For those of us lucky enough to live here, we re anticipating the endless variety of oranges, reds, and yellows that color the landscape in autumn. Of course, around here, we re also focused on one particular shade of orange... that worn by the Tennessee Volunteers! But, the truth is, whether you cheer for the Vols, root for another school or don t follow college football at all, Tennessee is a welcoming and lovely place to call home. Take the boat out on the clear waters of Tellico Lake; join a group of friends at the Top of the Hill Grill after a round of golf or a pickle ball match; stretch your legs with a walk on the nature trails; relax on the back deck in your favorite chair and watch the evening sun disappear. These are the moments that define the WindRiver experience. This year we celebrate Citico s second anniversary. We are so proud that our fine dining restaurant is continually ranked among the best places to eat in Knoxville. If you haven t experienced a wonderful meal at Citico s, come by this Fall. You ll be in for a treat! This Fall we also celebrated our 2nd annual Oktoberfest. The whole month was filled with fun events and activities. It was a huge success and we thank everyone that came out for sharing your weekends with WindRiver! Sincerely, WindRiver Developer Citico s own Executive Chef Robert Allen shares one of his favorite recipes and which wine to serve it with! MARYLAND STYLE CRAB CAKE Ingredients: Jumbo Lump Crab 1 Pound Old Bay 2 Tablespoons Red Bell Pepper Diced 4 Tablespoons Shallot small diced 1 Tablespoons Garlic Powder 1 Table Spoon Salt and Pepper to taste Mayonnaise 1 Cup Dijon Mustard 1 Tablespoons Whole Egg 1 Panko Bread Crumb 1.5 Cups PREPARATION: Combine first six ingredients in a large mixing bowl, being careful to not break up the crab too much, incorporate well with a wooden spoon. In a separate bowl combine mayonnaise, dijon, and egg. Pour over the crab mixture, be sure to coat the crab well with the dressing and keep as large of pieces as you can. Add the panko to the mixture and combine thoroughly. TO PREPARE CRAB CAKES: Use a Sauté pan or griddle with a thin layer of olive oil. Sear the cakes until brown and flip cooking both sides. Finish cakes in the oven at 350 degrees for 5 minutes. Serve with Remoulade sauce. Pairs great with OUR IN HOUSE SOMMELIER RECOMMENDS... Schug Chardonnay Carneros, CA Crab and Chardonnay are a very classic pairing, think of this wine as the drawn butter for your crab claws! Carneros, the southeastern part of Sonoma, and a region shared with Napa Valley, has a cool enough climate to host rich styles of Chardonnay, sur lie aging and some new French oak add complexity, while still maintaining the balanced acidity necessary to keep this wine fresh on the palate. 3 1. 2ND ANNIVERSARY It is hard to believe it has already been two years since Citico s opened its doors and introduced guests to a fine dining experience on Tellico Lake as special and unique as its setting. To celebrate this occasion, the WindRiver developer, staff, club members, friends and family came together to celebrate in style. When asked about the two-year anniversary, WindRiver Developer Joe Ayres had this to say: It is a momentous occasion that has been made possible by all the great people at WindRiver, by our great staff and by our common goal of making everything at WindRiver the very best that it can be a truly unique and enjoyable experience you won t find anywhere else. The celebration was another in a series of tremendous successes for the community as a whole, including receiving the 2016 Best of the Best award for Best Lake Community by Ideal-Living magazine. One thing is for certain, Citico s has a wonderfully delicious future ahead of it. During Tom s career with General Motors, the company transferred their family to 11 different locations around the country most recently Detroit.
