3 Overview The biggest refresh of our menu to date, Domino s Taste the Colour campaign will launch nationally in Australia and New Zealand on Monday 19 September The promotion will feature refreshed ingredients (maple cured bacon, fresh mixed tri-coloured capsicum and cherry wood smoked ham) on 20 pizzas across the Value, Extra Value, Chicken and Prawn and Chef s Best ranges, 3 brand new pizzas, 2 new sides and 3 new desserts. The Meatlovers pizza has had a topping weight change beef is reduced to 30g and bacon increases to 60g. Domino s Ground Beef, Italian Sausage and BBQ sauce is now gluten free. 6 New Products Please see product specifications below for Parmesan Cheese Parmesan cheese will arrive into stores chilled in 500g bags. Once open and in the cool room parmesan cheese has a 7-day shelf life. Prepped and in the makeline parmesan cheese has a 2-day shelf life. Parmesan cheese has a 12-hour shelf life at ambient temperatures. Please see product specifications below for Sesame Seeds Sesame Seeds will arrive at room temperature into stores in 100g packets. Unopened, Sesame Seeds have a 2-year shelf life. Opened and prepped sesame seeds have a 10- day shelf life. Please see product specifications below for Spring Onion Spring onion will arrive chilled into stores in 250g packets. Prepped and stored in the make line spring onion has a 2-day shelf life. At ambient temperatures spring onion has a 6-hour cumulative shelf life. Please see product specifications below for Slow Cooked Lamb Lamb will arrive frozen in 1kg bags into stores. It has a 365-day shelf life in the freezer. Lamb has a 7-day shelf life once defrosted in the coolroom. 7 Please see product specifications below for Tzatziki Sauce Tzatziki sauce will arrive chilled into stores in 500g bags. It has a 4-month shelf-life unopened in the cool room. Tzatziki sauce has a 12-hour shelf life at ambient temperatures. Please see product specifications below for Korean Spiced Sauce Korean spiced sauce will arrive chilled into stores in 500g packs. Unopened in the cool room the product has a 4- month shelf life. Open in the cool room the product has a 12-day shelf life. Prepped and in the makeline Korean spiced sauce has a 12-day shelf life. Korean Spiced Sauce has a 12-hour shelf life at ambient temperatures. Please see product specifications below for Chocolate Dipping (Fudge) Sauce Chocolate Fudge Sauce will arrive at room temperature into stores in 25ml portions. Chocolate Fudge Sauce has a 6-month unopened ambient shelf life. Please see product specifications below for Korean Sticky Wings Chicken Wings will come in 1kg frozen packets. These are the existing Oven Baked Wings. They can be defrosted in a defrost tray in the cool room for at least 24 hours. Caramel Fudge Pies last for 5 days once in the cool room. Please see product specifications below for Triple Choc The Triple Choc will arrive frozen in a box, presliced of 60 pieces. Triple Choc will last for 5 days once placed in the cool room. 9 Refreshed Products Please see product specifications below for Cherry Wood Smoked Leg Ham Cherry Wood Smoked Leg Ham will arrive chilled into stores in 2kg packs. The product has a 7-day opened and prepped shelf life in the cool room and a 2-day shelf life prepped and stored in the make line. Please note: The make chart reads Cherrywood Smoked Ham however the product description on the carton for the ham reads as follows: Ham Hardwood Smoked Cherrywood 6x2kg Units And on the inner Ham Hardwood Smoked. This is the same ham and future labels will reflect the wording on the make chart. Please see product specifications below for Maple Cured Bacon Maple Cured Bacon has a 7-day unopened shelf life in the cool room This product has a 7-day opened and prepped shelf life in the cool room and a 2-day shelf life prepped and stored in the make line. Please see product specifications below for Fresh Mixed Capsicum Fresh Mixed Capsicum has a 2-day shelf life prepped and stored in the make line. 10 Operational procedures Please see operational procedures below for Korean Sticky Wings Step 1 Place 5 Chicken Wings neatly on the foil sheet. (These are the existing Oven Baked Wings product). Step 2 Fold the 2 opposite foil ends in, then fold the other opposite ends over to encase the Chicken Wings. Step 3 Stack the prepared Chicken Wings in a large bain. Apply a 7 day use-by sticker and store in the cold room with a lid. Step 4 Unwrap 1 portion of the foil (for a 5pk) or 2 portions (for a 10pk), placing the Chicken Wings onto a chip screen and into the oven. Step 5 Remove the Chicken Wings from the oven. Step 6 Place the Roasted Chicken Wings into the chicken sampler box. Add 60g of Korean Spiced Chicken Wing sauce. Domino s Pizza Enterprises AUS Taste the Colour Store kit September

11 Step 7 Add 2g of sesame seeds using a shaker. Step 8 Add 2g of sliced spring onions using a shaker. Step 9 The Korean Sticky Wings are now ready to be served. 12 Please see operational procedures below for Mac n Cheese Croquettes Step 1 Place 2 Mac n Cheese Croquettes neatly on the foil sheet. Step 2 Fold the 2 opposite foil ends in, then fold the other opposite ends over to encase the Mac n Cheese Croquettes. Step 3 Stack the prepared Mac n Cheese Croquettes in a large bain. Apply a 5 day use-by sticker and store in the cold room with a lid. Step 4 Unwrap the foil and place the Mac n Cheese Croquettes onto a pizza tray, and place into the oven. 13 Step 6 Place the Mac n Cheese Croquettes into the chicken sides box. Insert 1 Ranch sauce. Step 7 The Mac n Cheese Croquettes are now ready to be served. IMPORTANT Note: Always cook Mac n Cheese Croquettes from thawed, not frozen. Please see operational procedures below for Triple Choc Step 1 Remove Triple Choc from the freezer. Unfold the sides of the box so that it does not interfere with the cut blade when cutting. Note: IMPORTANT Handle Triple Choc with care, do not touch the top of the product when prepping as it can leave unsightly fingerprints. Always prep Triple Choc from frozen, never thawed. Prepping thawed will cause damage to the product presentation Step 2 Using a clean cut blade separate the Triple Choc intol 5 equal rows vertically. Step 3 The Triple Choc needs to be cut again into 3 equal rows horizontally so that there are 15 equal portions of Triple Choc that are 2 x 2 portions as shown in the picture. 