the MENU Welcome to restaurant Novum! On January 10, 2011 the Van der Valk family opened the doors to their location in Almere. In this hotel with 180 rooms and 17 multifunctional conference rooms, Chef Alex Haverkamp leads the kitchen team. The kitchen utilizes only the freshest and finest quality ingredients. Such as our beef tenderloin from Uruguay and our fish from the local Dutch waters. We also strive to do as much as possible in house, such as homemade sauces and soups, by employing our own butcher we also guarantee the excellent quality of our meat. By adjusting the menu to the seasons quality and freshness are assured. Our kitchen is open daily until 23:00. Lunch is served from 11:00 until 17:00 and Dinner is served from 17:00 until 23:00.
