wine. 14 Rietos Joven Alcohol: 13.5% Tasting Notes: Bright, deep ruby, blue to the rim, rising to cardinal red. The aromas are pronounced and fruitful. A concentration of ripe wild berries (strawberry and blackberry) combine with violet, cassis and mineral notes. A well-balanced wine with a medium body and ripe tannin, which lend to a pleasant mouthfeel and a tasty and lingering finish. Rietos Roble Ageing: 6 months in American oak barrel. Tasting Notes: Intense ruby-red in colour. Ripe red fruit aromas (cherry, plum, strawberry) intermingle with notes of cedar and sweet spice. On the palate, we discover floral nuances (violet) to accompany the fruit concentration, evolving into roasted flavours of coffee and mocha. A smooth mouthfeel, drawing together oak and ripe tannin, and yielding an intense and lingering aftertaste. Callejo series has been touted as one of the top 5 wines in DO Ribera del Duero, which is home to two of the most expensive Spanish Wines, Pingus and Vega Sicilia. All wines in this collection are organic and in the process of being certified. Impressive Robert Parker ratings with 2005 Felix Callejo scoring 97 points while the 2003 vintage scored 98 points. Wines with 95 Robert Parker and above are deemed valuable collector s wines. The Callejo family has devoted their lives to making wines in a genuine, thoughtful and natural way including organic farming, without pesticides, and by fertilizing with natural substances. Great care and passion is applied throughout the winemaking process, from hand-harvesting and hand-sorting, through to vinification, with a second fermentation in oak and maturation in French oak prior to bottling.

Intense and aromatic on the nose, full of ripe dark red fruit such as cherry, plum, blueberry as well as sweet spice, rosemary, clove and cedar. The mid-palate is powerful and tasty, with intense fruit concentration, chocolate, clove, and toast balanced with good acidity, ripe tannins and a round mouthfeel, finishing with a persistent aftertaste. 11 D.O. Ribera del Duero Campos Góticos EXPRESSIVE REDS Campos Góticos 7 Lunas Vendimia Seleccionada Ageing: 16 months in French oak. Tasting Notes: A beautiful deep cherry colour with golden clay rims. On the nose this wine is complex, with ripe fruit aromas of plum and wild cherries. The French oak gives elegant nuances of sweet spice while the tannins are well-rounded giving way to a persistent velvety finish. Medium to full bodied, this wine is quite complex with a layered evolution of aromas and flavour characteristics. Campos Góticos 7 Lunas Viñedos de la Joya Ageing: 16 months in French oak. Tasting Notes: The grapes from La Joya are quite resistant to oxidation, producing a beautiful ruby colour with bluish rims as well as a very sweet and round tannin. A long evolution in the glass reveals layers of ripe fruit, well assembled with exotic spices. Complex, round and velvety with a prolonged aftertaste, this wine represents the true joya. Pecunia Expresion Ageing: 16 months in French oak. Tasting Notes: This wine is a perfect expression of our terroir. Full of aromas, balanced between ripe fruit and spices like clove, cardamom and anise. The fruit and the wood are perfectly assembled, framed by the roundness of the elegant tannins. With 970 has of undulating land, our vineyards are located in the region of Madrid on the border with Castilla La Mancha. The Valquejigoso Domaine is part of the heritage of Félix Colomo Díaz, the great bullfighter from Madrid, born in 1913 and founder of the famous Las Cuevas de Luis Candelas restaurant and its two sister restaurants, Posada de la Villa and La Taberna del Capitán Alatriste. Today, the founder s son, Félix, and his family own and run the winery and restaurants, the most renowned in Madrid situated in its historical quarter. The terroir of the estate, with its continental meso-climate, its soft rolling hills and variability of soil composition (granite, sand and clay), coupled with the diversity of our grape varieties, allow us to craft wines with a distinctive character and complexity. Situated at higher altitudes of up to 610m, temperatures here are cooler than in its neighbouring terroir, with higher diurnal ranges combined with extreme temperatures and low rainfall, leading to optimum ripeness but with greater elegance in our wines. We have plantings of 9 red varieties namely, Cabernet Sauvignon, Cabernet Franc, Merlot, Petit Verdot, Syrah, Tempranillo, Garnacha, Graciano and Negral, and 4 white varieties, Sauvignon Blanc, Viognier, Albillo Real and Moscatel. Features on the wine list of Michelin-starred restaurants throughout Spain. After cooling the grapes, they undergo a strict selection process, both at bunch and berry levels before we place them in small-capacity, cone-shaped tanks by gravity and into French oak vats. We differentiate the production of each of our 69 vineyard plots in order to vinify separately each grape variety coming from our vineyards and we later blend a selection of these according to our winemaker s impeccable craftsmanship. We age our wines in French oak vats and barrels, always bearing in mind the desired impact of the oakageing with the aim of keeping the fruit character of the wines. Our V1 is the jewel of our range, produced only in exceptional vintages, this wine is made with mastery, passion and an utmost care, its objective is to have serious ageing potential. In 2006, our V was voted by The Wine Enthusiast among the Top 100 Wines of the World.