14 Note: Each customer must receive 4 pieces per pack. Step 4 Wrap each 2 x 2 portion individually using the Domino s dessert paper. Step 5 Store the Triple Choc in an airtight container in the cool room. Date code the container. Refer to the Use-by Date Chart for the correct shelf life. Step 6 Wrap the paper over the Triple Choc. Step 7 Place a chocolate dipping sauce next to the Triple Choc, inside the same sides box. Step 8 This product is now ready to be served to the customer. IMPORTANT Note: Always prep Triple Choc from frozen, never thawed. Prepping thawed will cause damage to the product presentation. Note: Never cook Triple Choc in the oven. 15 Please see operational procedures below for Cookie Brownies Step 1 Defrost Cookie Brownies from the freezer. Unfold the sides of the box so that it does not interfere with the cut blade when cutting. Note: Chocolate Brownies will come into store without icing sugar. Step 2 Using a clean cut blade separate the Cookie Brownies down the center with 6 rows of Cookie Brownies on either side. We recommend prepping half a batch of Cookie Brownies for normal cold brownies and half for the freshly baked Cookie Brownies. Step 3 The Cookie Brownies need to be cut again so that there are 12 equal portions of the brownies that are 2 x 3 rows per portions as shown in the picture. Note: Each customer must receive 6 pieces per pack. Step 4 Store the Cookie Brownies in an airtight container. Date code the container. Refer to the Use-by Date Chart for the correct shelf life. Step 5a COLD Cookie Brownie prep Wrap each 2 x 3 portion individually using the Domino s dessert paper. Note: Cold Brownies must still have icing sugar applied when prepped. 16 Step 6a COLD Cookie Brownie prep Wrap the paper over the Cookie Brownies. Step 7a COLD Cookie Brownie prep Place the Cookie Brownies into a medium dessert sides box. Don t forget to place a chocolate dipping sauce inside the sides box. Step 5b HOT Cookie Brownie prep Hot Cookie Brownies are still to be prepped and wrapped with parchment paper. This is the only paper that can be used in the oven. The dessert paper does not go through the oven. Step 6b HOT Cookie Brownie prep Simply place the prepped product on a thin screen to go through the oven. Don t unfold the parchment paper and expose the Cookie Brownies because they will burn. Note: Up to 3 sets of Cookie Brownies can be baked on 1 screen. Step 7b HOT Cookie Brownie prep Place the product onto the cut bench and unwrap. 17 Step 8b HOT Cookie Brownie prep Dust the Cookie Brownies with a generous amount of icing sugar. Step 9b HOT Cookie Brownie prep Slide a clean spatula under the hot Cookie Brownies. Step 10b HOT Cookie Brownie prep Slide the hot Cookie Brownies into the dessert paper lined box. Step 11b HOT Cookie Brownie prep Wrap the Cookie Brownies with the dessert paper so that they are covered. Domino s Pizza Enterprises AUS Taste the Colour Store kit September

18 Step 12b HOT Cookie Brownie prep Place a chocolate fudge sauce next to the wrapped Cookie Brownies inside the box. Step 13b HOT Cookie Brownie prep This product is now ready to be placed in the hot box/cell and delivered to the customer. IMPORTANT Note: It is important to defrost Cookie Brownies for 6 hours in the cool room before prepping or serving to the customer. Prepping frozen Cookie Brownies could cause breakage of the product. Note: Always cook Warm Cookie Brownies when thawed, not frozen. Note: Hot Cookie Brownies are to be wrapped in parchment paper (NOT dessert paper) before cooking in the oven. Note: Do not place the cold Cookie Brownies into the hot box/cell with the pizzas. This is the same product and future labels will reflect the wording on the Make Chart. Step 1 Remove Caramel Fudge Pie from the freezer and place them neatly in an airtight container. Apply date code onto the container. Refer to the Use-by Date Chart for the correct shelf life. Step 2 Place a dessert paper into the Domino s medium dessert box, then place the Caramel Fudge Pie into the prepared box. Step 3 Wrap the Caramel Fudge Pie with the dessert paper so that it is covered. Step 4 This product is now ready to be served to the customer. IMPORTANT Ensure to defrost Caramel Fudge Pie for 6 hours in the cool room before serving to the customer. DO NOT place the Caramel Fudge Pie inside the hot cell with the pizzas. 21 Pulse Order Taking It is important that all Customer Service Representatives (CSRs) are familiar with new products, deleted products and changes to the menu and that they maximise any sample and suggestive selling opportunities. Ensure you are prepared for the secret menu launch by using the digital make and bake charts, CSR cheat sheets and store kit information available on Dotti (if you haven t received your POS kits) to educate team members in the lead up to Sunday. Shaker Usage Guide The Shaker Guide will arrive in POS packs to display for use in store. The document is also available to download from Dotti. Please discard any old versions of the allergen brochure or gluten free charts.