12 Vinos de Madrid Bodegas Valquejigoso SPANISH SUPER-TUSCANS Valquejigoso V1 Grape Varieties: 95% Cabernet Sauvignon and 5% Cabernet Franc. Alcohol: 15% Ageing: 28 months in new French oak barrels. Tasting Notes: Impressive garnet colour of high intensity with hues of blue. A unique wine which preserves the aromas and finesse of Cabernet Sauvignon when it reaches full ripeness, and offers complex aromas of liquorice, spice (pepper, clove), Mediterranean scrub, rockrose and eucalyptus all present. This is a balanced wine with exceptional fruit concentration matched with great acidity. Round, rich and full of velvety tannins. This wine has complexity in abundance, with ripe dark fruits, spice, fennel and herbal notes mingled with mineral, graphite notes as well as liquorice, fig, toast and coffee. Valquejigoso V2 Grape Varieties: Cabernet Sauvignon (57%), Petit Verdot (16%), Tempranillo (11%), Cabernet Franc (9%) and Negral (7%). Alcohol: 15% Ageing: 27 months in new French oak barrels. Tasting Notes: Dark cherry tones of deep intensity with hints of plum and garnet rim. Wild fruits and dark berries are underpinned by subtle and elegant aromas reminiscent of the terroir, scrub, rockrose, flint, combined with notes of toast and chocolate from the oak. Ripe but elegant fruit concentration matched with earthy, mineral notes and a smooth, round mouthfeel is the background to this outstanding wine. A textured palate that is full-bodied and has layers of complexity from rich berry notes to hints of earthy scrub and fennel, toast and vanilla, fig, clove and forest floor. A perfect balance of black fruit scent with the mineral characteristics of the estate, its taste is broad and elegant, leaving the unique aftertaste expressive of this terroir. Valquejigoso V8 Grape Varieties: Tempranillo (35%), Cabernet Sauvignon (15%), Syrah (13%), Petit Verdot (13%), Merlot (8%), Graciano (8%) and Negral (8%). Located in land of poor fertility, these vineyards produce the Tinta de Toro variety between 80 to 100 years old at very low yields, cultivated in the area s tradition of following natural processes and pace set by nature with minimum interference. The soils here are composed of sandstone, clay and Pliocene limestone and all the vineyards are located between 650 and 735 metres in the undulating land typical in this area. With its continental climate, Atlantic influence, plentiful sunshine and high diurnal range, Toro is an area with very favourable conditions for optimum maturation of the grape. In addition, the annual rainfall is very low, so risk of disease minimal and hence highquality grapes that are perfectly healthy are obtained. Tinta de Toro is a variety of Tempranillo which produces wine with enormous personality, great colour and an exquisite bouquet. It is an aromatic grape with a distinctive ruby colour and a very low oxidative level, which allows the wines to be aged for a long time.
